Instant Pot Lasagna Casserole: The Ultimate Cheesy Weeknight Meal

This cheesy, hearty casserole offers all the incredible flavors you love in a traditional lasagna but in a deconstructed, easier-to-eat format. The best part? It’s ready in a fraction of the time, making it a perfect solution for busy evenings. We were so smitten with its simplicity and deliciousness that it inspired us to create a whole collection of Instant Pot casseroles for you to explore!

Our journey to this lightning-fast pressure cooker version actually began with a slow cooker rendition. While that recipe also used the same core ingredients, it required adding the noodles towards the end to prevent them from becoming too soft, and it still took an entire day to cook. The convenience of simply “dump and go” in the morning was appealing, but the lengthy cook time made spontaneous dinner plans impossible. The pressure cooker completely revolutionizes this, delivering that same beloved taste with remarkable speed.

For those new to the world of pressure cooking, embarking on one-pot meals can be a game-changer. To ensure your success, here are a few fundamental tips to get started:

  • Make sure to bookmark our Instant Pot recipes page. We regularly add new and exciting dishes!
  • It’s highly recommended to print out an Instant Pot cooking times cheat sheet. This invaluable guide will help you understand the precise cooking durations for various meats, vegetables, and beans in your pressure cooker.
  • For optimal results and easier cleanup, we strongly suggest investing in a non-stick inner pot for your pressure cooker. While it’s good practice to understand how to deglaze your pressure cooker after sautéing, a quality non-stick liner significantly reduces the chances of food sticking and burning.

For your reference, the recipes developed here are typically tested using a 6-quart Instant Pot model, a versatile size suitable for most family meals.

A white Instant Pot with a Star Wars theme sits on the kitchen counter, ready to tackle your favorite beef arm roast recipe. The digital display glows "On." Next to it lie a patterned cloth and some green onions, all against the backdrop of blue kitchen cabinets and a stovetop.

Some might affectionately call this “cheater lasagna” due to its incredible simplicity compared to the traditional, multi-step method. Yet, it truly delivers that authentic, deeply satisfying taste we all adore, but in a much shorter timeframe. An added bonus? There are no large, slippery noodles to contend with, making it wonderfully easy for even the littlest members of your family to enjoy. If you’re searching for a fabulous, comforting meal that your entire family will enthusiastically devour, this recipe is an absolute must-try!

This recipe isn’t exclusive to one brand of pressure cooker. We test our recipes across several brands at home, including Mealthy, Crockpot Express, and Ninja Foodi, ensuring consistent results. To make this casserole, you primarily need a pressure cooker with a sauté function to brown your meat and a high-pressure setting. For Ninja Foodi users, simply use the pressure cooker lid for the high-pressure cooking phase. Its versatility means you can enjoy this delicious dish regardless of your appliance.

One of the most appealing aspects of this meal is its true “one-pot” nature. You’ll only need a single pot to brown the ground meat, eliminating the need for a separate pot to boil the pasta. This significantly cuts down on cleanup time, a major win on any busy weeknight! Furthermore, you have the freedom to use virtually any type of medium-sized pasta you prefer. We often opt for whatever is on sale, making it an incredibly budget-friendly meal. While many shapes work, we find that medium-sized pasta varieties integrate best with the sauce and other ingredients.

Key Ingredients for Your Lazy Lasagna Success

Crafting this simple yet flavorful lasagna casserole relies on a few key ingredients. Here’s a closer look at each, along with tips and potential substitutions:

Pasta (Noodles)

While traditional lasagna uses wide, flat noodles, our deconstructed version embraces a variety of medium-sized pasta shapes. We frequently use penne pasta, but other excellent choices include elbow macaroni, rotini, ziti, cavatappi (squiggly shapes), or even medium shells. The goal is to select a pasta that can easily mix into a casserole and absorb the delicious sauce. This simple change is what makes the dish so much easier to eat, especially for children who might struggle with slippery lasagna sheets.

Sauce

For ultimate convenience, we recommend using a good quality jarred spaghetti sauce, such as Barilla Traditional. These sauces often come pre-seasoned with classic Italian herbs and spices, saving you an extra step. However, if you have a favorite homemade spaghetti sauce recipe, feel free to use that instead! You can always adjust the seasoning to your preference by adding more Italian seasoning, a pinch of oregano, or a bay leaf for extra depth.

Meat

The protein base for this casserole is incredibly versatile. We often use hearty ground beef or, for an extra kick, spicy ground sausage. If you’re looking for a lighter option, ground turkey or chicken sautéed with Italian seasonings works wonderfully. For those who love bold flavors, consider adding a packet of taco seasoning for a unique Mexican-Italian fusion. To introduce a bit of heat, a dash of red pepper flakes or chili powder can be stirred in with the other spices.

Cheese

You can never have enough cheese in a lasagna, in our opinion! Shredded mozzarella is the traditional choice and provides that essential gooey, melty texture. We particularly like using Galbani whole milk mozzarella for its rich flavor. For the creamy element, Galbani Ricotta cheese is our go-to, easily found in the refrigerated section of most grocery stores, typically near other cheeses. Cottage cheese can be an acceptable substitute for ricotta, and if you have dietary restrictions, many dairy-free varieties of both mozzarella and ricotta are available and work well.

Do You Have to Boil Noodles First to Make Lazy Lasagna?

Absolutely not! This is one of the key time-saving advantages of this pressure cooker method. With our instructions, the pasta cooks directly within the spaghetti sauce, absorbing all its delicious flavors as it becomes tender. By adding water along with all the other ingredients, the pressure cooker creates the perfect environment for the pasta to cook thoroughly and evenly, transforming this into a true one-pot wonder.

Instant Pot Lazy Lasagna with Ravioli: A Delicious Twist

For an even quicker and uniquely delicious twist on this lazy lasagna, you can easily incorporate small frozen ravioli! This addition brings an entirely new dimension to the dish, especially since ravioli typically come stuffed with cheese or ground beef, adding an extra layer of flavor and richness. The cooking time remains surprisingly similar. We’ve successfully used this technique in other Instant Pot pasta recipes where small, frozen pasta or ravioli are simply submerged in the liquid and cooked until tender. We’ve also adapted similar concepts for lasagna casserole baked in the oven. For an extra creamy touch, try stirring in about half a cup of ricotta cheese after cooking, or simply add a generous dollop on top of each serving, which is truly fabulous.

Ninja Foodi Lasagna Casserole: Versatility in Your Kitchen

For owners of a Ninja Foodi or similar multi-cooker, rest assured that the directions and cook times outlined below apply seamlessly. You will utilize the sauté function to brown your ground beef, then add the remaining ingredients, and finally, engage the pressure cooking setting. Simply follow the instructions carefully to enjoy this incredibly easy Ninja Foodi recipe, delivering a delicious lasagna casserole with minimal effort.

We’re eager to hear what you think of this simple recipe! Feel free to experiment with additional spices to tailor this easy pressure cooker lasagna casserole to your taste preferences. If you love the flavors, you should definitely try our Instant Pot lasagna soup next, which uses many of the same core ingredients for another comforting meal!

As devoted cheese lovers in our household, we always ensure a generous helping of shredded mozzarella is stirred directly into the casserole, with even more sprinkled on top for a perfect cheesy crust. You can either incorporate the ricotta cheese directly into the mix after cooking, or, as we often do with our Instant Pot Spaghetti, simply add a dollop on top of each individual serving.

Pressure Cooker Lasagna Casserole Recipe

By Justine

Easy Pressure Cooker lasagna casserole recipe with ground sausage our whole family loves. Lazy Instant Pot lasagna in a casserole which makes it much easier to eat! Quick dinner idea that is cheap to make and very family friendly!

Prep: 10 mins
Cook: 5 mins
Total: 20 mins
Servings: 6

Equipment

  • 1 pressure cooker

Ingredients

  • 2 tbsp olive oil
  • 1 lb ground sausage, (spicy is tastiest, can use ground beef alternatively)
  • 1 small onion, diced
  • 1 jar spaghetti sauce, (24 oz., we use Barilla Traditional)
  • 2 cup water
  • 2 cup pasta, uncooked (we use Barilla penne pasta)
  • 1 tsp garlic salt
  • 1/2 tsp basil
  • 2 cup mozzarella cheese (we use Galbani with whole milk)
  • 1 cup ricotta cheese

Instructions

  1. Set your pressure cooker to sauté.
  2. Add olive oil, ground sausage (or ground beef), and diced onions. Cook until the meat is no longer pink. Drain any excess grease and return the inner pot to your pressure cooker.
  3. Turn the machine off. This is an important step to prevent a “burn” notification, as the pot can be too hot for immediate pressure cooking. Add the spices and stir them in with the meat and onions.
  4. Spread the ground meat/sausage mixture evenly across the bottom of your pot. This creates a protective layer, helping to prevent the noodles from sticking to the bottom.
  5. Add the spaghetti sauce on top of the meat. Pour your 2 cups of water into the empty spaghetti sauce jar, shake it to get any remaining sauce out, then pour that into your pot on top of the sauce.
  6. Next, pour your uncooked noodles in as the subsequent layer. Do NOT stir! Gently push down the noodles so they are fully submerged into the liquid.
  7. Secure the lid and set your pressure cooker to High pressure for 5 minutes.
  8. Once cooking is complete, perform a quick release of the pressure.
  9. Stir in 1.5 cups of mozzarella cheese and allow it to melt into the hot pasta. You can either stir in the ricotta now or simply place a dollop on top of each serving.

Serving Suggestions and Creative Variations

How you serve your Pressure Cooker Lasagna Casserole can elevate the entire experience. A dollop of fresh ricotta cheese on top of each serving is a fantastic touch, allowing you to savor its creamy texture and distinct flavor alongside the rich lasagna. It’s entirely up to your preference – mixing it in or adding it as a garnish, either way promises deliciousness. For an extra pop of color and freshness, consider sprinkling some chopped fresh basil or parsley before serving. This cheesy, comforting dish pairs wonderfully with a simple green salad and some crusty garlic bread, creating a complete and satisfying meal.

Craving that lasagna taste but want to explore different cooking methods or textures? Here are a couple of fantastic alternatives:

  • Our Crockpot lasagna offers another effortless approach using your slow cooker. Just like our pressure cooker version, it requires no pre-boiling of noodles, making it incredibly convenient for a hands-off, all-day simmer.
  • If you’re in the mood for similar Italian flavors but in a comforting, spoonable form, give our Instant Pot lasagna soup a try. It cleverly incorporates many of the same ingredients into a hearty and warming soup, perfect for a chilly evening.

Thinking outside the box with your dinnertime routines not only makes cooking more enjoyable but also helps keep meals fresh and exciting for the whole family.
