- 2 Eggs
- 6 tbsp Vegetable Oil
- 2/3 c Pineapple Juice, or Water
- 6 Maraschino Cherries
- 6-8 Pineapple Tidbits
- 2 tbsp Brown Sugar
- 1.5 c Water (for Instant Pot)
Instructions
- Mix together cake mix, eggs, oil, and pineapple juice until the batter is smooth. Thoroughly spray the inside of your 7-inch bundt pan with non-stick spray.
- Carefully arrange halved or whole maraschino cherries and pineapple tidbits in a decorative pattern on the bottom of your bundt pan. Evenly sprinkle the brown sugar over the fruit.
- Gently pour the prepared cake batter on top of the fruit and brown sugar layer. Cover the top of the bundt pan tightly with aluminum foil, ensuring no gaps for steam to enter.
- Place the trivet at the bottom of your Instant Pot. Pour 1.5 cups of water around the trivet to create the steam needed for cooking.
- Carefully lower the bundt pan with the cake batter onto the trivet inside the Instant Pot.

- Once the cooking cycle is complete, allow a natural pressure release for 10 minutes. This means do not touch the steam release valve for 10 minutes. After 10 minutes, carefully move the steam release valve to “Venting” to release any remaining pressure.
- Open the Instant Pot lid, carefully remove the foil from the cake pan, and let the cake cool in the pan until the sides begin to pull away, indicating it has set.
- Once cooled sufficiently, carefully invert the pan onto a serving plate. If desired, melt a bit of vanilla frosting and pour it over the top for an extra touch of sweetness. Serve and enjoy!

Equipment and Ingredients:
- Instant Pot or any pressure cooker
- Wilton 6 x 2 3/4 inch round pan (springform recommended for easy release)
- Small glass cup or trivet
- Aluminum foil
- 6 Pineapple tidbits (or thinly sliced pineapple rings)
- 6 Maraschino cherries
- 1 cup Yellow cake mix
- 1 Egg
- 3 tbsp Vegetable oil
- 1/3 cup Pineapple juice (use juice from the canned pineapple)
- 1/4 cup Brown sugar

Directions:
- Arrange cherries and pineapple tidbits decoratively into the bottom of your prepared pan.
- Sprinkle brown sugar evenly on top of the fruit.
- In a separate bowl, mix together the cake mix, egg, vegetable oil, and pineapple juice until smooth.
- Carefully pour the cake mixture over the fruit and brown sugar layer in the pan.
- Cover the top of the pan tightly with aluminum foil to prevent water from entering during cooking.
