a good non-stick inner pot for your Instant Pot.

    • While it’s beneficial to know how to deglaze a pressure cooker after sautéing, a non-stick liner significantly reduces issues with food sticking and burning, making cleanup much easier.

For reference, the model I primarily use for all my recipe development and testing is a 6-quart Instant Pot, ensuring that my instructions are applicable and reliable for this common size.

The Perfect Chocolate Rice Pudding Recipe

This **chocolate rice pudding recipe** is so incredibly rich and creamy that even a small serving feels utterly satisfying. You’ll find yourself making this dessert repeatedly, not just because of its irresistible taste, but also due to its sheer simplicity. While the prep time is minimal, timing is crucial: you need to be attentive as soon as the pressure cooker finishes its cycle.

Rice pudding, particularly in a pressure cooker, can be quite a sensitive treat. Overcooking can quickly alter its delicate texture, transforming it from creamy to mushy – a truly tragic outcome for such a delightful dessert. Using the right type of rice, such as long-grain, forms the foundation of this recipe, allowing the pudding to absorb the rich chocolate and vanilla flavors beautifully. For an extra touch of indulgence, feel free to fold in some chocolate chips at the end, adding another layer of texture and decadence.

Homemade Chocolate Rice Pudding: A Family Favorite

My family has always been a huge fan of classic rice pudding. However, after discovering how effortlessly I could prepare it in my Instant Pot in under 15 minutes, **homemade chocolate rice pudding** quickly became our absolute favorite pressure cooker dessert. This recipe, perfectly portioned for five people, consistently leaves no leftovers – a true testament to its deliciousness!

While I have experimented with doubling the recipe in the past, I’ve found that it achieves its optimal texture and flavor when prepared in smaller batches like this. The rapid cooking time means that if you need more, you can simply make another batch without significant delay, ensuring every serving is as fresh and perfect as possible. This approach guarantees that each spoonful delivers that ideal creamy consistency and rich chocolate flavor that makes this pudding so irresistible.

Choosing the Right Rice for Your Pudding

When preparing this decadent **chocolate rice pudding**, selecting the correct type of rice is paramount for achieving the perfect texture. For this recipe, you must use uncooked white rice. It’s crucial to avoid instant rice or Minute rice, as these varieties will not cook correctly under pressure and will result in a mushy, undesirable consistency.

Even when making rice pudding on the stovetop, long-grain white rice or sushi rice (medium-grain) consistently yields the best results. These rice types possess the ideal starch content and structure to absorb the rich cocoa and vanilla flavors beautifully while maintaining a pleasant, creamy, yet distinct grain. While I haven’t thoroughly experimented with brown rice for this specific recipe, its different cooking properties and firmer texture suggest it wouldn’t deliver the same creamy outcome. Short-grain rice, like Arborio or a standard short-grain white rice, should also work well due to its starchy nature, though long-grain often provides a slightly less dense pudding. For the best experience, stick with the recommended uncooked long-grain white rice to truly let the flavors shine.

Essential Instant Pot Chocolate Rice Pudding Ingredients

Crafting this delightful dessert requires a careful selection of ingredients to ensure its rich flavor and creamy consistency. Once the pressure cooking is complete and you lift the lid, pay close attention: constant stirring during the final thickening phase is key to prevent burning. Additionally, tempering the egg with some of the hot pudding mixture is a vital step for a smooth, cohesive finish.

  • Uncooked Long-Grain White Rice: The foundation of our pudding.

    • *Note:* Brown rice hasn’t been tested and likely wouldn’t yield the desired creamy texture. Short-grain rice should be acceptable, but Arborio (Italian risotto rice) has not been specifically tested here either.
  • Butter: Adds richness and helps sauté the rice. Use a plant-based alternative for a dairy-free option.
  • Sugar: Sweetens the pudding to perfection. Adjust to your preference.
  • Vanilla Extract: Enhances the overall flavor profile, complementing the chocolate beautifully.
  • Unsweetened Cocoa Powder: The star of the show! Choose between milk cocoa or dark cocoa versions to tailor the intensity of your chocolate flavor. I personally love Hershey’s dark cocoa for a deep, rich taste.
  • Milk: 2% or whole milk provides the creamiest results, but almond milk is an excellent dairy-free alternative that works wonderfully.
  • Water: Essential for the initial pressure cooking process with the rice.
  • Evaporated Milk: Contributes to the pudding’s luxurious richness and thickens the consistency without adding excessive liquid.
  • Egg: Acts as a thickening agent and binds the pudding together, giving it that classic custardy texture.

Dairy-Free Chocolate Rice Pudding: Delicious Alternatives

Adapting this recipe for a dairy-free diet is surprisingly simple, allowing everyone to enjoy this rich and creamy dessert. I’ve successfully made similar adjustments for other recipes, like my
Instant Pot tapioca pudding. For a dairy-free chocolate rice pudding, you can easily substitute traditional butter with a high-quality plant-based butter alternative, which often tastes remarkably similar. Additionally, dairy-free evaporated milk options are readily available online or in many grocery stores, ensuring you don’t miss out on that essential creaminess.

Here’s a breakdown of how to make this delightful treat, including the steps for dairy-free modifications. A comprehensive printable recipe card is also available at the bottom of this post for your convenience.

Step-by-Step: Crafting Your Chocolate Rice Pudding

  1. Begin by setting your Instant Pot or pressure cooker to the “Sauté” function. Add your butter (or plant-based alternative) and allow it to melt completely. Once melted, add the uncooked rice and stir it gently for a minute or two to toast it slightly, enhancing its flavor.
  2. Next, pour in the milk (dairy or almond milk) and water, stirring to combine. Incorporate the vanilla extract, ½ cup of sugar, and the unsweetened cocoa powder. Stir thoroughly until all ingredients are well combined, and the mixture takes on a uniform chocolate milk color, free of any cocoa clumps.
  3. Carefully secure the lid on your Instant Pot, ensuring the pressure valve is set to “Sealing.” Select the “Manual” or “Pressure Cook” setting, set it to high pressure, and cook for 14 minutes.
  4. Once the cooking cycle is complete and the Instant Pot beeps, perform a quick release of the pressure. Exercise caution as you carefully lift the lid away from your face.
  5. In a separate small bowl, whisk together the egg and evaporated milk (or dairy-free evaporated milk). To temper the egg, gradually add ½ cup of the hot rice pudding mixture from the pot into the egg and milk mixture, stirring constantly. This gently raises the temperature of the egg, preventing it from scrambling.
  6. Add another ½ cup of the hot rice pudding to the tempered egg mixture, stirring well. Then, pour this enriched egg mixture back into the main Instant Pot.
  7. Set your Instant Pot back to the “Sauté” function. As the pudding begins to bubble gently, stir it slowly and continuously for approximately 2 minutes, or until the pudding thickens to your desired consistency.

Immediately transfer your finished chocolate rice pudding into cool serving dishes. This prompt transfer is essential to prevent the pudding from continuing to cook and potentially becoming mushy. For easier cleanup later, fill the inner pot with soapy water right away. If you’re eager for more **pressure cooker desserts**, you might also enjoy making a decadent

Serving Suggestions and Variations

This creamy chocolate rice pudding is delightful on its own, but it also serves as a perfect canvas for a variety of toppings and flavor enhancements. For an added layer of indulgence, consider a sprinkle of chocolate shavings or a drizzle of rich chocolate syrup. A dollop of whipped cream, whether dairy or coconut-based, adds a lovely airy contrast to the dense pudding. Fresh berries like raspberries or strawberries also pair wonderfully with chocolate, offering a touch of tartness and freshness.

You can enjoy this pudding warm straight from the pot, or chill it in the refrigerator for a refreshing cold dessert. For an extra boost of chocolate, mix in a handful of your favorite chocolate chips (dark, milk, or white) during the final stirring phase, allowing them to melt slightly into the warm pudding. Experiment with different flavored extracts like almond or orange to add a unique twist to the classic chocolate profile. This versatile dessert is sure to become a cherished addition to your recipe collection, offering comfort and joy with every spoonful.
