Effortless Baking with Ninja Foodi and Instant Pot
Imagine those serene moments in the morning: the house is quiet, the aroma of freshly brewed coffee fills the air, and a warm, moist piece of homemade coffee cake awaits. This vision of heaven can be your reality, even on the busiest days. While a moment of silence with three girls getting ready for school might be rare, I always make time for this delightful treat to kickstart a productive day. The beauty of this recipe lies in its adaptability; it can be perfectly prepared in an Instant Pot, a Crockpot Express, or as an easy Ninja Foodi recipe.
Pressure cooking transforms the way you bake, particularly when it comes to cakes and sweet breads. The sealed environment ensures that moisture is locked in, resulting in an exceptionally tender and moist crumb that’s hard to achieve with conventional oven baking. Plus, the quick cooking time means you can enjoy a freshly baked treat without spending hours in the kitchen or heating up your entire home, especially during warmer months.
For those new to the world of pressure cooking, we have a wealth of easy one-pot meal recipes to explore. To ensure your success with this coffee cake and future pressure cooker adventures, here are a few fundamental tips:
- Make sure to Bookmark our Instant Pot recipes page. We regularly add exciting new recipes!
- Download and print this essential Instant Pot cooking times cheat sheet. It’s an invaluable guide for understanding how long various ingredients like meats, vegetables, and beans take to cook in your pressure cooker.
- I highly recommend investing in this non-stick inner pot for your Instant Pot. It significantly reduces issues like food sticking and makes cleanup a breeze.
- While it’s always good to know how to deglaze a pressure cooker after sautéing, a non-stick pot minimizes the chances of food scorching and sticking to the bottom.
For context, the model I rely on for all my recipe creations is a 6-quart Instant Pot, known for its consistent performance and versatility.

The Secret to Moist Pressure Cooker Coffee Cake
This pressure cooker coffee cake delivers unmatched moisture and flavor, making it a perfect partner for your morning cup. While you certainly could bake this in a conventional oven, I genuinely encourage you to try this Instant Pot dessert at home if you own a pressure cooker. The magic lies in how pressure cooking bakes sweet breads; they emerge incredibly moist and tender. My family and I wholeheartedly agree that this is now our preferred method for baking cakes, thanks to the consistently delightful results.
One of the most compelling reasons to use your Instant Pot for baking, especially during summer, is to avoid turning on your oven. When temperatures soar to 100 degrees Fahrenheit outside, the last thing anyone wants is a hot kitchen. The Instant Pot keeps the heat contained, allowing you to bake this exquisite coffee cake without warming up your entire house. Each bite reveals perfectly moist cake studded with delightful pockets of caramel, making it a true summer-friendly indulgence.

Transforming Your Instant Pot into a Baker’s Delight
When this Instant Pot coffee cake is done, it will appear slightly different from a traditional oven-baked cake while still in the pan. But don’t worry! The transformation happens when you gently flip it over onto a plate. That’s when it reveals its classic bundt cake shape, beautifully golden and ready to be adorned with a sweet drizzle. The key to a successful, intact flip is using a mini bundt pan and allowing the cake to cool completely inside the pan. This crucial step lets the cake stiffen up, ensuring it holds its shape perfectly when inverted.

Essential Ingredients for Your Instant Pot Coffee Cake
To embark on this delightful baking journey, gather your ingredients with care. While this recipe focuses on our incredibly rich caramel apple pecan version, for those seeking a lighter alternative, you might explore a healthy coffee cake recipe, though cooking times may vary.
Here’s what you’ll need for the base of our Instant Pot coffee cake:
- A 7-cup bundt pan: This size works perfectly for creating two smaller cakes within the Instant Pot or a single generous cake if baking in a conventional oven.
- All-purpose flour: Remember to spoon your flour into the measuring cup rather than scooping directly from the bag to ensure an accurate measurement, which is crucial for the cake’s texture.
- Butter: Softened butter is key for a smooth, well-incorporated batter.
- Granulated sugar: Provides the foundational sweetness.
- Eggs: Act as a binder and contribute to the cake’s structure and moisture.
- A large mixing bowl: Essential for combining all your ingredients.
Enhancing Flavors: Caramel Apple Pecan Goodness
Beyond the basic cake batter, these additional ingredients elevate our coffee cake to a gourmet level, infusing it with those irresistible caramel, apple, and pecan notes. If you have a favorite family coffee cake recipe, feel free to adapt it, but always remember the golden rule for pressure cooker baking: do not fill the pan past the 3/4 mark to prevent spillage and ensure even cooking.
- Sour Cream: This is a secret weapon for an incredibly moist and tender crumb, adding a subtle tang that balances the sweetness.
- Brown Sugar: Essential for the rich, caramelized topping and streusel layers, offering a deeper, molasses-like sweetness compared to white sugar.
- Spices: A blend of warm spices like cinnamon and nutmeg is vital for that classic coffee cake flavor, especially when combined with apples.
- Optional add-ins:
- Caramel bits: These melt into luscious pockets of caramel throughout the cake, adding a burst of flavor and gooey texture.
- Diced apples: Fresh, crisp apples (peeled and finely diced) introduce a delightful fruity sweetness and textural contrast. Varieties like Granny Smith or Honeycrisp work wonderfully.
For an extra layer of crunch and flavor, consider adding chopped candied pecans or sliced almonds. We love scattering some on top for a beautiful presentation and added texture, as you can see in our photos.

- Prepare the batter and streusel as detailed in the instructions below.
- Place your prepared bundt pan into the Ninja Foodi.
- Secure the pressure cooker lid (the one not attached to the unit).
- Select the “Pressure Cook” function and set it to high pressure for the recommended time.
For those who prefer traditional baking or a quicker option, you can also make coffee cake muffins using a similar batter. These bake up fast and are perfect for grab-and-go mornings. No matter how you choose to enjoy it, this coffee cake, perhaps alongside a glass of whipped coffee, is a treat to savor.

Step-by-Step Instant Pot Coffee Cake Mastery
While a detailed and printable recipe card is provided below, here’s a quick overview of the steps to guide you through creating this exceptional Instant Pot coffee cake. Each step is designed for ease and ensures a perfectly baked, moist cake every time.
- Begin by combining your dry ingredients: flour, salt, baking soda, and baking powder in a single bowl, ensuring they are well mixed.
- In a separate bowl, cream together the softened butter, granulated sugar, vanilla extract, almond extract, eggs, and sour cream until the mixture is smooth and light.
- Gradually incorporate the dry ingredients into the wet mixture, mixing on low speed until just combined. Be careful not to overmix. Gently fold in the diced apples and caramel bits, distributing them evenly throughout the batter.
- Prepare your bundt pan for the Instant Pot by spraying the inside thoroughly with a non-stick cooking spray. In a small separate dish, mix your brown sugar, chopped pecans (or sliced almonds), cinnamon, and nutmeg to create the flavorful streusel layer.
- Now, divide both your cake batter and the brown sugar streusel mixture into two equal halves. This recipe yields two bundt cakes when using a pressure cooker, or one large one if baking traditionally in an oven.
- Layering is key: Spoon approximately one-third of one half of your brown sugar mixture into the bottom of the prepared bundt pan. Follow this with half of your divided coffee cake batter. Then, add another third of the brown sugar mixture on top of the batter.
- Finally, spoon the remaining half of your coffee cake batter over the streusel layer, ensuring the bundt pan is no more than 3/4 full. Finish by sprinkling the last portion of the brown sugar mixture on top.
To prepare for pressure cooking, loosely cover the entire bundt pan with a piece of paper towel, then tightly secure a piece of aluminum foil over the top. Create a foil sling by rolling a long piece of foil like a bandana and placing it underneath the bundt pan. This will form handles on either side, making it easy to lower and lift the pan from the Instant Pot.

Place a trivet (preferably one with handles for easy removal) inside your Instant Pot. Pour 2 cups of water into the bottom of the pot. Carefully lower your bundt pan onto the trivet using the foil sling. Close the Instant Pot lid and ensure the steam release valve is sealed. Pressure cook on high for 35 minutes. Once cooking is complete, allow a natural pressure release (NPR) to finish entirely. This step is crucial for the cake’s texture and for safe operation.
After the pressure has fully released, carefully lift the bundt pan out using the foil sling handles. Remove the foil and paper towel, and place the cake on a cooling rack. It’s vital to allow the cake to cool completely in the pan. This cooling period allows the cake to set and firm up, preventing it from crumbling when you flip it. Once cooled, gently invert the cake onto a serving plate. Serve plain, or for an extra touch of decadence, slightly melt some frosting or a caramel drizzle and pour over the top. Remember, this recipe is designed to make two delicious bundt cakes in your pressure cooker, so you can enjoy one now and save one for later!
