Effortless Instant Pot Stuffed Peppers

Welcome to your new favorite one-pot meal: Instant Pot Stuffed Peppers! This recipe transforms classic, comforting stuffed bell peppers into an incredibly quick and easy dish, perfect for busy weeknights. Forget the tedious blanching step often required in traditional methods; our pressure cooker approach ensures tender, flavorful peppers packed with a savory ground beef and rice filling in a fraction of the time. You’ll be amazed at how effortlessly this beloved dish comes together, delivering a taste that will transport you straight back to cherished childhood memories.

Easy Instant Pot Stuffed Peppers with Cheesy Ground Beef and Rice

Have you ever experienced the magic of steaming vegetables in your pressure cooker? If not, you’re in for a treat! For years, I dedicated significant time to preparing this meal, a beloved dish my grandmother used to make. Now, with the Instant Pot, I can achieve perfectly tender peppers in just 10 minutes of cook time, making it one of our most treasured Instant Pot recipes. The convenience is truly unmatched.

While I used to meticulously bake these for hours in the oven, the Instant Pot has revolutionized my cooking process. Even for those with other multi-cookers, such as the Ninja Foodi, this technique is easily adaptable. In fact, for Ninja Foodi users, the crisping lid offers a fantastic option to brown the tops of your stuffed peppers after steaming for an extra layer of texture and flavor. However, rest assured that any brand of electric pressure cooker will yield delicious results with this method.

One of the biggest advantages of cooking stuffed bell peppers in the Instant Pot is eliminating the need to blanch bell peppers beforehand. Traditional oven recipes often require boiling the peppers first to soften them, a step that adds extra time and effort. With the pressure cooker, this preparatory step is completely unnecessary, saving you valuable time in the kitchen. While you’re welcome to use your own favorite filling, this cooking technique significantly reduces overall preparation and cooking time, making it incredibly efficient.

Crafting the Perfect Filling: Essential Ingredient Notes

When selecting bell peppers for this recipe, you might notice different colors and shapes at the grocery store. While all varieties work well, there are a few tips to consider. Green bell peppers are typically the most budget-friendly option and offer a slightly more savory, classic flavor. Other colors like red, yellow, or orange tend to be sweeter and can add a vibrant visual appeal to your dish. Personally, I don’t prioritize sweetness, but I do look for peppers with four “bumps” on the bottom. These are often referred to as “female” peppers and tend to sit flatter in the steamer basket, preventing them from tipping over during cooking.

The core of our delicious filling consists of three main components: meat, rice, and a rich, tomato-based sauce. For maximum flavor and ease, we find that a good quality jarred spaghetti sauce is the perfect choice. It comes pre-seasoned with a blend of herbs and spices, eliminating the need for extensive additional seasoning and cutting down on prep time – a huge win in our book!

Cooked rice is essential for the filling. You can prepare your rice in advance using various methods. Sometimes, I opt for convenient minute rice, or I might prepare a batch of Ninja Foodi white rice before I even begin sautéing the meat and onions. Having your rice ready to go makes the assembly process incredibly smooth.

For the protein, lean ground beef is our go-to for its hearty flavor and texture. However, feel free to substitute with ground turkey for a leaner option, or even spicy ground sausage if you prefer a kick. For those seeking a vegetarian alternative, simply omit the meat entirely and increase the other filling components. You could also explore our chicken stuffed bell peppers recipe and adapt the cooking method for the Instant Pot.

As mentioned, a jar of quality spaghetti sauce is a game-changer for this recipe. It provides a robust, seasoned foundation for the filling, ensuring every bite is bursting with flavor without requiring you to measure out a dozen different spices. This simple hack truly streamlines the cooking process.

Shredded mozzarella cheese is an optional but highly recommended addition. Its melty, gooey texture and mild flavor perfectly complement the savory filling. For those with dairy sensitivities, I’ve successfully used dairy-free alternatives like Daiya cheese for my husband, though it typically doesn’t melt quite as smoothly as traditional mozzarella.

To further customize your Instant Pot stuffed peppers, consider adding half a cup of diced tomatoes to the meat mixture if you enjoy a chunkier texture. For a spicy twist, a dash of dry Sriracha powder or red pepper flakes can provide a delightful heat.

Can You Use Brown Rice in Stuffed Peppers?

Absolutely! If you prefer brown rice over Instant Pot white rice, or even wild rice varieties for a healthier twist, you certainly can. The key is to cook it ahead of time, as these healthier grains typically require a longer cooking duration. Simply prepare your preferred rice, whether on the stovetop or in your Instant Pot, and set it aside before you begin sautéing the meat and onions for the filling. This ensures all components are ready to be combined efficiently.

Making Stuffed Peppers Without Rice

For those looking to reduce carbohydrates or prefer a meat-heavy filling, you can certainly skip the rice. While we personally enjoy the fluffy texture and heartiness that rice adds, omitting it is a viable option. If you choose to go without rice, you will likely need to increase the amount of ground meat to adequately fill each bell pepper. Just be aware that the texture will be denser, and in my opinion, slightly less “yummy” without that delightful rice component.

Do You Need to Pre-Cook Meat Before Stuffing Bell Peppers?

Yes, pre-cooking the meat for stuffed bell peppers is a crucial step that I highly recommend. I have never prepared them otherwise, and I believe it’s essential for several reasons. Firstly, cooking the meat (ground beef or turkey) ensures it’s thoroughly browned and safely cooked before being placed inside the peppers. Secondly, and perhaps most importantly, pre-cooking allows you to drain any excess fat. If the meat isn’t drained, the fat can pool at the bottom of the pepper, making the filling greasy and potentially soaking into the pepper itself. This initial sautéing step is a small effort that yields significant improvements in both texture and flavor, just as I do with our Air Fryer Stuffed Peppers. It’s well worth the minimal extra time.

Mastering Your Instant Pot Stuffed Peppers: Tips for Success

Achieving perfectly cooked stuffed peppers in your Instant Pot is incredibly straightforward, especially with the right tools and techniques. Here are some invaluable tips to ensure your meal is a resounding success every time:

  • The Essential Steamer Basket: If you don’t already own one, a reliable vegetable steamer basket is a game-changer for this recipe. It allows the peppers to steam evenly without sitting directly in the cooking liquid, ensuring they become beautifully tender without getting soggy. This versatile accessory isn’t just for stuffed peppers; you’ll find yourself using it for a wide array of other vegetables in your Instant Pot. Many steamer baskets come with a convenient handle or hook, making it “easy peasy” to lift the cooked peppers safely out of the hot pot without needing oven mitts.
  • Batch Cooking Made Easy: This recipe provides enough delicious filling for 8 large stuffed bell peppers, which can typically be cooked in two batches (4 peppers at a time) in most standard Instant Pots. This makes it perfect for feeding a larger family or for meal prepping leftovers.
  • Choose Your Peppers Wisely: While green bell peppers are traditional, feel free to use any color you like – red, yellow, or orange. I often buy a variety of colors to make the meal more appealing and “fun” for the kids, or simply choose whichever peppers look freshest and most vibrant at the store.
  • The Steamer Basket Hook Trick: As mentioned, many steamer baskets include a central hook or rod. This simple design feature is incredibly helpful for safely lifting the entire basket of hot stuffed peppers out of the Instant Pot. It makes transferring them to a serving plate quick and effortless, embodying the “easy” philosophy we love in the kitchen!

One of the reasons my kids adore this meal is that everyone gets their own individual stuffed pepper. The magic of pressure cooking means the peppers steam to perfection, losing any potential bitterness and becoming incredibly soft. They’re so tender, you can literally cut them with the side of a fork, making them easy for little ones to manage.

This truly is a fantastic recipe for families! If your children are initially hesitant about eating bell peppers, don’t worry. Patience is key. Encourage them to first enjoy the savory filling, and gradually, suggest they “try just one bite” of the pepper itself. It took a bit of gentle persuasion, but now both my girls enthusiastically devour the entire stuffed pepper!

Instructions

  1. Add a touch of olive oil to your Instant Pot. Select the ‘Sauté’ function, set to ‘Normal,’ and add your ground beef and diced onions.
  2. While the meat and onions are cooking, prepare your rice. You can do this on the stovetop, using our Instant Pot White Rice method, or in the microwave. Continue cooking the beef and onions until the meat is no longer pink and the onions have softened.
  3. Once the meat is cooked and drained, add the spaghetti sauce and the cooked rice to the pot. Stir well to combine all ingredients.
  4. Turn off your Instant Pot and carefully remove the inner pot. Transfer the filling mixture into a separate bowl. Wash and rinse the inner pot thoroughly.
  5. Return the cleaned inner pot to your Instant Pot base. Pour in 1 1/2 cups of water. This water will create the steam needed to cook your peppers.
  6. Open your vegetable steamer basket and gently lower it into the Instant Pot, ensuring it rests above the water.
  7. Prepare your bell peppers by carefully cutting off the tops and removing all seeds and membranes from the inside.
  8. Place 4 of the prepared bell peppers into the steamer basket, arranging them snugly so they stand upright.
  9. Spoon a small amount of mozzarella cheese into the bottom of each bell pepper. This will create a delicious, melted layer at the base.
  10. Generously spoon the rice and ground beef mixture into each pepper, filling them almost to the top.
  11. Add another sprinkle of mozzarella cheese on top of the filling in each pepper. Place the reserved tops of the peppers back on (this helps prevent condensation from accumulating inside the peppers).
  12. Secure the lid on your Instant Pot, ensuring the steam release valve is set to the ‘Sealing’ position. Select the ‘Manual’ or ‘Pressure Cook’ function, set to ‘High Pressure,’ and cook for 10 minutes.
  13. Once the cooking cycle is complete, perform a quick release of the pressure by carefully moving the steam release valve to the ‘Venting’ position.
  14. Using the central ring hook (if your steamer basket has one) or heat-resistant tongs, carefully lift the vegetable steamer basket out of your Instant Pot or pressure cooker.
  15. Serve immediately and enjoy your perfectly cooked Instant Pot Stuffed Peppers!
