A black mug emblazoned with 'Let's Eat' brims with pressure cooker beef pot pie soup, garnished with tiny pie crust shapes. It sits on a wooden surface alongside a white floral cloth, while a pressure cooker lingers in the background.

There’s something uniquely satisfying about beef, isn’t there? Its rich flavor and versatility make it a staple in countless kitchens. For this recipe, we’ve perfected a method that harnesses the power of your pressure cooker to create extraordinarily tender beef, mingling beautifully with a colorful medley of vegetables. From chuck roast to leftover steak, our adaptable approach allows you to create this sensational soup, much like many of our other Instant Pot recipes, with ease and incredible results every time.

The Magic of Beef Pot Pie Soup in Your Pressure Cooker

Imagine a classic beef pot pie: succulent, bite-sized pieces of beef enveloped in a rich, savory gravy, topped with a golden, flaky crust. Now, envision all that incredible flavor concentrated into a comforting, soul-satisfying soup! That’s exactly what our Beef Pot Pie Soup delivers. It’s the ultimate comfort food, providing all the deliciousness without the fuss of baking a full pie. The beauty of preparing this dish in an Instant Pot or Ninja Foodi is the unparalleled speed and efficiency. You get that slow-cooked taste in a fraction of the time, transforming a humble pot pie into a quick, family-friendly dinner.

While a traditional stovetop method is certainly an option for this delightful meal, the pressure cooker truly excels. High pressure cooking is a game-changer for beef, breaking down tough connective tissues and rendering even the most modest cuts of meat incredibly tender – so tender it practically melts in your mouth. This consistent tenderness is something you can rely on, making every spoonful of this beef pot pie soup a pure delight. If using a Ninja Foodi, simply use the non-pressure lid for any sautéing steps and switch to the pressure lid for cooking.

Crafting Your Delicious Beef Pot Pie Soup: Key Ingredients

The success of any great soup lies in its ingredients. For this hearty beef pot pie soup, we focus on quality components that deliver maximum flavor and texture. Let’s break down what you’ll need and why each element plays a crucial role:

Choosing Your Beef

We highly recommend using bite-sized chunks of beef stew meat for this recipe. This cut is perfect for pressure cooking as it transforms into unbelievably tender pieces that almost fall apart when served. It’s one of our absolute favorite recipes using beef stew meat because the high pressure ensures consistent, melt-in-your-mouth results without hours of simmering.

The Rich, Savory Broth

The foundation of this savory soup is its rich, thick broth. You’ll start with a can of diced tomatoes, which adds a lovely tangy depth. This is complemented by tomato sauce or V8 juice for an extra layer of tomato flavor, along with robust beef stock or broth. The combination creates a luscious base that truly defines the “pot pie” essence of the soup.

Fresh vs. Frozen Vegetables

While convenience is key for a quick dinner, a few fresh vegetables make a significant difference. Diced russet potatoes and onions are absolute must-haves. These fresh additions hold their shape and contribute essential texture and flavor that frozen or canned versions simply can’t replicate. Prepping them takes mere minutes and is well worth the effort.

For other vegetables, we embrace the convenience of frozen mixed vegetables. Especially during colder months, fresh corn, peas, or green beans might not be readily available or as vibrant. Frozen mixes are a fantastic way to add color and nutrients without extra chopping. They integrate seamlessly into the soup, cooking quickly once added.

Optional Additions & Variations

  • Mushrooms: Quartered mushrooms add an earthy depth that complements the beef beautifully. They absorb the rich flavors of the broth, becoming incredibly succulent.
  • Kidney Beans: A can of drained kidney beans can add extra protein and heartiness, making the soup even more substantial.
  • Bell Pepper: A small diced bell pepper introduces a subtle sweetness and extra pop of color.
  • Spices: Beyond the essentials like basil and garlic salt, we add a touch of Cajun seasoning and cumin for a wonderfully complex flavor profile that elevates the soup from simple to extraordinary.
  • Thickening the Soup: For those who prefer a thicker, more gravy-like consistency, a cornstarch slurry is your secret weapon. Whisking cornstarch with a bit of hot liquid from the pot and stirring it back in will create a beautifully thickened soup.

If you’re considering a poultry variation, our pressure cooker chicken pot pie soup recipe offers a similar comfort, requiring a slightly shorter cook time of just 6 minutes under pressure to ensure tender potatoes and perfectly cooked chicken.

Pressure Cooker Perfection: Speed and Tenderness

One of the greatest advantages of this recipe is its incredible efficiency when made in a pressure cooker like an Instant Pot or Ninja Foodi. This method is the epitome of a “dump and go” dinner – minimal effort for maximum flavor. Simply prep your ingredients, add them to the pot, set it, and walk away. In just 35 minutes of high-pressure cooking time, your entire family will be ready to enjoy a deeply flavorful and perfectly tender beef pot pie soup. The pressure cooker not only speeds up the cooking process but also tenderizes the beef to an exceptional degree, far beyond what traditional simmering can achieve in a similar timeframe. It’s the ideal solution for busy evenings when you crave homemade comfort without the lengthy cooking.

Stovetop Alternative: Classic Simmering

For those who prefer a more traditional approach or don’t own a pressure cooker, this beef pot pie soup can certainly be made on the stovetop. You’ll start by browning your beef tips on the stove, then adding the remaining ingredients and allowing everything to simmer gently. To achieve tender beef and fully cooked vegetables, cover your pot and maintain a consistent low bubble and boil over medium-high heat. Expect the stovetop method to take approximately 45 minutes of simmering time after the initial prep and browning. While delicious, the texture of the beef might not be quite as “fall-apart” tender as what you achieve under the high pressure of an Instant Pot, but it will still deliver a satisfying and hearty meal.

The Perfect Accompaniment: Biscuits or Dumplings

Since our beef pot pie soup recipe omits the traditional pot pie crust (a choice made for speed and simplicity), a flaky, tender accompaniment is highly recommended to complete the experience. Refrigerated biscuits are a fantastic, quick solution. Simply pop them in the oven while your soup is pressure cooking, and they’ll be ready at the same time, perfectly complementing the rich flavors of the soup.

How you serve them is entirely up to your preference! Some family members might enjoy them on the side for dipping, while others (like us!) love cutting them into bite-sized pieces and placing them directly on top of the soup, allowing them to soak up all that delicious broth. For a more homemade touch, you could even whip up simple three-ingredient dumplings, similar to those in our Bisquick Chicken and Dumplings recipe. For a truly unique experience, consider making our pull-apart bread for an even more satisfying side. Imagine a spoonful with a variety of perfectly cooked vegetables, a tender piece of beef, a generous amount of thick broth, and a piece of warm, fluffy biscuit – truly the best bite ever!

Equipment

  • 1 pressure cooker

Ingredients

  • 1.5-2 lb stew meat, or steak cut into bite-size pieces
  • 1 can diced tomatoes, 15 oz.
  • 1 large onion, sliced or diced
  • 1 medium russet potato, diced or sliced (the smaller the softer they will be)
  • 11 oz tomato sauce, or V8 juice
  • 1/2 tsp basil
  • 1/2 tsp garlic salt
  • 1/2 tsp salt
  • 1/2 tsp Cajun seasoning
  • 1 tbsp Worcestershire sauce
  • 1 1/2 cup beef stock, or broth (use 20 oz for a thinner consistency)
  • 1 cup frozen mixed vegetables, optional
  • 3/4 cup mushrooms, quartered, optional
  • 4 tbsp cornstarch, for thickening
  • 1 can kidney beans, optional, 15 oz., drained
  • 1/2 tsp cumin
  • 1 small bell pepper, diced, optional
  • 2 tbsp olive oil
  • 1 tbsp garlic , minced
  • 1 pkg. refrigerated biscuits, optional, for serving

Instructions

  • Set your pressure cooker to the “Sauté” function. Add olive oil, then introduce your bite-sized beef stew meat along with sliced onions, diced bell peppers (if using), Cajun seasoning, salt, and garlic salt. Cook until the beef is no longer pink on the outside. Turn the pot off.
  • Now, add the drained can of kidney beans (if using), tomato sauce (or V8), diced tomatoes, diced potato, Worcestershire sauce, cumin, basil, minced garlic, and beef broth. Stir all the ingredients thoroughly to ensure they are well combined.
  • Secure the lid on your pressure cooker and ensure the steam release valve is sealed. Set the cooker to “High Pressure” for 35 minutes. Once the cooking cycle is complete, allow the pot to naturally release pressure for 10 minutes, then carefully release any remaining steam.
  • Open the lid. Stir the soup gently. Turn the pot back to the “Sauté” function and add the frozen mixed vegetables and quartered mushrooms (if desired). Cook for 2-3 minutes, or until the vegetables begin to soften to your liking.
  • In a small bowl, whisk together 4 tablespoons of cornstarch with 5-6 tablespoons of hot liquid taken from your pot. This creates a smooth slurry. Pour this slurry into the pressure cooker, stirring continuously. Allow the soup to bubble gently as the sauce thickens.
  • Continue to cook briefly until all the vegetables reach your preferred tenderness and the sauce has reached the desired consistency. Turn the pot off. Remember that the soup will continue to thicken slightly as it cools.
  • Cut your freshly baked biscuits into small pieces and serve them generously on top of your warm beef pot pie soup, or offer them on the side for dipping. Taste and adjust seasoning, adding more salt if needed, before serving.
