Why the Instant Pot is Your Best Friend for Mississippi Roast

The Instant Pot revolutionized home cooking, and for good reason. Its high-pressure environment is unmatched for transforming tough cuts of meat into unbelievably tender, fall-apart deliciousness in a fraction of the time compared to traditional methods. When it comes to pressure cooker shredded beef like our Mississippi Roast, the Instant Pot excels. It infuses the beef with deep, complex flavors from the pepperoncini, ranch seasoning, and rich gravy, creating a meal that tastes like it simmered all day but is ready in about an hour of active cooking time. My initial experiments with various cuts, including standard chuck roast and an arm roast recipe, consistently yielded fantastic results, proving that the Instant Pot is a true game-changer for this classic comfort food. It’s also incredibly versatile, allowing you to use other multi-cookers like a Crockpot Express or a Ninja Foodi, as long as they offer high-pressure cooking functionality.

Essential Ingredients for Your Mississippi Roast

The magic of Mississippi Roast lies in its deceptively simple yet profoundly flavorful ingredient list. Each component plays a crucial role in building the rich, tangy, and savory profile that makes this dish so irresistible:

  • The Roast: For the most tender, shreddable results, I highly recommend a chuck roast. Its marbling of fat breaks down beautifully under pressure, infusing the meat with incredible juiciness and flavor. Other excellent choices include tri-tip, bottom round, or eye round roast. Cutting the meat into thick strips, about 1.5 inches thick and 3 inches long, before cooking helps it become exceptionally tender within the cooking time. A little olive oil is essential for browning the meat in the initial step, creating a delicious crust and locking in moisture.
  • Pepperoncini Peppers: These jarred, mild to medium-heat peppers are the star of the show. Don’t be shy – they are not overtly spicy but contribute a unique tangy, slightly sweet, and zesty flavor that is absolutely integral to Mississippi Roast. Be sure to reserve some of the pepperoncini juice from the jar, as it becomes a vital part of the cooking liquid, enhancing the overall taste. The remaining juice can even be used for other exciting recipes like pepperoncini chicken!
  • Worcestershire Sauce: A dash of Worcestershire sauce adds a deep, umami-rich complexity and a subtle tang that complements the other bold flavors in the gravy. It’s a key secret ingredient for building depth.
  • Dry Ranch Seasoning Mix: This is another non-negotiable ingredient. Use a packet of dry ranch seasoning (like Hidden Valley), not the liquid dressing. It provides a creamy, herbaceous, and savory flavor that perfectly balances the tanginess of the pepperoncini and rounds out the overall taste profile.
  • Gravy Mix: A packet of brown gravy mix, such as McCormick mushroom gravy, helps to thicken the sauce and add another layer of savory richness, contributing to a robust and satisfying gravy.
  • Beef Broth: Using beef broth instead of plain water significantly enhances the depth of flavor in your roast. It provides the necessary liquid for the Instant Pot to come to pressure and helps to break down the connective tissues in the meat, ensuring a tender outcome. A combination of beef broth and pepperoncini juice offers the best flavor balance.
  • Butter: A stick of butter, ideally unsalted or even Kerrigold garlic butter if you’re a garlic enthusiast, melts into the sauce, creating an incredibly smooth, luxurious texture and a rich, umami flavor that elevates the entire dish. If dietary needs require, a dairy-free alternative can be used.
  • Cornstarch (Optional Thickener): If you prefer a thicker gravy at the end, a simple slurry of cornstarch and hot liquid from the pot can be whisked in. While optional, it’s an easy way to achieve that perfect gravy consistency.

Choosing the Best Cut of Beef for Mississippi Roast

While chuck roast is widely considered the gold standard for Mississippi Roast due to its excellent marbling and rich flavor, there are several other cuts that perform beautifully under the Instant Pot’s high pressure. Tri-tip roast, bottom round, and Scotch tender are all viable options. Generally, fattier cuts tend to be more forgiving and offer a deeper flavor profile, becoming incredibly tender and juicy. Leaner cuts might be slightly less expensive but can sometimes result in a drier roast if overcooked. For optimal shredding, regardless of the cut, ensure you slice the meat into thick strips, roughly 1.5 to 2 inches thick. This allows the heat and moisture to penetrate thoroughly, ensuring every piece becomes melt-in-your-mouth tender.

Mississippi Roast with a Frozen Roast? Absolutely!

Life gets busy, and sometimes you forget to thaw the meat. No problem! The Instant Pot is a lifesaver for cooking roasts directly from frozen. You’ll use the same delicious blend of sauce and ingredients, simply skipping the initial sautéing step. For a standard 3-pound frozen roast, increase the cook time to approximately 1.5 hours on high pressure. This extended cooking time ensures the meat thaws and then tenderizes perfectly. The natural release of pressure afterward is even more critical when cooking from frozen, as it allows the internal temperature to equalize and the beef to become exceptionally tender. Mastering Your Instant Pot: Tips for Perfect Mississippi Roast

Achieving the perfect Mississippi Roast in your Instant Pot is straightforward with a few key techniques:

  • Browning for Flavor (and Texture): While not strictly mandatory, browning your beef pieces on the “Saute” function before pressure cooking adds a layer of depth and a delightful crust. This step caramelizes the meat’s exterior, locking in juices and developing richer flavors. Season generously with salt and pepper beforehand for the best results.
  • Deglazing the Pot: After browning, always deglaze the pot. Add a splash of beef broth or pepperoncini juice and scrape up any browned bits stuck to the bottom with a wooden spoon or spatula. This crucial step prevents the dreaded “BURN” message and ensures your Instant Pot functions correctly.
  • Whisking Dry Ingredients: To prevent lumps in your gravy, always whisk the dry ranch seasoning and gravy mix packets with a portion of the beef broth or pepperoncini juice in a separate bowl until smooth before adding it to the pot. This creates a uniform sauce base.
  • The Power of Natural Pressure Release: For incredibly tender, fall-apart beef, opt for a natural pressure release (NPR) rather than a quick release. When the cook time finishes, simply allow the Instant Pot to sit undisturbed. The pressure will gradually release over 25-30 minutes, allowing the meat to continue cooking gently and reabsorb juices, resulting in a significantly more tender texture. Resist the urge to open the vent immediately.
  • Cutting the Beef: Cutting your roast into smaller, thick strips (around 1.5 to 2 inches) helps the meat tenderize more uniformly and quickly under pressure. This ensures every piece is succulent and ready to shred.

The natural pressure release is key for achieving this level of tenderness.

Once the Instant Pot completes its magic, the total cook time (including pressure building and natural release) for your Mississippi Roast is about 1.5 hours – significantly faster than traditional oven methods for Mississippi Pot Roast. This makes it a perfect weeknight meal when you crave comfort food without the long wait. The shredded beef is incredibly versatile; my family loves it tucked into small tortillas with a dollop of sour cream for easy Instant Pot tacos, while I often prefer it over a bed of fluffy brown rice.

How to Thicken Your Mississippi Roast Gravy to Perfection

After your Mississippi Roast has finished cooking, you might find the liquid a bit thin. If you prefer a rich, thick gravy, follow these simple steps:

  1. Carefully remove the cooked meat and pepperoncini peppers from the Instant Pot and set them aside.
  2. Set your Instant Pot to the “Saute” function.
  3. In a small bowl, whisk together 2 tablespoons of cornstarch with about 1/4 cup of the hot liquid from the pot until a smooth slurry forms.
  4. Pour the cornstarch slurry into the simmering liquid in the Instant Pot, whisking continuously.
  5. Allow the mixture to bubble gently for a few minutes, stirring occasionally, until it reaches your desired thickness. The gravy will continue to thicken slightly as it cools.
  6. Return the shredded meat and peppers to the pot, or simply pour the thickened gravy over the meat when serving with sides like creamy mashed potatoes, steamed Ninja Foodi rice, or even polenta. Prepare for pure deliciousness!

Equipment

  • 1 pressure cooker

Ingredients

  • 3 lb roast, we have used chuck roast (best cut) and top round roast, cut into thick strips
  • 2 tbsp olive oil, to saute
  • 1 small onion, diced, optional
  • 1/2 cup beef broth
  • 3 tbsp ranch dressing mix, or 1 packet
  • 1 packet gravy mix, I used McCormick mushroom gravy
  • 1/2 cup peperoncini juice
  • 1 tbsp worcestershire sauce
  • 8-10 large peperoncini peppers
  • 1 stick butter
  • 2 tbsp cornstarch, only use if you want to thicken liquid at the end to make a thicker gravy, I chose not to

Instructions

  • Cut beef into large strips (approximately 1.5″ thick x 3″ long) to ensure maximum tenderness within the hour cook time.
  • Sprinkle the beef generously with salt and pepper. Set your Instant Pot to the “Saute” function and add olive oil. Once hot, add the meat and brown all sides until a nice crust forms. Turn the pot off and use a wooden spatula to scrape any stuck-on bits from the bottom of the pot. A small amount of broth can assist if needed, but it’s often not necessary.
  • In a small bowl, whisk together the beef broth, pepperoncini juice, dry ranch mix, and gravy packet until the mixture is completely smooth and free of lumps. Pour this flavorful sauce over the browned meat in the Instant Pot.
  • Place the whole pepperoncini peppers on top of the meat and sauce. Add the stick of butter, ideally in the center of the pot, allowing it to melt and infuse the dish with its rich flavor during cooking.
  • Secure the lid on your Instant Pot and ensure the vent is sealed. Set the Instant Pot to “High Pressure” for 60 minutes. Once the cooking cycle is complete, allow for a full natural pressure release (NPR), which typically takes an additional 25-30 minutes. This slow release is crucial for achieving ultra-tender beef.
  • Once the pressure has fully released, carefully open the lid. Remove the pepperoncini peppers, snip off the stems, and cut them into smaller, bite-sized pieces before returning them to the pot. You can serve the roast as large chunks or shred the beef directly in the pot using two forks for a classic pulled-meat style.
  • If you prefer a thicker gravy, remove the meat and peppers from the pot. Set the Instant Pot to “Saute” mode. In a small bowl, combine 2 tablespoons of cornstarch with a few tablespoons of the hot liquid from the pot, whisking until smooth. Pour this slurry into the simmering liquid in the Instant Pot and stir until it thickens to your desired consistency. Pour the thickened gravy over the meat and serve with rice, mashed potatoes, or your favorite side dish.

Notes

Cooking with a Frozen Roast

When using a frozen roast, you will skip the initial sautéing step. Use the same ingredients for the sauce as outlined above. However, the cooking time will need to be increased to 1 hour and 30 minutes on high pressure, followed by a full natural pressure release. This extended time allows the roast to thaw completely and then tenderize. For more in-depth instructions, please refer to our dedicated recipe for Instant Pot frozen chuck roast.

Frequently Asked Questions About Mississippi Roast

Why is it called Mississippi Roast?

The origins of Mississippi Roast are often attributed to a home cook named Robin Chapman from Ripley, Mississippi, who shared her recipe with friends and family. Although she didn’t initially give it this specific name, the recipe’s popularity spread rapidly throughout the South and beyond, eventually becoming known as “Mississippi Roast” in homage to its birthplace.

Can I substitute au jus mix for brown gravy?

Yes, you can substitute au jus mix for brown gravy in a pinch, but be aware that au jus tends to be saltier and will result in a thinner sauce. If you’re looking for an alternative to brown gravy, a packet of dry onion soup mix is another popular and flavorful substitute that many home cooks enjoy. I personally find McCormick mushroom gravy mix delivers the best balance of flavor and thickness for this recipe.

Do you have to brown a roast before putting it in an Instant Pot?

No, browning the roast before pressure cooking in the Instant Pot is not strictly necessary for safety or cooking. However, it is highly recommended. Sautéing the meat in the pot before adding liquids helps to develop a rich, caramelized crust, adding a significant depth of flavor and texture to the final dish. The Instant Pot’s “Saute” function makes this step incredibly convenient, allowing you to brown the meat directly in the same pot you’ll use for pressure cooking.
