Universal Electric Pressure Cooker Casserole Recipe

The beauty of this method is its adaptability. It doesn’t matter if you own an Instant Pot, a Ninja Foodi, a Crockpot Express, or a Mealthy pressure cooker. As long as it’s an electric pressure cooker, the core principles remain the same. You’ll primarily utilize the high-pressure function. For dual machines like the Ninja Foodi, ensure you use the pressure cooking lid (the one that is not attached) for these casserole preparations.

How to Prepare a Casserole in an Instant Pot

Making a casserole in your Instant Pot is surprisingly straightforward. You can easily incorporate various proteins such as chicken, pork, ground beef, or stew meat, much like our popular Instant Pot Beef Stew Casserole, alongside your choice of noodles or rice. Opt for short to medium pasta shapes like rotini, penne, medium shells, or macaroni for best results. Even leftover ham can be a fantastic addition to a creamy pasta and meat blend!

For those new to pressure cooking, we offer a wealth of easy one-pot meal recipes. Let’s start with some fundamental tips to ensure your success:

  • Make sure to Bookmark our dedicated Instant Pot recipes page. We consistently add new and exciting recipes each week!
  • For a quick reference, PRINT this invaluable Instant Pot cooking times cheat sheet. It will help you confidently determine the precise cooking durations for various meats, vegetables, and beans in your pressure cooker.
  • I HIGHLY recommend investing in this non-stick inner pot. It dramatically simplifies cleanup and significantly reduces the likelihood of encountering the dreaded “burn” notice.
    • While it’s important to know how to deglaze a pressure cooker after sautéing, using this improved liner will minimize issues, making your cooking experience smoother.

For reference, the model I typically use for all my recipe creations is a 6-quart Instant Pot, ensuring consistent results.

Optimal Cooking Times for Pressure Cooker Casseroles

The cooking duration for your pressure cooker casserole largely depends on your choice of starch – noodles or rice. Pasta generally requires less time. For instance, our popular Instant Pot Crack Chicken Casserole cooks in a mere 3 minutes under pressure. Grains like white rice, on the other hand, typically need between 12-18 minutes to fluff up perfectly.

Achieving the right balance of ingredients and technique is crucial. Insufficient liquid will trigger the burn notice, while adding too much pasta without proper liquid ratio can result in undercooked or gummy noodles. And remember the golden rule: DO NOT STIR your pasta or rice into the other ingredients before pressure cooking, as this is a common pitfall that can lead to disastrous results.

We’ll delve into all these details below, including a new recipe for what we affectionately call Instant Pot pork pasta. This versatile recipe can easily be adapted using shredded rotisserie chicken or leftover turkey, making it an excellent choice for using up ingredients you already have on hand.

As mentioned, you can use any type of protein you prefer, but ensure it is pre-cooked. If you are starting with raw meat, utilize the sauté function at the beginning with a little olive oil. Cook the meat until it’s no longer pink, then turn off the sauté function and proceed with the layering instructions below. The main ingredients required to craft a fantastic pressure cooker casserole include:

Essential Instant Pot Casserole Ingredients

  1. Pasta – For casseroles, I highly recommend using small to medium-sized pasta shapes. Long noodles, like spaghetti, are generally better suited for recipes specifically designed for them, such as our Instant Pot spaghetti.
  2. Broth – Chicken, beef, or vegetable broth will significantly enhance the flavor profile of your casserole. While water can be used as an alternative, it won’t impart the same depth of taste that broth does.
  3. Meat – Whether you choose chicken, pork, or beef, using leftover pre-cooked meat is a fantastic time-saver. If you’re starting with raw meat, a quick sauté with olive oil until it’s no longer pink is necessary before proceeding with the rest of the recipe.

Vegetables are a wonderful addition to any casserole. I suggest incorporating about 3/4 of a cup of mixed frozen vegetables for the best results. They will cook perfectly alongside the other ingredients, becoming tender and delicious. If you have a Ninja Foodi, you can even melt an additional layer of cheese on top using the air crisp function for an extra gooey finish.

Utilizing Leftover Meat in Your Casserole

Absolutely, incorporating leftover meat is a brilliant way to make a quick and flavorful casserole, a practice we frequently employ with recipes like our pressure cooker chicken and rice. As someone who despises food waste, I’m always looking for creative ways to repurpose leftovers into a second, equally delicious meal. If you share this philosophy, proper storage is key.

Once your cooked meat has cooled completely, store it in an airtight container or a freezer bag. Make sure to remove as much air as possible to prevent it from drying out. Keeping larger pieces of meat whole helps retain moisture. When you’re ready to use it, take it out about 30 minutes before cooking. Chop it into small, bite-sized pieces, or if it’s already shredded, that’s perfect. The goal is to have uniform sizes for even cooking and distribution.

Using pre-cooked leftovers significantly cuts down on prep time, as you’re essentially just warming the meat through and infusing it with the casserole’s rich flavors. While leftovers can sometimes dry out, cooking them in a thick, savory sauce like that of a casserole ensures they rehydrate and become incredibly tender and moist again, transforming them into a delightful new dish.

Enhancing Casserole Flavor and Texture

To elevate your casserole’s taste and consistency, consider these fantastic additions:

  1. Cheese: While optional, cheese is a non-negotiable staple in our household for that ultimate creamy, savory goodness.
  2. Sour Cream: For an extra layer of richness and a wonderfully creamy texture, a dollop of sour cream stirred in at the end works wonders.
  3. Cornstarch Slurry: If you prefer a thicker consistency, whisk a tablespoon of cornstarch with a bit of cold water to create a smooth slurry. Set your Instant Pot to sauté, and once the casserole is bubbling, gradually stir in the slurry until it reaches your desired thickness.

I occasionally add vegetables, but choosing the right type is important. Frozen mixed vegetables are typically the safest bet, as they tend to hold their shape and won’t become too mushy under pressure. We successfully incorporated them into our pressure cooker chicken noodle casserole recipe.

Top Tips for Successful Pressure Cooker Casseroles

If you’re a fan of one-pot meals but dread turning on your oven, especially during warmer months, the Instant Pot is your culinary hero. Now, let’s dive into the most important tips to guarantee your success and avoid the dreaded BURN notice on your screen:

  1. Invest in a Non-Stick Pot: I cannot stress this enough – I HIGHLY suggest you acquire the non-stick inner pot mentioned earlier. It not only makes cleanup incredibly easy but, more importantly, it will drastically reduce the chances of the burn notice appearing.
    • This specialized pot features a ceramic non-stick coating, providing an essential barrier between your food and the heating element.
    • Some pressure cookers can be extremely sensitive, displaying a burn notice even when no actual burning is occurring. This non-stick pot significantly mitigates such false alarms, ensuring a smoother cooking process.
  2. Layer Your Ingredients Properly: Whether you’re sautéing raw meat with olive oil or using pre-cooked meat, always ensure your protein forms the base. Spread it out evenly across the bottom of the pot.
  3. Add Liquid Last: Next, layer your other ingredients on top of the meat, followed by your liquid (water or broth). Remember, broth will always impart significantly more flavor than water. The precise ratio of noodles to broth can vary, but aim for a liquid level that just barely covers your main ingredients.
  4. The Golden Rule: Do NOT Stir Pasta or Rice: Finally, gently sprinkle your uncooked noodles or rice on the very top. It is CRUCIAL that you DO NOT SUBMERGE or STIR them into the liquid. Simply press them down gently enough so that they are just wet and submerged beneath the liquid.

After cooking on high pressure, you’ll want to quick-release the steam to prevent the noodles from becoming mushy. If you’re using rice, I typically allow a natural release for 2 minutes to give it extra time to fluff up perfectly inside the pot.

This last step – the layering without stirring – is the KEY to making any Instant Pot casserole recipe a resounding success! Most failures, particularly those resulting in a burn notice or starchy ingredients stuck to the bottom, occur because this critical direction was not followed. Adhere to it, and you’ll be enjoying perfectly cooked casseroles every time!

Cooking Frozen Casseroles in a Pressure Cooker

Cooking a pre-assembled frozen casserole directly in a pressure cooker isn’t ideal. The best approach is to cook the individual frozen components first. For example, if you have frozen meat, pressure cook it until tender. Then, drain any drippings, shred the meat, and proceed with the casserole instructions from that point. You would then layer the cooked meat on the bottom, followed by your noodles, broth, and seasonings, and you’ll be good to go. This ensures even cooking and prevents a mushy texture. 😉

While pasta is a common choice, long-grain white rice can also be used, as demonstrated in our Instant Pot hamburger casserole. I typically steer clear of brown rice in these recipes, as its significantly longer cooking time can alter the overall texture and timing. If you prefer using grains, you can easily substitute the ground beef in that recipe with your preferred leftover shredded meat.

Instant Pot Casserole Recipe Using Leftovers

This recipe is designed to make the most of your cooked leftover meats, transforming them into a fresh and satisfying meal.

  • Begin by placing your shredded, pre-cooked meat evenly across the bottom of the Instant Pot.
  • Next, sprinkle the uncooked noodles on top of the meat. Follow this with your chosen seasonings, distributing them over the noodles.
  • Carefully pour in the broth, ensuring it just covers the noodles without stirring.
  • Close the lid and set the steam valve to the sealing position. Select the “Pressure Cook” or “Manual” setting on High Pressure for 5 minutes.
  • Once cooking is complete, allow the pressure to naturally release for 2 minutes, then perform a quick release of any remaining pressure.
  • Open the lid, stir the contents thoroughly, then sprinkle in the shredded cheese and stir again until it has fully melted into the warm casserole.
  • Set the Instant Pot to the “Sauté” function. Cut your room temperature cream cheese into small chunks and add them to the pot. Stir slowly until the cream cheese melts completely, creating a wonderfully creamy sauce.
  • As the casserole begins to bubble, if a thicker consistency is desired, combine 1 tablespoon of cornstarch with a small amount of cold water in a separate bowl until smooth. Pour this slurry into the pot and stir constantly until the sauce thickens. Turn off the Instant Pot immediately once thickened.
  • Allow the casserole to rest for at least 5 minutes before serving. This allows the sauce to further thicken and the flavors to meld beautifully.

How to Store and Reheat Leftovers

As I always say, I hate wasting food! If you used meat that was previously cooked, then saved, and now used again in this dish, I generally advise against saving it a third time. Warming meat once is usually fine, but repeated reheating can significantly alter its texture and, more importantly, isn’t always the safest practice.

For any other leftovers, proper storage is crucial. Always wait until the casserole has cooled completely to room temperature. Transfer the portions you wish to save into an airtight container. If you don’t have a lid, foil or plastic wrap can work, but ensure you trap the least amount of air inside possible. Properly stored, your casserole will keep fresh in the refrigerator for about 3 days.

When you’re ready to enjoy it again, transfer your desired portion into a microwave-safe dish. Heat it for approximately 45 seconds, then gently stir the contents to ensure even heat distribution. This helps the middle portions get hot and prevents cold spots. Continue heating in 45-second intervals, stirring in between, until the casserole is thoroughly warm. For an extra touch of deliciousness, sprinkle a little more cheese on top during the last heating rotation to add that delightful, gooey texture.
