Why Overripe Bananas Are Best for Baking
Those brown spots aren’t a sign of decay; they’re a signal of concentrated sweetness and moisture! As bananas ripen, their starches convert into sugars, resulting in a naturally sweeter fruit. This makes them ideal for baking, where they contribute a rich, intense banana flavor and incredible moisture, often reducing the need for added sugar and fat in recipes. Whether you’re using frozen bananas that have thawed or simply ripe bananas too soft for snacking, their unique qualities will elevate your baked goods.

Expert Tips for Storing Your Overripe Bananas
It’s completely understandable if you don’t always have the immediate energy or time to bake when your bananas reach that perfect brown stage. Luckily, there are simple ways to extend their usability and buy yourself a few extra days. A great first step is to place them in the refrigerator. This will significantly slow down the ripening process. We highly recommend putting them into a bowl or freezer bag first, as very ripe bananas can sometimes start to leak a bit. If you anticipate needing even more time before baking, freezing them is an excellent long-term solution.
For freezing, ideally, separate the bananas at the stem and place them into a gallon-sized Ziploc bag. Press out as much air as possible before sealing and store in the freezer for up to several months. If you plan to use them primarily in smoothies, it’s best to peel them first before freezing. This way, you can easily grab a frozen banana, toss it straight into a blender with milk, ice cream, or yogurt, and whip up a quick, creamy smoothie.
If your intention is to bake with them later, you can leave them unpeeled in the freezer bag. A day before you plan to bake, transfer the frozen bag to the refrigerator to thaw overnight. By morning, they will be very soft, and the peel will literally slide right off once you open the top. Minimal mashing will be required, and they will work perfectly for all your baking needs.

Beyond the Peel: Nutritional Benefits of Bananas
While we often focus on their delicious taste, it’s worth noting the nutritional powerhouse that bananas are. Even when overripe, they retain many beneficial nutrients. Bananas are an excellent source of potassium, which is crucial for heart health and maintaining proper fluid balance. They also provide good amounts of Vitamin B6, essential for brain function and metabolism, and Vitamin C, an important antioxidant. Furthermore, bananas contain dietary fiber, which aids digestion and helps promote a feeling of fullness. So, when you’re enjoying these sweet treats, remember you’re also getting a dose of wholesome goodness!
Frequently Asked Questions (FAQ)
Got more questions about using overripe bananas? We’ve got answers!
- How ripe is “overripe”? Generally, bananas with significant brown or black spots on the peel, or ones that are completely brown, are considered overripe. They should be soft to the touch but not mushy or moldy.
- Can I use green bananas for these recipes? No, green bananas are high in starch and lack the sweetness and moisture needed for most overripe banana recipes. For best results, always wait until they’re spotty and soft.
- What if my bananas aren’t quite brown enough? You can speed up ripening by placing bananas in a paper bag with an apple or tomato for a day or two. The ethylene gas released by these fruits will encourage ripening.

Equipment
-
1 9×13 inch baking pan
Ingredients
- 3 eggs
- 3 c milk
- 2 bananas, slightly ripe, sliced into half moons
- 3/4 c sugar
- 1 tsp vanilla extract
- 1 loaf bread, cut into chunks (thick-sliced or French bread works best)
Instructions
-
Use an entire loaf of thick-sliced bread or French bread. Remove the crusts if desired, and cut each piece into 8 squares using a sharp knife.
-
Place the bread chunks into a large bowl and pour the milk over the top. Use a spoon to gently move the bottom pieces to the top, ensuring all bread is soaking in the liquid. Let sit for a few minutes.
-
In a separate bowl, combine the eggs, sugar, vanilla, and sliced bananas. Stir them together until well combined. Pour this mixture over the milk-soaked bread and very gently fold it all together about 3 times, being careful not to overmix and mash the bread too much.
-
Preheat your oven to 350°F (175°C). Lightly spray a 9×13 inch baking pan with non-stick cooking spray. Pour the banana bread pudding mixture into the prepared pan and spread it out evenly.
-
Bake for 30 minutes, or until the middle is set and no longer wet. Remove from the oven and allow to cool in the pan for at least 15 minutes before serving. Enjoy warm!
