  • Put olive oil in pot and turn pressure cooker to “Sauté” function. Place chicken breasts into pot and cook each side for about 2 minutes, until the outsides are no longer pink. Turn pot off. Move chicken to the side and pour in a bit of your broth to deglaze the pot (scrape any stuck-on bits from the bottom).
  • Sprinkle taco seasoning on top of breasts. Pour the remaining chicken broth over that, then add salt if desired, followed by the drained can of corn. Spread corn kernels out evenly inside the pot.
  • Add the drained and rinsed can of black beans on top, spread out evenly. Sprinkle the uncooked rice evenly inside the pot.
  • Pour the jar of salsa on top of the rice so all of it is covered.
