Instant Pot Breakfast Casserole with Hearty Potatoes
Our family adores breakfast, from sweet treats like our cinnamon roll breakfast casserole to hearty, savory delights. This Instant Pot breakfast casserole perfectly combines all our favorite elements into one delicious, easy-to-make dish. Imagine fluffy eggs, savory sausage, and tender potatoes baked together in a wholesome, satisfying meal that can be enjoyed any time of day!
While we specifically focus on the Instant Pot, this recipe is adaptable to various electric pressure cooker brands. The key is an electric model, as opposed to traditional stovetop pressure cookers. You’ll typically use a springform pan for the “pot-in-pot” method, which we’ll detail further. Having crafted a delicious crockpot breakfast casserole for years, the shift to a pressure cooker brought incredible speed and efficiency to our breakfast routine.

What we truly love is packing this casserole full of flavor. We prepared this savory breakfast creation just last weekend, and it’s truly reminiscent of a crustless quiche – but even better, as it delivers all the delicious inner components you crave without any pastry. It’s significantly more substantial than just a simple cheese and egg dish, often enhanced with ham, spinach, or our preferred hearty additions. For this recipe, we utilize a standard 6-quart Instant Pot.
We’ve experimented with several methods to perfect this dish: one directly in the inner pot (though it tends to stick more), the crustless quiche style you see here, and another using a bundt pan, resulting in a dish similar to a breakfast bundt cake. Each method yields a slightly different texture and presentation, offering flexibility for your preferences.
For an added layer of flavor and texture, consider incorporating 1 cup of defrosted frozen hash browns directly into the egg mixture. Alternatively, for a delightful vegetarian option, you can substitute the hash browns for any meat components, creating a satisfying plant-based breakfast casserole.

The Pot-in-Pot (PIP) Method for Perfect Casseroles
The “pot-in-pot” (PIP) method, which we highlight for this recipe using a round pan, requires a specialized springform cake pan. This technique essentially steams the casserole, ensuring a beautifully cooked, quiche-like consistency that slices effortlessly, much like a savory pie. This is the ideal approach for achieving a firm yet moist casserole that doesn’t stick.
While instructions for various methods can be similar, slight adjustments are necessary. When using a springform pan, you might use a little less batter and often require a slightly increased cooking time due to the density and thickness of the casserole. For those who prefer a firmer, drier egg texture, adding an extra minute or two to the cooking time can achieve your desired result. Our preferred Instant Pot breakfast casserole, prepared with pre-cooked bacon bits and no cheese (for dietary reasons), turned out perfectly after 15 minutes. If you incorporate uncooked sausage, extending the pressure cooking time by one minute is recommended.
Feel free to customize your casserole! You can easily omit bacon bits or add them as desired. We sometimes skip the cheese in certain batches, particularly for family members with dairy sensitivities, opting for almond milk as a dairy-free alternative. The result is still incredibly delicious and satisfying, even for dairy lovers!
Keep in mind that adding significantly more ingredients will naturally increase the cooking time by a minute or two. Everyone has a personal preference for egg doneness – some like them drier, others prefer a slightly wetter consistency. The first time you prepare this dish, consider it a test run and adjust the cooking time to perfectly match your taste. A 15-minute cook time is generally ideal for a casserole made with pre-cooked bacon bits and without cheese. For those adding sausage, we recommend extending the cook time to 16 minutes.
Preparing Your Breakfast Casserole in a Ninja Foodi
If you’re using a Ninja Foodi, the process is straightforward. Simply use the pressure cooking lid (the non-attached one) and select the pressure cook function. All other instructions regarding ingredient preparation, pan setup, and cooking duration remain consistent with the standard Instant Pot method. The Ninja Foodi’s pressure cooking capabilities make it an excellent tool for this quick and easy breakfast casserole.

For those new to the world of pressure cooking, don’t worry! Our detailed, step-by-step directions below will guide you through the process, making it simple and enjoyable. The primary method described here is the “pot-in-pot” (PIP) egg casserole, typically prepared in a springform pan, which ensures a beautifully structured and cooked dish.
Essential Ingredients for Your Instant Pot Breakfast Casserole
Gathering your ingredients at room temperature, especially eggs, often leads to the best results for a smooth and consistent casserole. Here’s what you’ll need for this hearty Instant Pot breakfast delight:
- 6 Large Eggs: Ideally at room temperature for better whisking and even cooking.
- 6 oz Pre-cooked Breakfast Sausage: (or 2 tbsp bacon bits). We find spicy Jimmy Dean sausage adds a fantastic kick.
- 1/2 cup Shredded Cheese: A blend of cheddar and Monterey Jack works wonderfully for melty goodness.
- 1/4 cup Bell Pepper: Finely diced, any color for visual appeal and fresh flavor.
- 2 tbsp Diced Onion: Freshly diced or dried minced onion for aromatic depth.
- 1/3 cup Milk: 2% or whole milk yields the creamiest texture.
- 1 cup Hash Browns: Defrosted, adding a delightful potato texture.
- Salt and Pepper: To taste, seasoned just before serving is often preferred.
- 2 cups Water: For the bottom of the Instant Pot for pressure cooking.
- Non-stick cooking spray: Essential for pan preparation.
A quick tip: The first time I made this, it didn’t release smoothly because my pan had lost its non-stick coating. To ensure a beautiful, intact casserole, always use a high-quality non-stick pan or thoroughly spray your pan with cooking spray. While the taste remains fabulous regardless, proper pan preparation is key for presentation!

Step-by-Step: How to Make Breakfast Casserole in Your Pressure Cooker
Follow these simple instructions to create a delicious and hassle-free Instant Pot breakfast casserole using the pot-in-pot (PIP) method with a springform pan:
- Prepare Your Pan: Liberally spray the inside of your springform pan with non-stick cooking spray to prevent any sticking. This step is crucial for easy release!
- Pre-cook Meats (if needed): If using uncooked sausage, sauté it in your Instant Pot on the Sauté setting or on the stovetop until no pink remains. Drain any excess fat and set aside to cool slightly. Ensure your hash browns are defrosted.
- Whisk the Egg Mixture: In a large bowl, whisk together your eggs and milk. Season with a pinch of salt and pepper.
- Combine Ingredients: Gently fold in your cooked sausage (or bacon bits), shredded cheese (reserving about 1/4 cup for garnish), diced bell pepper, diced onion, and defrosted hash browns into the egg mixture.
- Fill the Pan: Carefully pour the entire egg casserole mixture into your prepared springform pan.
- Cover and Prepare Pot: Cover the top of the springform pan tightly with aluminum foil. Add 2 cups of water to the inner pot of your Instant Pot and place a trivet in the middle.
- Load the Casserole: Using a foil sling (a strip of foil folded into a U-shape, placed under the pan handles for lifting), carefully lower the springform pan onto the trivet.
- Pressure Cook: Secure the lid on your Instant Pot, ensure the sealing valve is closed, and set it to Manual (or Pressure Cook) on HIGH pressure for 16 minutes.
- Release Pressure: Once cooking is complete, allow for a slow natural release of steam for about 5-10 minutes (move the valve slightly to the venting position to control the release, or allow a full Natural Pressure Release for denser texture).
- Remove and Cool: Carefully lift the pan out of the Instant Pot using your foil sling. Remove the foil cover.
- Serve: Let the casserole cool for at least 5 minutes before gently releasing the sides of the springform pan. Place a plate on top and carefully flip the casserole over to maintain its shape, then slice and serve.
- Garnish: Sprinkle with the reserved cheese or fresh green onions before enjoying.

Equipment
- 1 pressure cooker (6-quart recommended)
- 1 7-inch springform pan
- 1 trivet
Ingredients
- 6 oz sausage, (precooked, or 2 tbsp. bacon bits)
- 1/2 c cheese, shredded, (mix of cheddar and jack is good)
- 2 tbsp onion, (diced, or dried minced onion)
- 1/4 c bell pepper, (diced)
- 1/3 c green onions, (diced, for garnish – optional)
- 1 c hashbrowns, (defrosted)
- 6 eggs
- 1/3 c milk
- Salt and pepper, to taste (I add after)
- Non-stick cooking spray
- 2 cups water (for Instant Pot)
Instructions
- Spray the inside of your springform pan generously with non-stick cooking spray to avoid sticking.
- Defrost your hash browns and set aside. If using raw sausage, cook it inside your Instant Pot on the Sauté setting or on the stovetop until no pink remains, then set aside.
- In a large bowl, whisk your eggs, milk, and a pinch of salt and pepper together until well combined.
- Fold in your hash browns, cooked sausage (or bacon bits), diced onion, and diced bell pepper. Add most of your shredded cheese, reserving about 1/4 cup to sprinkle on top when the casserole is done.
- Pour your egg casserole mixture into your prepared springform pan. Cover the pan tightly with aluminum foil.
- Add 2 cups of water to the inside of your Instant Pot and place a trivet in the middle.
- Carefully lower your covered springform pan onto the trivet. You can create a foil sling by folding a long strip of aluminum foil and placing it under the pan to help lower and lift it.
- Close the Instant Pot lid and set the sealing valve to the “Sealing” position. Set to Manual (or Pressure Cook) on HIGH pressure for 16 minutes.
- Once the cooking cycle is complete, perform a slow release of pressure. You can achieve this by moving the valve slightly to the “Venting” position to let steam come out gradually, or allow it to naturally release for 5-10 minutes before venting any remaining pressure.
- Lift the pan out of the Instant Pot using your foil sling and carefully remove the foil cover.
- Allow the casserole to cool for at least 5 minutes before gently releasing the sides of the springform pan. Place a serving plate on top and carefully flip it over to ensure it maintains its shape before cutting and serving.
- Sprinkle the reserved cheese and any desired fresh green onions on top and enjoy your delicious Instant Pot Breakfast Casserole!
