Mastering Starbucks-Style Egg Bites in Your Pressure Cooker
Replicating the famous Starbucks sous vide egg bites might sound complicated, but it’s surprisingly simple with a pressure cooker like the Ninja Foodi or Instant Pot. The secret to their incredibly tender, custardy texture lies in a cooking method that mimics true sous vide, using high-pressure steam to gently cook the eggs. We first experimented with making vegetarian pressure cooker egg bites, and the results were so consistently excellent that we expanded to create a perfect copycat Starbucks version with various fillings. Using a silicone egg mold is key to achieving their distinctive shape and ensuring easy removal.
The beauty of this recipe is its adaptability. While a pressure cooker yields the most authentic “sous vide” texture, you can absolutely make delicious egg bites in your oven if you don’t have one. This recipe is also a fantastic way to utilize leftover ham, transforming it into a protein-packed, keto-friendly breakfast that your entire family will enjoy. Imagine waking up to a gourmet-style breakfast that’s quick to prepare and loaded with flavor, offering a healthy start to any day.

The Magic of Pressure Cooking for Tender Egg Bites
For those who adore rich, cheesy breakfasts, these Instant Pot sous vide egg bites are a dream come true. You can load them up with as much cheese as your heart desires! This recipe quickly becomes a favorite Ninja Foodi breakfast option for busy mornings, offering convenience without compromising on taste. A good quality silicone egg mold is an indispensable tool, allowing you to create not just these egg bites but a variety of other breakfast items. Typically, these molds hold around three “bites” worth of mixture, making it easy to serve 2-3 people with each batch.
While you could theoretically make similar slow cooker eggs, that method takes many hours, which isn’t practical for quick meal prep. The pressure cooker slashes the cooking time dramatically. For a delightful vegetarian option, simply omit the meat and focus on cheese, herbs, or vegetables. They’ll still be bursting with flavor! These egg bites are also fantastic for “breakfast for dinner” nights, offering a unique and satisfying meal. The versatility of baked or steamed eggs makes them an excellent addition to any meal plan.
You might wonder, “Can you truly sous vide in a pressure cooker?” The answer is “kind of.” While it’s not traditional water bath sous vide, the method involves steaming under high pressure, which yields a remarkably similar, super-tender result. The consistent, even heat of a pressure cooker prevents overcooking and creates that custardy texture we all love. This technique works perfectly with various pressure cooker brands, including Mealthy and Crockpot Express. My 6-quart models of different brands all deliver consistent results. If you’re using a Ninja Foodi, remember to use the pressure cooking lid, not the air fryer lid, for this recipe.
- Hands-Off Cooking: Using your Ninja Foodi or Instant Pot is incredibly convenient. Simply mix your ingredients, pour them into the mold, set the timer, and walk away.
- Perfect Release: These egg bites are essentially crustless quiche bites. The silicone egg mold ensures they pop out effortlessly, without any sticking.
- No Extra Heat: During warmer months, you won’t need to turn on your oven or stovetop, keeping your kitchen cool.
- Efficiency: As an Instant Pot-obsessed parent, I can attest that pressure cooking saves valuable time for busy households.
- Speed: The cooking time is incredibly short, making them ideal for quick meals.
Best of all, you don’t need an expensive, dedicated sous vide machine for this recipe. You’ll achieve a nearly identical super-tender texture using your pressure cooker. If you happen to have some sous vide frozen chicken breast on hand, feel free to dice it up and add it to the egg mixture for an extra protein boost!

Essential Ingredients for Perfect Egg Bites
Crafting these delectable egg bites requires a few key ingredients and tools that ensure a smooth process and a delicious outcome. The combination of dairy and eggs creates that signature creamy texture, while your chosen fillings add bursts of flavor.
- Instant Pot Egg Mold: A silicone mold specifically designed for egg bites is crucial for their shape and easy release.
- Trivet: A trivet with handles makes it simple to lower and lift your egg mold from the pressure cooker.
- Eggs: The foundation of our egg bites. Use fresh, large eggs for the best results.
- Plain Greek Yogurt: This adds tanginess and helps achieve the desired creamy texture without adding excessive fat.
- Shredded Cheese: Cheddar is a classic choice, but feel free to experiment with Gruyère, Monterey Jack, or a blend for different flavor profiles.
- Cottage Cheese: Crucial for the tender, custardy texture. Opt for full-fat cottage cheese for the richest results.
- Salt and Pepper: To taste, enhancing the natural flavors of the eggs and fillings.
- Fillings:
- Diced Ham: A fantastic way to use up leftover ham, adding a savory, hearty element.
- Crumbled Bacon: If you love bacon, consider cooking bacon in your air fryer for perfectly crispy pieces to add.
- Vegetarian Options: For a meat-free version, simply omit the ham or bacon. Fresh spinach, bell peppers, mushrooms, or chives are excellent additions.

Step-by-Step Guide to Pressure Cooker Egg Bites
Making these delicious egg bites in your Ninja Foodi or Instant Pot is a straightforward process. Follow these steps for consistently perfect results:
- Prepare the Pressure Cooker: Add 1.5 cups of water to the inner pot of your pressure cooker and carefully lower a trivet inside.
- Blend the Egg Mixture: In a bowl, lightly scramble your eggs. Then, transfer them to a blender along with the shredded cheese, Greek yogurt, and cottage cheese. Blend until the mixture is completely smooth and creamy. This is key to the custardy texture.
- Incorporate Fillings: Pour the smooth egg mixture into a separate bowl. Add your diced ham (or other desired fillings) and stir gently to combine them evenly.
- Prepare the Mold: If using fresh herbs like basil, add a small amount to the bottom of each egg hole in your silicone mold. This adds a beautiful touch and extra flavor.
- Fill the Molds: Evenly pour the egg mixture into each section of the egg mold. Ensure you don’t overfill them, leaving a little room for expansion.
- Cover and Create a Sling: Cover the entire mold tightly with aluminum foil. Then, create a “sling” out of another piece of aluminum foil. This sling will help you easily lower the mold onto the trivet and lift it out after cooking.
- Pressure Cook: Carefully lower the foil-covered mold onto the trivet in your pressure cooker. Close the lid and set the steam release valve to the sealing position. Press the “Steam” button (or Manual/Pressure Cook), and set the timer for 9 minutes.
- Natural Release: Once the cooking cycle is complete, allow the steam to naturally release for 10 minutes. This slow release helps prevent the egg bites from deflating and ensures a tender texture. After 10 minutes, carefully release any remaining pressure manually.
- Serve and Enjoy: Carefully remove the egg bites from their molds. They should pop out easily, revealing their perfectly cooked, smooth texture. Serve immediately and savor your homemade Starbucks-style treat!

How to Make Egg Bites in Your Oven
If you don’t have a pressure cooker or simply prefer baking, you can still create wonderful egg bites in your oven. While the texture will be slightly different (more like a mini frittata than a custardy sous vide egg), they are equally delicious and easy to prepare. This method is perfect for those who enjoy a more traditional baked egg texture.
- Prepare the Egg Mixture: Follow steps 2 and 3 from the pressure cooker instructions above to create your smooth, flavorful egg mixture with your chosen fillings.
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Prepare Muffin Tin: Lightly spray each hole of a standard muffin tin with non-stick spray. Alternatively, you can use oven-safe silicone egg cups, which often lead to easier release.
- Fill Molds: Pour the egg mixture into each muffin tin hole, filling them no more than three-quarters of the way full. A large measuring cup with a spout can make this pouring process much easier and less messy.
- Optional Topping: For an extra layer of flavor and a golden crust, sprinkle a little grated Parmesan cheese on top of each egg bite before baking.
- Bake: Place the muffin tin into the preheated oven and bake for 18-22 minutes. The baking time can vary depending on your oven and desired consistency. Some people prefer their egg bites very firm, while others like them slightly looser. Bake until the edges are lightly browned and the centers are set.
- Cool and Serve: Let the egg bites cool in the muffin tin for a few minutes before carefully removing them. Serve warm and enjoy!
