What Makes Hatch Chiles So Special?

Hatch chiles, cultivated exclusively in the Hatch Valley of New Mexico, are renowned for their distinct flavor profile. This unique terroir, combined with generations of farming expertise, imbues the chiles with an earthy, slightly smoky taste that sets them apart from other green peppers. They offer a spectrum of heat levels, from mild to extra hot, allowing you to tailor your dishes to your family’s preferences. Whether you’re seeking a subtle warmth or a fiery kick, Hatch chiles deliver a depth of flavor that becomes truly addictive.

The Hatch Chile Season: Fresh, Canned, and Frozen Delights

The peak season for fresh Hatch chiles is a short but celebrated window, typically running from the end of July to the beginning of August and extending through September. During this time, the aroma of roasting chiles fills the air, signaling their arrival. We always recommend stocking up when they’re fresh! Hatch chiles freeze exceptionally well, allowing you to savor their flavor long after the season ends. Simply roast, peel, and freeze them whole or diced for convenient use later. If fresh chiles aren’t available, canned or jarred roasted Hatch chiles are an excellent pantry staple, ensuring you can enjoy their taste year-round.

Essential Hatch Chile Preparation: Roasting and Peeling

Proper preparation is key to unlocking the full potential of Hatch chiles. Roasting them softens the flesh, deepens their flavor, and makes the thick outer skin easy to remove. You can roast chiles on a grill, under a broiler, or in the oven until the skins are blackened and blistered. After roasting, immediately place the hot chiles into a paper bag or a covered bowl to steam for 10-15 minutes. This crucial step loosens the skins, making them simple to peel away. While the flesh of the chile is edible and holds much of its flavor, removing the tough outer skin significantly improves the texture of your dishes.

Hatch Chile Chili Mac

By Justine

This hearty and flavorful chili mac is packed with Hatch chile goodness, making it perfect for a comforting lunch or dinner. Choose mild or spicy chiles to suit your taste.

Prep: 10 mins

Cook: 5 mins

Servings: 6

Equipment

  • 1 pressure cooker (or a large pot for stovetop)

Ingredients

  • 1 tbsp olive oil
  • 1 lb spicy ground sausage, or ground beef
  • 1/2 onion, diced
  • 15 oz diced tomatoes
  • 1 c tomato sauce, or spaghetti sauce
  • 1 packet chili seasoning
  • 15 oz red beans, canned, not drained
  • 1/2 c Hatch chiles, charred, flesh removed, diced
  • 1 c beef broth
  • 1 c noodles, small or medium like macaroni

Instructions

  1. Turn pressure cooker to sauté mode and add olive oil, ground sausage (or beef), and diced onions. Cook until the meat is no longer pink, adding the packet of chili seasoning halfway through the cooking process.
  2. Turn the pot off. Dump in the tomato sauce, diced tomatoes, kidney beans, beef broth, and additional chili powder if desired, then stir to combine. Pour 1 cup of uncooked noodles on top and gently push them down so they are just submerged, but do NOT stir.
  3. Set to pressure cook on high for 5 minutes. Do a quick release of pressure and lift the lid. Turn the pot off. This dish is excellent with 3/4 cup of shredded cheese stirred in at this time. If using a Ninja Foodi, you can sprinkle cheese on top and close the air crisp lid at 400°F for 2 minutes until browned. Serve hot.

What is the season for Hatch chiles?

Hatch chile season is relatively short, typically spanning from early August through the end of September. This is when you’ll find them fresh at your local grocery stores. Since the season is brief, we highly recommend buying a generous amount and freezing some to enjoy throughout the year!

Are Hatch chile peppers hot?

Hatch chiles vary significantly in heat level, ranging from mild to extra hot. The hottest parts of each pepper are typically the inner membrane and seeds. If you prefer less heat, you can easily remove these parts after roasting and peeling. Each farm in the Hatch Valley typically cultivates a variety of spicy levels, so you can often choose based on your preference.

Do you have to peel Hatch chiles?

Yes, it’s generally recommended to peel Hatch chiles, especially for recipes where a smoother texture is desired. The outer skins are quite thick and firm, which can be unpleasant to chew. Roasting or blanching and then steaming the chiles makes the skin easy to remove. While the inner flesh and most green peppers are edible and contain much of the flavor, removing the skin improves the eating experience significantly.

Detailed Guide to Peeling and Blanching Hatch Chiles

As mentioned, the outer skins of Hatch chiles are quite thick and firm, making peeling a crucial step for many recipes. Whether you smoke, roast, or blacken the skins, submerging the chiles in ice water or placing them in a paper bag immediately after cooking helps them steam, causing the skins to loosen and fall right off, similar to how we handle roasted jalapenos.

Ultimately, the decision to peel depends on your personal preference and how you intend to use the chiles. If you’re incorporating them into a smooth sauce like our copycat Qdoba salsa verde, removing the skin is highly advisable for a refined consistency. However, if you appreciate the texture of the skin or are making a rustic dish, you may choose to leave it on.

How to Blanch Hatch Chiles

Blanching is another effective method for preparing Hatch chiles, particularly if you want to quickly remove the skins without roasting. Here’s how:

  • Wear Gloves: Always wear gloves when handling spicy varieties to prevent skin irritation. You will regret it if you don’t!
  • Blanching Process: Bring a pot of water to a rolling boil. Carefully drop the whole chiles into the boiling water for a few minutes, typically 3-5 minutes, or until the skins appear slightly softened and blistered.
  • Ice Bath: Immediately transfer the blanched chiles to an ice bath to stop the cooking process.
  • Peel the Skins: Once cooled, the skins should be easy to remove by rubbing them with a paper towel or gently scraping them off with a knife. This method is also excellent for blanching bell peppers.

Remember, whether you roast or blanch, the goal is to loosen that outer layer to reveal the tender, flavorful flesh beneath. This step ensures the best possible texture and taste in your Hatch chile creations.
