I used to make a similar ground beef and potato casserole in the oven, but when summer heat made the oven less appealing I switched to my slow cooker. With a few trials I discovered how well vegetables, beans and meat cook together in a savory sauce when layered correctly. Below are ingredient notes, tips, cook times and the full recipe so you can recreate this comforting Crockpot cowboy casserole at home.

Ingredient Notes
I like to add a diced onion and a diced bell pepper (any color) for extra texture and depth of flavor. For convenience, canned ingredients work wonderfully here: black beans, petite diced tomatoes, and whole-kernel corn all save time without sacrificing taste. Canned jalapeños are optional if you want added heat, or you can use fresh jalapeños or leave them out entirely.
The recipe uses beef broth to add savory moisture; the diced tomatoes contribute some liquid but the broth helps create a cohesive sauce. A splash of Worcestershire sauce enhances the beefy flavor, and basic seasonings like salt and chili powder round it out.
Shredded cheddar cheese is sprinkled on top before serving. If you need a dairy-free option, use a plant-based shredded cheese or omit the cheese entirely. For a heartier texture, peel and dice russet potatoes; red potatoes can be used but will remain firmer after cooking.
Can you use hash browns?
Yes, you can use frozen hash brown pieces instead of fresh diced potatoes. I recommend the diced or cubed variety rather than shredded, as shredded hash browns will become very soft during slow cooking. If using frozen, there is no need to thaw—add them straight to the slow cooker.
For the meat, 80/20 ground beef gives good flavor and moisture. If the cooked meat seems greasy, drain excess fat before adding it to the slow cooker. You can also substitute part or all of the ground beef with ground breakfast sausage for a spicier profile.
Can you use ground sausage?
Yes. One favorite variation is to use half ground beef and half hot ground sausage to introduce a mild heat without adding extra chiles. Adjust it to your taste and dietary preferences.

Can you add cornbread?
You can pair this casserole with cornbread for a classic combination. Baking cornbread separately and serving it on the side or serving cornbread muffins crushed on top of individual portions keeps the casserole from becoming soggy. If you prefer to bake cornbread on top in the slow cooker, expect a moister layer where the batter meets the casserole.
How Long to Cook Cowboy Casserole in Slow Cooker
Slow cooking on low is best for layered dishes because it allows flavors to meld and ingredients to tenderize evenly. Cook on low for about 6 hours. If you must shorten the time, cook on high for 4 hours, but the texture and depth of flavor will be better with the low-and-slow approach.
