Like many families across America, our household has an undeniable passion for all things pizza. One weekend, we found ourselves with some extra egg roll wrappers and a desire to get creative in the kitchen. The result? A culinary experiment that turned into a massive success, leading to these phenomenal pizza egg rolls. They’ve quickly become a staple, offering a fresh, exciting way to enjoy classic pizza flavors without the traditional crust.

We’ve previously explored various pizza innovations, from adorable muffin tin pizzas to the convenience of Crock Pot Pizza. While those were fantastic in their own right, I craved something with an ultimate crispy and crunchy exterior, yet still packed with the same beloved ingredients we adore in our “pies.” The goal was a handheld, dippable snack that my kids would go crazy for – and these pizza egg rolls hit every mark, earning five enthusiastic thumbs up from everyone in our home. Gather your favorite toppings and a jar of sauce, and let’s get rolling!

The beauty of egg roll wrappers is their incredible versatility. You can truly stuff almost anything into them, making them a blank canvas for culinary creativity. While wonton wrappers can work for smaller bites, we find egg roll wrappers are ideal for holding a generous amount of delicious filling, ensuring every bite is satisfying.

Essential Ingredients & Smart Tips

Crafting the perfect pizza egg roll starts with selecting the right ingredients. Here’s a closer look at what you’ll need and some tips for making the process as smooth as possible:

  • Egg Roll Wrappers: These serve as your crispy “crust” for this unique pizza experience. You can easily find them in the refrigerated section of most grocery stores. For an extra touch of homemade goodness, consider making Homemade Egg Roll Wrappers, though store-bought ones work perfectly for convenience. We recommend using large wrappers to accommodate plenty of filling.
  • String Cheese: Forget the hassle of shredding! String cheese is your secret weapon for quick and easy melting. Its cylindrical shape makes it incredibly simple to place and roll, and it melts beautifully whether deep-fried or air-fried. Plus, it helps create a tighter seal around the edges, preventing any gooey cheese from escaping. While mozzarella is the classic choice, feel free to experiment with half cheddar string cheese for a different flavor profile.
  • Spaghetti Sauce: For maximum flavor and convenience, a jar of your favorite spaghetti sauce works wonderfully as the pizza sauce base. It’s often more economical than dedicated pizza sauce, and you can easily use the remainder for other meals, like a quick pizza in a mug, making it a win-win!
  • Vegetable Oil: Essential for achieving that golden-brown, crispy exterior when deep frying. Ensure you have enough to properly submerge your egg rolls, or at least fill your pan halfway.

Choose Your Favorite Pizza Toppings

This is where you can truly personalize your pizza egg rolls! While the base of sauce and cheese is fantastic on its own, adding your favorite toppings elevates them to the next level. We almost always include thin slices of regular or turkey pepperoni, arranging them generously over the cheese. Sliced black olives are another killer addition, adding a briny kick that complements the other flavors perfectly. But don’t stop there:

  • Meats: Crumbled cooked sausage, finely diced ham, or even pre-cooked bacon bits can be fantastic additions.
  • Vegetables: Finely chopped bell peppers, onions, mushrooms, or even a sprinkle of dried oregano or basil can boost the flavor. Just be sure not to overstuff them!
  • Cheeses: Beyond mozzarella, consider a tiny pinch of grated Parmesan or a blend of Italian cheeses for added depth.

Deep Frying vs. Air Frying: Two Delicious Methods

You have two excellent methods for cooking these pizza egg rolls, each offering a slightly different texture and health profile. Both will result in a deliciously crispy snack!

Air Frying Method (Healthier Option)

If you’re looking for a lighter take without sacrificing crispiness, the air fryer is your best friend. Prepare your rolls as instructed in the recipe card, then follow these steps:

  • Preheat: Set your air fryer to 380°F (195°C) and preheat for 5 minutes.
  • Prepare for Frying: Lightly spray the inside of your air fryer basket with olive oil cooking spray.
  • Arrange & Spray: Place the filled egg rolls in a single layer in the air fryer basket, ensuring they don’t touch. Generously spray the tops of the rolls with olive oil. This is crucial for achieving a golden, crispy finish.
  • Air Fry: Cook for a total of 5-8 minutes. Halfway through, flip the egg rolls and spray the tops again with olive oil. Continue cooking until they are a deep golden brown and the cheese inside is melted and bubbly. Cooking times may vary slightly depending on your air fryer model (Ninja Foodi, AirWave, Cosori, etc.).

Deep Frying Method (Classic Crisp)

For that classic, ultra-crispy egg roll experience, deep frying is the way to go. Here’s how to do it right:

  • Oil Temperature is Key: In a deep pot or Dutch oven, add enough vegetable oil to fill it halfway. Heat the oil over medium-high heat. Do NOT add any egg rolls until the oil reaches 350-360°F (175-182°C). If the oil isn’t hot enough, the wrappers will absorb too much oil and become greasy rather than crispy. If you don’t have a thermometer, you can test the oil by dropping a tiny piece of egg roll wrapper into it. If it sizzles immediately but doesn’t burn quickly, it’s ready. Adjust the flame as needed.
  • Fry in Batches: Carefully place a few filled egg rolls into the hot oil, ensuring you don’t overcrowd the pan. Leave enough room between each one so they can cook evenly and maintain the oil temperature.
  • Cook Until Golden: Fry for about 2 minutes on each side, or until they are beautifully golden brown and crispy. The exact timing may vary slightly depending on the size and thickness of your egg rolls.
  • Drain: Once cooked, use tongs to remove the egg rolls from the oil and place them on a plate lined with paper towels to absorb any excess oil. This helps keep them extra crispy.

The Secret to Perfectly Sealed Egg Rolls

Properly sealing your egg rolls is essential to prevent any delicious filling from leaking out during cooking. It’s a simple technique that works like magic:

As you set up your assembly line, have a small dish or cup of water nearby. Once you’ve added your filling, leave about 1/2 inch of the wrapper empty at the end. Before completing the final roll, dip your finger into the water and gently smear it along the dry edge of the egg roll wrapper. Then, continue rolling it up completely. The water acts like glue, helping the wrapper stick to itself as it dries, creating a secure seal.

You’ll be amazed at how easy it is to put these together, and your entire family will absolutely adore these pizza egg rolls!

Tips and Customization for Your Pizza Egg Rolls

One of the best things about pizza egg rolls is how adaptable they are. While our recipe features pepperoni, the base three ingredients are truly all you need:

  • The Basic Trio: Start with a package of egg roll wrappers, a jar of spaghetti sauce, and string cheese. These three components form the foundation of an incredibly satisfying snack or meal.
  • For Picky Eaters: If you have little ones or anyone with specific preferences, remember you don’t have to add a lot of extra toppings. Just sauce and cheese works perfectly fine and is still incredibly delicious. We often make some with just cheese for our youngest!
  • Dipping Sauces: Don’t forget the dipping sauce! Having some leftover spaghetti sauce is ideal for dipping, much like serving homemade mozzarella sticks. Some people even prefer ranch dressing, which is a popular choice for pizza crusts, or a creamy garlic parmesan sauce.

When assembling, ensure you leave a bit of room at the bottom of your wrapper. Fold the sides in, much like you would a burrito (as shown in picture 2). Then, carefully roll the wrapper over your cheese and continue rolling until you reach the very end, ready to seal.

Pizza Egg Rolls Recipe

By Justine
Pizza egg rolls, either air-fried or deep-fried, with pepperoni and string cheese inside crispy wrappers, make a fantastic snack or fun dinner idea.
Prep: 15 mins
Cook: 4 mins
Servings: 12

Equipment

  • 1 small dish of water
  • 1 plate (for draining)
  • Deep pot or Air Fryer
  • Tongs

Ingredients

  • 12 large egg roll wrappers, homemade or store-bought
  • 2 cups string cheese, mozzarella (about 12 sticks)
  • 1 cup spaghetti sauce
  • 1 cup pepperoni (or other desired toppings)
  • 6 cups vegetable oil, for deep frying (more or less to fill half the pan) OR olive oil spray for air frying

Instructions

  1. Lay an egg roll wrapper flat on a clean cutting board. Spoon approximately 1 tablespoon of spaghetti sauce into the middle, ensuring you leave about 1 inch empty space on each side of the wrapper.
  2. Place one piece of string cheese directly on top of the sauce. Add your desired toppings, such as pepperoni slices, over the cheese.
  3. Fold the bottom corner of the egg roll wrapper up over the filling, then fold in the left and right sides like a burrito. Roll the wrapper tightly from the bottom upwards. Before completing the final roll, dip your finger in water and moisten the top edge of the wrapper, then finish rolling to seal it securely.
  4. For Deep Frying: Once all your egg rolls are prepared, add vegetable oil to a deep pan or pot over medium-high heat.
  5. Wait until the oil reaches 350-370°F (175-182°C). You can test by dropping a small piece of wrapper into the oil; if it immediately sizzles, it’s ready. Carefully place filled rolls into the hot oil, ensuring not to overcrowd the pan. Fry for about 2 minutes on each side until they are beautifully browned and crispy. Remove with tongs and place on paper towels to absorb excess oil.
  6. For Air Frying: Preheat your air fryer to 380°F (195°C) for 5 minutes. Prepare rolls as above and lightly spray the inside of your air fryer basket with olive oil. Lay the rolls inside, ensuring they are not touching, and generously spray the tops with olive oil. Air fry for a total of about 5-8 minutes, flipping halfway through and spraying the tops again, until golden brown and crispy with melted cheese.
