Instant Pot blueberry muffins are a delightful, bite-sized breakfast that’s both quick to prepare and incredibly popular with kids and adults alike! If you’re searching for a fantastic pressure cooker breakfast solution, look no further. We’ll guide you through making these delicious muffins using a simple boxed muffin mix and a versatile silicone egg mold.

The magic of baking muffins in a pressure cooker is truly remarkable. Imagine waking up to the aroma of freshly baked muffins, ready in a fraction of the time compared to traditional oven baking. These Instant Pot blueberry muffins are not only incredibly easy to make but also serve as the perfect grab-and-go option for those busy mornings when every minute counts. They’ve quickly become one of our most beloved Instant Pot recipes.
Growing up, blueberry muffin tops were a breakfast staple in my home. However, my mom always relied on a conventional oven and traditional muffin cups. The idea of “steaming” baked goods under high pressure was, quite frankly, unthinkable. Yet, here we are, enjoying a new reality where the pressure cooker transforms simple muffin batter into fluffy, delicious treats.
You don’t necessarily need a specific brand to master this recipe. While we often refer to the “Instant Pot,” this method works beautifully with any electric pressure cooker. Whether you own a Ninja Foodi (making this a stellar Ninja Foodi recipe), a Mealthy Pot, or a Crockpot Express, as long as it has a high-pressure function, you’re all set. Plus, we’ll introduce you to the ingenious egg mold that doubles as an adorable muffin pan.

Why Bake Muffins in an Instant Pot?
If you’re new to baking in a pressure cooker, you’re in for a delightful surprise. Beyond the novelty, there are practical benefits that make this method incredibly appealing. First, it eliminates the need to heat your entire house, a huge advantage during warmer months. Second, the cooking process is remarkably fast. While the texture of pressure-cooked muffins might be slightly different – often a bit denser and incredibly moist compared to their oven-baked counterparts – it’s a pleasant variation that many come to prefer. It truly offers a unique and satisfying result.
- Unparalleled Convenience: Forget preheating your oven or enduring a hot kitchen. These muffins are ready with minimal fuss.
- Fun for All Ages: This is a fantastic morning activity to share with your kids, offering a quick and rewarding baking experience.
- Boxed Mix Friendly: We’ve found great success with quality boxed muffin mixes, making the process even simpler.
While there are numerous brands of boxed muffin mixes available, we have a particular favorite that consistently delivers excellent results. Of course, if you’re a staunch advocate for baking from scratch, feel free to use your preferred homemade batter; the timing and method should remain largely consistent. The key is to embrace the simplicity and efficiency that pressure cooking offers.

Essential Ingredients for Your Muffins
Gathering your ingredients is straightforward, especially when using a boxed mix. Here’s what you’ll need for this incredibly easy recipe:
- Quality Blueberry Muffin Mix: We highly recommend a blueberry muffin mix that includes a can of real blueberries, not the dried, rehydrated kind. The canned blueberries provide a burst of fresh flavor and texture that dried ones simply can’t match. Look for varieties that also offer gluten-free options if needed.
- Standard Batter Ingredients: Follow the instructions on the back of your chosen muffin mix box to prepare the batter. Typically, this will involve adding an egg and some water. For those who prefer alternatives, our Cake Mix Blueberry Muffins instructions can also provide a great base for your batter.
Beyond the mix, you will definitely need a silicone egg mold. This versatile tool is essential for creating perfectly shaped, bite-sized muffins. You’ll be amazed at how many other Instant Pot recipes, like savory egg bites, you can make with it! To ensure easy removal, always coat the egg mold with non-stick cooking spray. You’ll also need about 1 1/2 cups of water for the Instant Pot to create the steam for cooking, and a large bowl for mixing your batter.

Top Tips for Perfect Instant Pot Blueberry Muffins
Achieving delicious and perfectly textured muffins in your Instant Pot is easy with a few key techniques:
- Handle Blueberries with Care: If you’re using a mix with a separate can of blueberries, mix all the other wet and dry ingredients first. Gently fold in the blueberries at the very end. This prevents them from breaking apart and ensures you get distinct, juicy blueberry pockets in every muffin.
- Avoid Overfilling the Mold: It’s crucial not to overfill the holes in your silicone egg bites mold. Each cavity should be filled approximately 3/4 full, which usually equates to about 2 heaping tablespoons of batter. Using a measuring spoon helps prevent a sticky mess and ensures even cooking.
- Prompt Removal is Key: As soon as the cooking cycle is complete and the pressure has been released, remove your blueberry muffins from the egg mold without delay. Leaving them in the warm mold will cause them to continue cooking, potentially leading to a slightly wet or gummy bottom. We recommend popping each muffin out onto a paper towel or wire rack to cool properly.
Using Your Silicone Egg Bites Mold Effectively
The silicone egg bites mold is incredibly simple to use and clean, making it perfect for these muffins. Begin by ensuring each hole is thoroughly sprayed with non-stick cooking spray; this step is critical for effortless muffin removal. A tablespoon measuring spoon is your best friend here, helping you precisely fill each mold cavity with about 2 heaping tablespoons of batter, or approximately 2/3 of the way full. One standard box of muffin mix typically yields exactly two full batches using a single egg mold.
Over the years, we’ve discovered a fantastic trick: you can stack two silicone egg molds on top of each other on your Instant Pot trivet. This allows you to double your output in a single cooking cycle, without altering the cooking time. To prevent condensation from making the muffin tops wet, it’s a good practice to cover the top mold with aluminum foil before cooking.
Should You Cover Egg Bites Mold with Foil? Absolutely!
Covering the egg mold with foil is a crucial step for several reasons. Firstly, it aids in the steaming process, ensuring uniform heat distribution as the muffins cook from the hot water below. More importantly, the foil acts as a barrier, preventing condensation from dripping onto the muffin tops. If you forget this step, the tops of your muffins will likely be unpleasantly wet, sticky, and the overall texture will suffer. The foil ensures a much better, dryer finish on top.

Expanding Beyond Muffins: The Versatility of the Egg Mold
The silicone egg mold is incredibly versatile, extending far beyond just blueberry muffins. Just like with our popular Pressure Cooker Egg Bites, the key to success is to avoid overfilling the cavities. While muffins will rise, an overfilled mold, especially when covered with foil, will lead to the batter oozing out and spreading over the mold, resulting in misshapen baked goods.
When your muffins are done, always allow the Instant Pot to perform a natural pressure release for 5 minutes before manually releasing any remaining steam. This gradual cooling process helps the muffins to become fluffier and more tender. A “natural release” means you should not touch the steam valve until your Instant Pot screen clearly indicates a 5-minute countdown (e.g., “:05”).
Once the pressure is fully released and you remove the egg mold from the pot, immediately take off the foil. This step is crucial to prevent condensation from dripping onto your muffins, or any other treats like Instant Pot pancake bites, making their tops wet and sticky. Quick foil removal ensures a perfectly textured top.

Upon removing the foil, your Instant Pot muffins will appear wonderfully fluffy and light. When you gently pop them out of the mold and flip them over, you’ll find them perfectly round and attractive, much like their oven-baked counterparts, though they won’t have a browned top due to the steaming process. Their texture is remarkably similar to traditional muffins, boasting a delightful moistness that is uniquely pressure-cooked.
While we haven’t extensively tested this method with other quick bread mixes or with our pancake mix muffins, we anticipate similar success using the cooking times and techniques outlined here. The principles of pressure cooking for quick breads remain consistent.
For another fun and sweet treat, try our pressure cooker churro bites, which you could also call mini donuts! If your kids adore mini muffins, particularly those convenient packaged varieties often referred to as “Little Bites,” they are guaranteed to love these homemade pressure-cooked versions. Not only are they incredibly easy to make, but they are also a far superior and fresher alternative to store-bought options.

Serving & Storage Suggestions
These Instant Pot blueberry muffins are fantastic served warm, perhaps with a dollop of butter or a smear of your favorite jam. They also make an excellent addition to any brunch menu, whether for holidays or when entertaining guests. They’re quick enough for a spontaneous gathering and impressive enough for a planned meal. While we’ve primarily focused on boxed mixes for their speed and convenience, you could certainly experiment with homemade batter, such as our blueberry bran muffins recipe, though we haven’t personally tested it yet with this method.
For storage, allow the muffins to cool completely on a wire rack. Once cooled, store them in an airtight container at room temperature for up to 2-3 days. For longer storage, you can freeze them for up to 3 months. Simply thaw them at room temperature or gently reheat them in the microwave for a few seconds when ready to enjoy.
We’re always on the lookout for quick and delicious recipes, and using a boxed mix for these pressure cooker muffins aligns perfectly with that philosophy. If you happen to try another mix that you’d highly recommend, please let us know – we’d love to give it a whirl!
