  • 6 tbsp vegetable oil
  • 2/3 cup pineapple juice, or water
  • 6 maraschino cherries
  • 6-8 pineapple tidbits
  • 2 tbsp brown sugar
  • 1.5 cups water (for the Instant Pot base)

Instructions

  1. Mix together cake mix, eggs, oil, and pineapple juice until smooth. Spray the inside of your 7″ bundt pan generously with non-stick spray.
  2. Arrange halved or whole cherries and pineapple tidbits in a decorative pattern on the bottom of your bundt pan. Sprinkle brown sugar evenly over the fruit.
  3. Carefully pour the prepared cake batter on top of the fruit and brown sugar layer. Cover the pan securely with aluminum foil, ensuring no steam can enter.

Equipment & Ingredients for Springform Pan Version:

  1. Instant Pot or any pressure cooker
  2. Wilton 6 x 2 3/4 inch round pan (springform pan recommended for easy release)
  3. Small glass cup or trivet
  4. Aluminum foil
  5. 6 Pineapple tidbits
  6. 6 Maraschino cherries
  7. 1 cup Yellow cake mix (half of a standard box mix)
  8. 1 egg
  9. 3 tbsp oil
  10. 1/3 cup pineapple juice (use the juice from your canned pineapple)
  11. 1/4 cup brown sugar

Directions for Springform Pan Version:

  • Arrange the cherries and pineapple tidbits decoratively into the bottom of your round pan.
  • Sprinkle the brown sugar evenly over the fruit.

While you could certainly whip up your own homemade frosting to crown this delectable pineapple cake, for ultimate ease and convenience, I often find that simply melting vanilla frosting straight from the tub does the trick perfectly. Its sweet glaze complements the cake beautifully.
