  • Step 1: Remove the Thighs and Legs. Place the turkey on a sturdy cutting board. Using sharp kitchen shears or a heavy-duty knife, carefully cut through the joint connecting the thigh to the body. You want the leg and thigh to remain attached as one piece, as seen in the bottom right of the photo below. Repeat for the other side.
  • Step 2: Remove the Wings. Locate the wing joints and use your kitchen shears to cleanly sever the wings from the turkey breast. These can also be cooked on the sheet pan.
  • Step 3: Separate the Breast and Back. Flip the turkey over so it’s breast-side down. Using sturdy kitchen shears, cut along both sides of the backbone, from the tail to the neck. Remove the backbone and discard it (or save it for making stock or gravy).
  • Step 4: Split the Breast. With the breast still attached, place it breast-side up on your cutting board. Using the heel of your hand, press down firmly on the center of the breastbone until you hear a crack. This will flatten the breast, allowing it to lay flat on your sheet pan. Alternatively, you can carefully cut the breast in half down the center of the breastbone.
