Instant Pot Lasagna Casserole: The Ultimate Time-Saving Meal

This isn’t just a meal; it’s a marvel of modern cooking. It’s incredibly cheesy, far easier to serve and eat than traditional layered lasagna, and demands only about 10 minutes of active cooking time. You get all the robust, comforting flavors you love from classic lasagna, but in a convenient, deconstructed format. The sheer simplicity and delicious outcome led us to create an extensive list of Instant Pot casserole recipes for you to explore, but this lasagna casserole truly stands out.

While slow cookers have long been our go-to for many dishes, this recipe concept originally started there. We used similar ingredients, but the longer cooking time meant noodles had to be added later to prevent them from becoming too soft. Plus, it required all-day attention, making it less spontaneous. The pressure cooker, however, revolutionizes this process, delivering the same incredible taste with unmatched speed and efficiency.

For those new to the world of pressure cooking, we have a wealth of easy one-pot meal recipes. To help you get started, here are a few fundamental tips for optimal results with your Instant Pot:

  • Make sure to bookmark our Instant Pot recipes page, as we frequently update it with new, exciting dishes!
  • Download and print our handy Instant Pot cooking times cheat sheet. It’s an invaluable resource for understanding precise cooking durations for various meats, vegetables, and beans in your pressure cooker.
  • We highly recommend investing in a non-stick inner pot for your pressure cooker. While it’s essential to understand how to deglaze a pressure cooker after sautéing, a non-stick liner significantly reduces potential issues like food sticking or triggering “burn” notifications.

For context, all our recipe creations, including this lasagna casserole, are developed using a 6-quart Instant Pot model. This size is incredibly versatile for most family meals.

Our trusty 6-quart Instant Pot, a versatile kitchen essential for countless easy and quick meals.

You could playfully call this “cheater lasagna” due to its incredible ease compared to the traditional, laborious method. Yet, it delivers the authentic, beloved taste in a fraction of the time. A significant advantage is the absence of large, slippery noodles, making it much easier for little ones (and even adults!) to enjoy without a mess. If you’re searching for a comforting, hearty meal that will become an instant family favorite, this recipe is an absolute must-try!

While “Instant Pot” is often used generically, you don’t necessarily need a specific brand to make this dish. We’ve tested this recipe across several pressure cooker brands, including Mealthy, Crockpot Express, and the Ninja Foodi. All deliver fantastic results. The key functions you’ll need are a sauté feature to brown your meat and a high-pressure cooking setting. (For the Ninja Foodi, simply use the non-attached pressure lid for cooking, and the air fryer lid for sautéing if you prefer a single-appliance approach).

One of the many great aspects of this dish is its “one-pot” nature. You’ll only need your pressure cooker for the entire process – from browning the ground meat to simmering the pasta. There’s no need for a separate pot to boil noodles, simplifying cleanup significantly. And when it comes to pasta, feel free to use any medium-sized variety you prefer. I often grab whatever is on sale! However, I’ve found that medium-sized pasta shapes tend to work best, striking a perfect balance between texture and sauce absorption.

Key Ingredient Notes for Your Perfect Lasagna Casserole

Let’s dive into the core ingredients that make this pressure cooker lasagna casserole so special:

  • Noodles: The beauty of this deconstructed lasagna lies in using various medium-sized pasta shapes. While we often opt for penne pasta, other excellent choices include elbow macaroni, ziti, or medium shells. The idea is to move away from the long, flat lasagna sheets that can be challenging to manage in a casserole and difficult for kids to eat. These shorter pasta varieties integrate beautifully with the sauce and cheese.
  • Sauce and Seasoning: For ultimate convenience, we highly recommend using a quality jarred spaghetti or marinara sauce. Most pre-made sauces already contain a delightful blend of Italian seasonings, simplifying your prep. However, feel free to enhance the flavors with additional garlic powder, oregano, or a pinch of red pepper flakes if you desire a spicier kick.
  • Meat: The choice of ground meat can really influence the dish. We love the robust flavor of spicy ground sausage, but mild Italian sausage or lean ground beef are equally delicious alternatives. For a lighter version, ground turkey or chicken, seasoned with Italian herbs, works wonderfully. If you’re feeling adventurous, a touch of taco seasoning can introduce a unique Tex-Mex fusion twist!
  • Cheese: You simply can’t have enough cheese in lasagna! Shredded mozzarella is traditional and provides that signature gooey, stretchy texture. We also include creamy Ricotta cheese, which adds a lovely richness. Look for Galbani ricotta in the refrigerated dairy section. If ricotta isn’t available, cottage cheese can be a suitable substitute, or explore dairy-free versions for dietary needs.

Do You Need to Boil Noodles First for Lazy Lasagna?

Absolutely not! This is one of the incredible advantages of our pressure cooker method. Forget the extra pot and the hassle of pre-boiling pasta. In this recipe, the uncooked pasta cooks directly within the rich spaghetti sauce, soaking up all its delicious flavors along with the added water. Everything cooks together in a single pot, transforming it into the ultimate one-pot meal. This technique ensures perfectly tender pasta every time, infused with the savory sauce.

Instant Pot Lazy Lasagna with Ravioli: A Delicious Twist

For an even more innovative take on this lazy lasagna, consider adding small frozen ravioli! This instantly introduces a delightful new dimension, as the ravioli are already stuffed with cheese or ground beef, adding an extra layer of flavor and texture. The cooking time remains surprisingly similar. We’ve successfully used this method in other Instant Pot pasta recipes where small, frozen pasta items are simply submerged in the cooking liquid at the top to ensure they become tender and perfectly cooked.

We’ve also applied similar “deconstructed” principles to create a simplified lasagna casserole baked in the oven. Another wonderful variation we often enjoy is stirring in about 1/2 cup of ricotta cheese after the pressure cooking is complete, in addition to placing a dollop on top of each serving. This makes for an incredibly creamy and indulgent experience.

As devoted cheese lovers, a generous helping of shredded mozzarella is a must, both stirred into the casserole and sprinkled abundantly on top for that perfect melty finish. As for ricotta, you have a choice: either gently stir it into the entire dish after cooking or, as we sometimes do with our Instant Pot Spaghetti, simply add a creamy dollop on top of each individual serving. Both methods deliver delightful results!

Pressure Cooker Lasagna Casserole Recipe

By Justine
An easy Pressure Cooker lasagna casserole recipe with ground sausage that our whole family loves. This lazy Instant Pot lasagna is deconstructed into a casserole, making it much easier to eat! A quick, cheap, and very family-friendly dinner idea.
Prep: 10 mins
Cook: 5 mins
Total: 20 mins
Servings: 6

Equipment

  • 1 pressure cooker

Ingredients

  • 2 tbsp olive oil
  • 1 lb ground sausage, spicy is tastiest, can use ground beef alternatively
  • 1 small onion, diced
  • 1 jar spaghetti sauce, 24 oz., we use Barilla Traditional
  • 2 cup water
  • 2 cup pasta, uncooked, we use Barilla penne pasta
  • 1 tsp garlic salt
  • 1/2 tsp basil
  • 2 cup mozzarella cheese, we use Galbani with whole milk
  • 1 cup ricotta cheese

Instructions

  1. Set your pressure cooker to sauté.
  2. Add olive oil, ground sausage (or ground beef), and diced onions. Cook until the meat is no longer pink. Drain any excess grease and return the pot to your pressure cooker.
  3. Turn the machine off. (This is an important step to prevent a “burn” notification from being triggered due to excessive heat after sautéing.) Add the spices and stir them into the meat and onions.
  4. Spread the ground beef/sausage mixture evenly across the bottom of your pot. This layer acts as a barrier, helping to prevent the noodles from sticking to the bottom.
  5. Add the spaghetti sauce directly on top of the meat. Pour 2 cups of water into the empty spaghetti sauce jar, shake well to dislodge any remaining sauce, and then pour this seasoned water into your pot, on top of the sauce.
  6. Next, pour your uncooked noodles as the following layer. Do NOT stir! Gently push down the noodles so they are fully submerged in the liquid.
  7. Secure the lid on your pressure cooker and set it to pressure cook on high for 5 minutes.
  8. Once cooking is complete, perform a quick release of the pressure.
  9. Carefully remove the lid. Stir in 1.5 cups of mozzarella cheese until it has melted and is well combined. You can either stir in the ricotta cheese now or simply add a generous dollop on top of each serving before presenting.

How to Serve Your Pressure Cooker Lasagna Casserole

Presentation and extra touches can elevate this simple casserole into an even more delightful meal. A dollop of fresh ricotta cheese on top of each serving is a fantastic idea; it allows you to savor the creamy ricotta’s distinct flavor alongside the rich lasagna mixture. Whether you stir the ricotta into the pot or serve it as a garnish, it adds a luxurious touch that’s simply irresistible. Beyond that, consider these serving suggestions:

  • Garlic Bread: A classic pairing, warm and crusty garlic bread is perfect for soaking up any extra sauce.
  • Fresh Salad: A simple green salad with a light vinaigrette offers a refreshing contrast to the rich casserole.
  • Fresh Herbs: A sprinkle of fresh basil or parsley before serving adds vibrant color and a burst of fresh flavor.

Tips for Success & Troubleshooting Your Pressure Cooker Lasagna

Even with simple recipes, a few extra tips can ensure flawless results:

  • Preventing the Burn Notice: The critical step of turning off the pressure cooker after sautéing and before adding sauce and noodles is paramount. This allows the pot to cool slightly, preventing residual heat from scorching the bottom layer and triggering the “burn” message. Always deglaze thoroughly after browning meat to remove any stuck-on bits.
  • Layering Matters: While this is a deconstructed lasagna, the order of ingredients (meat on the bottom, then sauce, then noodles) is important. The sauce acts as a liquid buffer for the noodles, ensuring even cooking and preventing them from sticking to the pot. Resist the urge to stir the noodles in once added; a gentle push to submerge them is all that’s needed.
  • Pasta Consistency: Different pasta brands and shapes can absorb liquid slightly differently. If your pasta seems a little too firm after the initial cook and quick release, you can put the lid back on for 2-3 minutes without pressure to let it steam, or add a splash more water or broth and stir before serving.
  • Cheese Varieties: Don’t limit yourself to just mozzarella and ricotta. A sprinkle of grated Parmesan or Pecorino Romano stirred in at the end can add an extra layer of savory depth.
  • Customizing Spice: If you love heat, experiment with a pinch of red pepper flakes with the garlic salt and basil. For a milder version, omit the spicy sausage and opt for ground beef or mild Italian sausage instead.

Storage and Reheating

This pressure cooker lasagna casserole is fantastic for meal prep or leftovers. Simply transfer any cooled leftovers to an airtight container and store in the refrigerator for up to 3-4 days. To reheat, you can use the microwave for individual servings, or gently warm in a saucepan on the stovetop over low heat, adding a splash of water or broth to loosen the sauce if needed. It also freezes well: portion into freezer-safe containers and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.

Why Choose Pressure Cooker Lasagna?

Beyond the obvious time-saving benefits, this pressure cooker version offers several advantages. It’s a true one-pot wonder, drastically cutting down on dish duty. The pasta cooks directly in the sauce, allowing it to absorb maximum flavor, resulting in a richer, more cohesive dish. Its deconstructed nature makes it perfect for families, especially those with picky eaters or young children who might find traditional lasagna layers cumbersome. It’s a hearty, satisfying meal that brings all the comfort of Italian-American cuisine to your table with minimal effort.
