  • 2.5 tbsp all purpose flour

  • First, prepare the graham cracker crust directly in your 7-inch springform pan.
  • Preheat your conventional oven to 300°F (150°C). In a medium bowl, combine the graham cracker crumbs and 2 tablespoons of sugar. A natural release is vital for preventing cracks in your cheesecake. Carefully remove the cheesecake from the Instant Pot using the foil sling.
  • Place the cheesecake, still in its springform pan, on a wire cooling rack.
  • Gently dab any excess moisture from the top of the cheesecake with a paper towel. Allow the cheesecake to cool completely at room temperature, which typically takes about an hour. Once cooled, cover the springform pan tightly with plastic wrap and transfer it to the refrigerator. Chill the cheesecake for a minimum of 6-8 hours, or ideally overnight, to allow it to fully set and achieve its perfect creamy texture.
