Equipment
-
1 pressure cooker or could be made on stovetop in a pot
Ingredients
- 1 tbsp olive oil
- 1 lb spicy ground sausage, or ground beef
- 1/2 onion, diced
- 15 oz diced tomatoes
- 1 c tomato sauce, or spaghetti sauce
- 1 packet chili seasoning
- 15 oz red beans, canned, not drained
- 1/2 c hatch chiles, charred, flesh removed, diced
- 1 c broth, beef
- 1 c noodles, small or medium like macaroni
Instructions
-
Turn your pressure cooker to the sauté setting. Add olive oil, ground sausage (or beef), and diced onions. Cook until the meat is no longer pink, stirring in the packet of chili seasoning halfway through the cooking process.
-
Turn the pressure cooker off. Add the tomato sauce, diced tomatoes, undrained kidney beans, beef broth, and diced Hatch chiles. Stir gently to combine these ingredients. Pour 1 cup of uncooked macaroni noodles on top, gently pushing them down so they are just submerged in the liquid, but do NOT stir the noodles into the mixture.
-
Secure the lid and set the pressure cooker to cook on high pressure for 5 minutes. Once cooking is complete, perform a quick release of the pressure and carefully lift the lid. Turn the pot off. For an extra creamy dish, stir in 3/4 cup of shredded cheese at this point. If using a Ninja Foodi, you can sprinkle the cheese on top and close the air crisp lid, cooking at 400°F for 2 minutes until the cheese is melted and lightly browned. Serve immediately and enjoy!

To Peel or Not to Peel? Understanding Hatch Chile Skins
The outer skins of Hatch chiles are notably thick and quite firm, a texture that most people find undesirable to chew. For this reason, it is generally recommended to peel them before incorporating them into most dishes. A common and effective method involves roasting or blackening the skins, then submerging the chiles in an ice bath. This thermal shock causes the skin to loosen, allowing it to fall right off with minimal effort. Another excellent technique, similar to what we use for roasted jalapeños, is to place the roasted chiles in a paper bag for about 10-15 minutes immediately after roasting. The steam trapped inside the bag helps to further loosen the skins, making them incredibly easy to remove.
Ultimately, the decision of whether or not to peel Hatch peppers often comes down to personal preference and the specific requirements of your recipe. While the outer skin is edible and contains much of the pepper’s robust flavor, its tough texture can be a deterrent for some. For a smoother culinary experience, especially in dishes where a silky texture is desired, sticking to the inner flesh is usually the best approach.
If you’re aiming for a perfectly smooth consistency, such as when preparing a sauce or a dip like our copycat Qdoba Salsa Verde, removing the outer skin is highly advisable. This can be achieved through various methods, including roasting the peppers until the skin is charred and blistered, or briefly blanching them in boiling water. Peeling ensures that your final dish has the desired texture without any tough, fibrous elements.
Expert Tips for Preparing Hatch Chiles: Roasting, Peeling, and Blanching
- **Safety First:** Always wear gloves when handling spicier varieties of Hatch chiles. The capsaicin oils can cause severe irritation if they come into contact with your skin or eyes – a regretful experience you’ll want to avoid!
- **Roasting & Peeling:** After roasting (either over an open flame, under a broiler, or on a grill) until the skins are blackened and blistered, place the hot chiles in a paper bag or covered bowl for 10-15 minutes. The steam will help loosen the skins. Then, simply rub the peppers with a paper towel or gently scrape the skin off with a knife.
- **Blanching for Ease:** Alternatively, you can also blanch peppers by submerging them in boiling water for a few minutes, then immediately transferring them to an ice bath. This method also helps to loosen the skin for easier peeling, although it might result in a slightly less smoky flavor than roasting.
However, if you appreciate the rustic texture and don’t mind the slight chewiness of the pepper skin, you are absolutely free to leave it on! For certain rustic dishes, the unpeeled skin can add a desirable element. Ultimately, your choice to peel or not to peel will depend on your personal culinary preferences and the specific textural requirements of your chosen recipe. Experiment and find what works best for your taste buds!
