  • 4 small potatoes, peeled and diced
  • 1/3 cup onion, diced
  • 1 small bell pepper, diced
  • 3 tbsp butter
  • 2 cup milk, 2% or whole
  • 3 tbsp flour
  • 1 tsp garlic salt
  • 2 cup cheese, cheddar, shredded

Instructions

  1. Set pot to sauté, add ground beef, onion, bell peppers, and garlic salt. Brown until no longer pink. Turn pot off. Drain grease out of pot. Add potatoes into the beef mixture and toss.
  2. On the stovetop in a separate pan (or remove meat, drain, and make roux on sauté in Instant Pot): Melt the butter, add flour and whisk until incorporated. Add milk and stir until it bubbles and thickens. Add cheese and stir until melted.
