If you’re new to the world of pressure cooking, don’t worry! We’ve got plenty of easy one-pot meal recipes and essential tips to help you get started. Mastering your pressure cooker can revolutionize your cooking, making meal prep faster and more efficient. Here are a few fundamental tips to ensure your success:

  • Make sure to Bookmark our Instant Pot recipes page. We consistently add exciting new recipes each week, ensuring you always have fresh ideas for your next meal.
  • Then, PRINT this essential Instant Pot cooking times cheat sheet. This invaluable guide will help you quickly understand the precise cooking durations for various ingredients like meats, vegetables, and beans in your pressure cooker, taking the guesswork out of meal preparation.
  • I HIGHLY recommend investing in a non-stick inner pot for your Instant Pot. This accessory makes cooking and cleanup significantly easier, especially when sautéing.
    • While it’s good practice to learn how to deglaze a pressure cooker after sautéing, a non-stick liner dramatically reduces the chances of food sticking and burning, minimizing the need for extensive deglazing.

For all our recipe creations, we typically use a 6-quart Instant Pot model. Its versatile size makes it perfect for a wide range of dishes, from everyday meals to larger family gatherings. Knowing the capacity of your pot is helpful when scaling recipes.

Seamless Cooking with Your Ninja Foodi or Other Pressure Cookers

For those using a Ninja Foodi, this recipe primarily utilizes the pressure cook function. You won’t need the air crisp lid for this dish. Simply ensure the pressure cooking lid is securely sealed once all ingredients are added as directed. This adaptability across different pressure cooker models highlights the universality of the method, allowing more home cooks to achieve fantastic results.

This remarkable recipe actually came about quite by accident. It wasn’t a planned culinary endeavor, but rather a spontaneous creation born out of necessity. It was one of those evenings where I looked at the expiring meat and mushrooms and thought, “What can I possibly create with these before they go bad?” I’m sure many of you can relate to that delightful challenge! The delicious steak in the Instant Pot that resulted was simply too good not to share.

Our household often has a variety of meat cuts on hand, thanks to purchasing a cow from a local organic farmer. This has given us the wonderful opportunity to experiment beyond standard steaks, exploring delicious recipes for chuck roast, stew meat, and various other roasts. This exposure to different cuts has broadened our culinary horizons and inspired many new dishes.

A bowl of seasoned raw steak sits beside a container of broth and a sliced onion, with an Instant Pot visible in the background, all set for preparing delicious beef tips.

While ground beef is a frequent feature in our kitchen due to its ease of use, other beef cuts are usually reserved for specific cravings or when they need to be cooked promptly. For this recipe, we focused on using up some sirloin steak that was on the verge of expiring. Dicing the meat into small, bite-sized pieces before cooking is a technique I almost always employ when making a new Instant Pot beef recipe. This ensures maximum tenderness and an easier eating experience.

You can see the beautifully cubed pieces of beef in the image above. Occasionally, I’ll slice them even smaller to guarantee an even more tender outcome, but the current size works wonderfully. If you’re looking for an economical and convenient option, beef stew meat is an excellent choice. It’s often pre-cubed at your local grocery store, saving you valuable prep time.

Essential Ingredients for Perfect Instant Pot Beef Tips and Gravy

Crafting the perfect Instant Pot Beef Tips and Gravy relies on a thoughtful selection of ingredients. Each component plays a crucial role in building the deep, satisfying flavors and achieving that ideal tender texture.

  1. Sirloin Steak or Beef Stew Meat: This is the star of the show. Sirloin offers a leaner, more robust flavor, while stew meat is typically more economical and already conveniently cubed, making it super easy to prepare. Both will yield incredibly tender results in the pressure cooker.
  2. Gravy Packet: For ultimate convenience and a consistently delicious outcome, we highly recommend using a pre-made gravy mix. It adds a rich, savory depth and acts as a fantastic thickening agent. Alternatively, if you prefer a from-scratch approach, you can follow this homemade gravy recipe.
  3. Baby Bella Mushrooms: These mushrooms are our preferred choice due to their firmer texture compared to delicate button mushrooms. Their ability to hold up well during pressure cooking ensures they contribute a delightful earthiness without becoming mushy. Slice them in half for best results.
  4. Onion: A small onion, whether diced or sliced, forms a flavorful base for the dish. Yellow onions are typically my choice for their balanced sweetness, but white onions also work perfectly.
  5. Olive Oil: Used for searing the beef, olive oil helps create a beautiful brown crust, locking in juices and adding another layer of flavor. Avocado oil is an excellent alternative if preferred.
  6. Beef Broth: Opting for beef broth instead of water is crucial. It infuses the dish with significantly more flavor, creating a richer, more complex sauce that forms the backbone of the gravy.
  7. Salt and Pepper: These fundamental seasonings are vital for enhancing the natural taste of the beef and balancing the overall flavor profile. A generous pinch on the meat before searing makes a world of difference.
  8. Worcestershire Sauce: This ingredient is a secret weapon for depth! Just a tablespoon of Worcestershire sauce elevates the entire dish, adding a bold, umami-rich flavor that truly makes the sauce sing.
  9. Garlic Salt and/or Garlic Powder: For those who love a pronounced garlic flavor, these additions are a must. They perfectly complement the savory beef and mushrooms.

Beyond the ingredients, ensure you have a reliable pressure cooker. While any model will work, a nonstick inner pot is a game-changer for searing and preventing sticking. A sturdy wooden spatula is also helpful for stirring and deglazing.

Once your beef tips and gravy are ready, they pair beautifully with a variety of sides. Our favorites include a bed of wide egg noodles or fluffy Instant Pot white rice. These are typically cooked separately, often in another electric pressure cooker, to ensure perfect texture for both components of the meal.

Instant Pot Beef Tips Recipe

This Instant Pot beef tips and mushroom gravy recipe delivers incredibly tender sirloin or stew meat, packed with flavor that everyone will love.
Prep: 10
Cook: 15
Servings: 6

Equipment

  • 1 pressure cooker

Ingredients

  • 2 pounds beef tips, stew meat – or sirloin steak, cut into small cubes
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp garlic salt
  • 1 small onion, sliced
  • 1 pkg mushrooms, baby bellas, 1 carton, sliced in half
  • 2/3 cup beef broth
  • 1 tbsp worcestershire sauce
  • 1 pkg gravy mix, dry mix, 1.6 oz.
  • 2 tbsp olive oil

Instructions

  • Cut steak into small, bite-sized pieces. Remember, the smaller the pieces, the more tender they will become during cooking. Season all the beef generously with salt, pepper, and garlic salt, ensuring each piece is well coated.
  • Add olive oil to your Instant Pot and select the “Sauté” function. Once hot, add the seasoned beef to the pot and sear the outsides until lightly browned. If you are not using a non-stick pot, remove the seared beef and set it aside in a bowl. Then, deglaze your pot by pouring in 1/3 cup of beef broth and scraping up any browned bits from the bottom. (If using a non-stick pot, this deglazing step with broth can be done without removing the meat, as sticking is less likely.)
  • If you removed the beef, return it to the pot. Top the beef with sliced onions, followed by the halved mushrooms and Worcestershire sauce. If you didn’t already, add 1/3 cup of beef broth to the pot now.
  • Secure the lid and ensure the steam release valve is sealed. Set your Instant Pot to “High Pressure” for 15 minutes. Once the cooking cycle is complete, allow a natural pressure release for 5 minutes, then carefully quick-release any remaining steam.
  • Once all pressure is released, lift the lid. Select the “Sauté” function again. In a separate bowl, whisk together the remaining 1/3 cup of beef broth with the dry gravy mix packet until completely smooth, ensuring no lumps remain.
  • When the contents of the Instant Pot begin to bubble, pour in the prepared gravy mixture. Stir intermittently for 1-2 minutes, allowing the gravy to thicken to your desired consistency. Turn off the Instant Pot.
  • Serve your delicious beef tips and gravy hot over a bed of creamy mashed potatoes or buttered egg noodles for a comforting and hearty meal.

Why Opt for Packaged Gravy Mix? Simplicity and exceptional flavor are key! Using a dry gravy mix packet streamlines the cooking process dramatically. It’s incredibly convenient – just whisk it into a bit of broth, and you have a perfectly seasoned, ready-to-use thickening agent. Beyond its ease, it imparts a tremendous amount of rich, savory flavor to the dish, but more importantly, it ensures your sauce achieves that luscious, thick consistency that truly elevates beef tips. I once tried to make this dish without the gravy packet, and while the flavor was still decent, the gravy lacked the desired thickness, even after attempting to salvage it with sour cream. Trust me, the packet makes all the difference for that perfect gravy texture.

Unlocking Tenderness: The Science Behind Pressure Cooking Meat

One of the most remarkable benefits of cooking meats in a pressure cooker is its ability to tenderize them, regardless of the cut. This is due to the high-pressure environment, which raises the boiling point of water and cooks food at higher temperatures than conventional stovetop or oven methods. This intense heat and pressure break down tough connective tissues in meat far more rapidly than slow cooking or braising. While some cuts are naturally tender, the pressure cooker can work wonders on tougher, less expensive cuts, transforming them into succulent, fall-apart tender morsels in a fraction of the time. It’s like a fast-forward button for delicious, tender meat.

Decoding Beef Cuts: What Are Sirloin Tips and Why They’re Perfect for This Dish

Sirloin tips, often cut from the front end of the beef’s rear leg, are a versatile and flavorful cut. While this area is commonly used for chuck roasts or ground beef, it can also be expertly sliced into steaks or the “tips” we use in this recipe. Alternatively, beef stew meat, which often comes from cuts like chuck, is another excellent option. Stew meat is typically a more economical choice and is usually pre-cubed, saving you prep time. I personally prefer sirloin if available, for its slightly leaner texture and rich flavor, but both options yield fantastic results in the pressure cooker when combined with our savory gravy.

Instant Pot Beef Tips

What truly elevates this recipe, making it incredibly satisfying, is the gravy. It’s not merely an accompaniment; it’s an integral part of the experience. The rich, savory sauce is reminiscent of a classic Instant Pot Beef Stroganoff, but with a deeper, more pronounced flavor profile and a more substantial quantity. Unlike stroganoff, which often relies on cream of mushroom soup, this gravy boasts a more homemade taste, thanks to the careful layering of ingredients and the convenient gravy mix.

Remember, the gravy’s consistency will naturally thicken further as it cools and rests, so don’t be alarmed if it seems a little thin immediately after cooking. This dish is incredibly versatile when it comes to serving. It’s absolutely delicious over fluffy Instant Pot brown rice, classic white rice, tender egg noodles, or creamy pressure cooker mashed potatoes. Each option provides a wonderful base to soak up every drop of that incredible gravy.

Mushroom Matters: White Button vs. Baby Bella for Optimal Texture

While both baby bella and white button mushrooms are varieties of Agaricus bisporus, they offer distinct differences in appearance, flavor, and especially, texture. White button mushrooms are harvested at a very immature stage, resulting in a milder flavor and a softer texture. Baby bellas, on the other hand, are harvested at an intermediate stage of maturity, giving them a deeper, earthier flavor and a much firmer texture. Fully mature baby bellas are known as Portabella mushrooms. For this recipe, the firmness of baby bella mushrooms is paramount. Their ability to maintain their structure during the high-pressure cooking process means they won’t disintegrate, ensuring a satisfying bite and visual appeal in the final dish. Their robust flavor also stands up well to the rich beef and gravy.
