Mastering Sirloin Tip Roast in Your Ninja Foodi or Pressure Cooker

Whether you own an Instant Pot, a Ninja Foodi, or a Crockpot Express, this recipe is incredibly versatile across various brands of multi-cookers. The Ninja Foodi, in particular, offers the added benefit of its air crisp function, allowing you to achieve a beautifully browned and crispy exterior after pressure cooking – all within the same pot. This transforms your perfectly tender roast into a culinary masterpiece with delightful textural contrast.

Much like our popular Ninja Foodi roast beef, this sirloin tip roast delivers a fantastic **one-pot meal** and provides delicious leftovers for subsequent meals. While there are several methods to cook this cut of meat, the pressure cooker approach is by far the quickest way to achieve a perfectly pink, sliceable, and exceptionally tender center. We’ll guide you through each step to ensure perfect results every time.

Essential Tips for Pressure Cooking Success

For those new to the world of pressure cooking, we offer a wealth of easy one-pot meal recipes. To get started on the right foot with your sirloin tip roast, here are a few fundamental tips:

  • Make sure to bookmark our comprehensive Instant Pot recipes page. We constantly update it with exciting new dishes each week!
  • For quick reference, be sure to print this invaluable Instant Pot cooking times cheat sheet. It’s an indispensable tool that will help you understand precisely how long meats, vegetables, and beans require to cook perfectly in your pressure cooker.
  • To prevent sticking and simplify cleanup, we highly recommend investing in a quality non-stick inner pot.
    • While it’s crucial to understand how to properly deglaze your pressure cooker after sautéing, a non-stick liner significantly reduces the chances of food sticking and burning, making the process much smoother.

For your reference, the model frequently used for all our recipe creations is a 6-quart Instant Pot, chosen for its ideal size and consistent performance.

Selecting and Preparing Your Sirloin Tip Roast

Sirloin tip roasts typically come in varying shapes and sizes, but generally resemble the cut pictured. You may find it secured with butcher’s twine, either once or multiple times. While you can cook it as is, removing the twine beforehand allows the meat to “relax” and truly fall apart during cooking, enhancing its tender texture. This cut is lean yet becomes incredibly tender under pressure, making it a fantastic choice for a hearty meal.

Crafting the Perfect Flavor: Dry Rub Seasonings

Below is our go-to sweet and savory dry rub recipe, designed to create a deeply flavorful crust on your sirloin tip roast. You can easily double this recipe if you prefer a thicker coating, or apply half before cooking and reserve the other half for broiling at the end. While the roast is utterly delicious right out of the pot, rested, and sliced, those who appreciate textural contrast (like myself) might opt to air fry or broil it for a few minutes post-cooking. For this exceptional dry rub, you will need:

  • 1 tbsp roasted garlic
  • Some brown sugar
  • Sea salt

For an even more intense flavor and a beautiful caramelized crust, consider adding more of this dry rub or our tri-tip dry rub. I find this method superior to browning at the beginning of the pressure cooking process. It allows the meat to become incredibly tender throughout, then you can apply more rub and achieve that desirable crust at the very end.

Feel free to customize the rub with your favorite spices, but the measurements provided below are for a simple, yet profoundly effective blend. If you’re working with a larger cut of meat, simply double the amounts to ensure even coverage. When selecting your roast, keep in mind the size of your pressure cooker’s inner pot; a 2 to 2.5-pound sirloin tip roast is generally ideal for most standard 6-quart models.

The amount of rub specified provides a light, even coating. If you’re looking to add a **spicy kick** to your roast, I suggest incorporating 1/2 teaspoon of dry Sriracha powder or red pepper flakes. While chili powder can also work, it’s not my preferred choice for this particular recipe. For those who enjoy a seared exterior, you can pre-sauté the roast in a bit of olive oil on all sides, seasoning with salt and pepper until a golden crust forms. After searing, turn off the sauté function, add your cooking liquid (water or broth), and use a wooden spoon to scrape up any browned bits from the bottom of the pot. This crucial step, known as deglazing, prevents a “burn” error and adds immense flavor to your gravy.

Optimal Cooking Time for Instant Pot Sirloin Tip Roast

For a 2 to 2.5-pound sirloin tip roast, you’ll want to pressure cook it on high for 50 minutes, followed by a 10-minute natural release. This natural release period is crucial as it allows the internal temperature to stabilize and helps the meat reabsorb its juices, resulting in a more tender and flavorful roast. After 10 minutes, quick-release any remaining steam. If you plan to make gravy from the delicious drippings, factor in an additional 10 minutes or so for that process.

To achieve a delightful crust on the outside, transfer the cooked roast to a foil-lined baking sheet. Set your oven to broil and place the roast under the broiler for just 2-3 minutes, or until the exterior reaches your desired level of golden-brown crispness.

Cooking from Frozen: Special Instructions

This recipe assumes you are starting with a freshly butchered or fully defrosted sirloin tip roast. If your roast is still frozen solid, you will need to follow our dedicated Instant Pot frozen roast instructions. Please note that when cooking from frozen, the dry rub will not adhere effectively, so you may need to add sauces or seasonings at the end of the cooking process to infuse flavor.

Using the Slow Cooker Function: A Recommendation

While multi-cookers like the Instant Pot often include a slow cooker function, for a truly exceptional sirloin tip roast slow cooker experience, I would generally recommend using a traditional, “old-fashioned” Crockpot. The slow cooker function on many multi-cookers can be less consistent and effective for achieving the deep, slow-cooked tenderness that this cut benefits from. The beauty of slow cooking this particular roast is allowing it to gently break down, resulting in an incredibly tender texture that pulls apart effortlessly.

Elevate Your Meal: How to Make a Rich Gravy

Transforming the flavorful drippings into a rich and savory Instant Pot gravy is a brilliant idea – it’s a shame to let such delicious liquid go to waste! The process is simple: after removing the roast, take out the trivet and switch your Instant Pot to the sauté function. In a small cup, whisk together about 4 tablespoons of the hot liquid with 1 tablespoon of cornstarch until smooth. Once the drippings in the pot are simmering, gradually pour in the cornstarch mixture, whisking continuously. Continue to whisk as the mixture boils until it thickens to your desired consistency, then turn off the pot. This quick method yields a velvety gravy that perfectly complements your tender roast.

For an extra layer of flavor, consider whisking together an amped-up BBQ sauce to pour over the top of the sliced roast before serving. You can adjust the spice level of this sauce to your liking, or simply use your favorite bottled variety for convenience. This addition can provide a wonderful tangy or smoky counterpoint to the savory beef.

Understanding Doneness: Ideal Sirloin Tip Roast Temperatures

Achieving your preferred level of doneness is key to a perfect roast. Here’s a general guide for internal temperatures:

  • Rare: 120–125°F (49–52°C)
  • Medium-rare: 130–135°F (54–57°C) – often considered ideal for tenderness and flavor.
  • Medium: 140–145°F (60–63°C) – note that at this temperature, the roast will be noticeably drier.

Always remember that the temperature will rise a few degrees during the resting period after cooking, so it’s often best to remove the roast when it’s slightly below your target temperature. If you ever have the opportunity and time, consider cooking this cut in a Traeger smoker. A smoked sirloin tip roast offers an exceptional tender interior with a beautiful, smoky crust.

Equipment

  • 1 pressure cooker

Ingredients

  • 2-2.5 lbs. sirloin tip roast
  • 1 tbsp. roasted garlic
  • 1 tbsp. brown sugar
  • 1 tsp. salt
  • 1.5 cup water, or broth

Instructions

  • Combine the roasted garlic, brown sugar, and salt, then generously coat the outside of the sirloin tip roast on all sides. Place a trivet into your pressure cooker pot, and add 1.5 cups of water or broth underneath the trivet.
  • Carefully place the seasoned meat on top of the trivet. Secure the lid and ensure the steam valve is sealed. Cook on high pressure for 50 minutes, followed by a 10-minute natural release. After the natural release, manually release any remaining steam.
  • Carefully lift the roast out of the pot and slice. To make gravy from the drippings, remove the trivet and set the pot to the sauté function. In a small cup, whisk together 4 tablespoons of the hot liquid from the pot with 1 tablespoon of cornstarch until completely smooth. Pour this slurry into the simmering pot and whisk continuously until the gravy thickens to your desired consistency. Turn off the pot.
  • If you desire a crispy crust, transfer the roast to a foil-lined baking sheet. Set your oven to broil and place the roast underneath for 2-3 minutes, watching closely until the outside is golden brown. You may add more of the dry rub before broiling for an even thicker, caramelized layer.

Expert Slicing: How to Cut a Beef Sirloin Tip Roast

Properly slicing your cooked sirloin tip roast is essential for maximizing its tenderness. Once the roast is cooked and has rested for at least 30 minutes (a crucial step to redistribute juices), place it on a sturdy cutting board. Observe the top surface of the meat to identify the small, visible strands of muscle fiber running in a particular direction – this is the grain. To ensure each slice is as tender as possible, position your very sharp knife perpendicular to these muscle fibers. Slice the roast into approximately 1/4-inch thick pieces, cutting “against the grain” to shorten the fibers and make the meat easier to chew.

Creative Culinary Ideas for Leftover Sirloin Tip Roast

Leftover sirloin tip roast is a treasure trove of culinary possibilities. To ensure the best results, proper storage is paramount. Always store the meat unsliced and prevent air exposure by placing it in a freezer bag, pressing out as much air as possible, or in an airtight container. Slice the meat only when you are ready to reheat and serve it. For simple reheating, place sliced or unsliced portions in a pan with a few tablespoons of sauce or broth and cover it. This adds moisture and enhances flavor, making it just as delicious the next day.

Beyond simple reheating, there are numerous ways to transform leftovers into exciting new meals. One of our favorite methods is to slice the roast into thin strips, marinate them briefly in teriyaki sauce, and then air fry for about 4 minutes at 400 degrees Fahrenheit, tossing halfway through, for quick and flavorful beef strips. This versatile cut also works wonderfully in many of our leftover brisket recipes. Casseroles are another excellent option, as the creamy sauces will reintroduce moisture and meld beautifully with the tender beef. Consider making roast beef sandwiches, adding it to tacos, stir-fries, stews, or even a hearty beef salad. The possibilities are truly endless!
