  • 1 tbsp taco seasoning
  • 1 can diced tomatoes, 14.5 oz.
  • 1/2 tsp chili powder, or more if you want spicier
  • 1.5 cup noodles, uncooked (penne, elbow macaroni, or shells work well)
  • 1 cup beef broth
  • 1/2 cup sour cream, plus more for serving if desired
  • 1 cup cheese, shredded (sharp cheddar is highly recommended)

Instructions

  • Set your Ninja Foodi to the “Saute” function. Add the olive oil, diced onion, ground sausage, seasoned salt, and taco seasoning. Cook, breaking up the sausage with a spoon, until it’s fully browned and no longer pink. Once cooked, press “Stop” to turn off the saute function.
  • Stir in the can of diced tomatoes and chili powder. Spread the meat mixture evenly across the bottom of the pot, creating a flat layer.
  • Evenly sprinkle your uncooked noodles over the meat and tomato layer. Carefully pour the beef broth over everything, ensuring the noodles are just barely submerged. IMPORTANT: Do NOT stir at this stage.
  • Secure the pressure cooker lid (the one not attached to the unit) and ensure the steam release valve is set to “Seal.” Select the “Pressure” function and set the cooking time for 4 minutes on HIGH pressure.
  • Once the pressure cooking cycle is complete, perform a quick release of the pressure by carefully turning the steam release valve to “Vent.” Once all pressure has been released and the float valve drops, open the lid and stir the pasta mixture thoroughly.
  • Return the Ninja Foodi to the “Saute” function (on low). Stir in the sour cream and 3/4 cup of the shredded cheese until the cheese is fully melted and the taco pasta begins to bubble and thicken to your desired consistency. Cook until the noodles reach your preferred tenderness. Press “Stop.”
  • Sprinkle the remaining 1/4 cup of shredded cheese evenly over the top of the pasta. Close the air fryer lid (the attached crisping lid). Select the “Air Crisp” function, set the temperature to 400°F (200°C), and cook for 3 minutes, or until the cheese is lightly browned and perfectly melted. Lift the lid and serve immediately!

    Garnish each serving with an extra dollop of sour cream or freshly diced chives for added flavor and presentation.
