Ever since my Instant Pot became a staple in my kitchen over a year ago, I’ve been on a mission to create easy and delicious recipes that our family (and hopefully yours!) will adore. This pressure cooker chili, made with dry beans, has quickly risen through the ranks to become one of our most beloved Instant Pot recipes. The depth of flavor and texture it achieves from dry beans is simply unmatched.

While our beloved 5-ingredient Instant Pot chili (which relies on canned beans for ultimate convenience) remains a go-to for super busy weeknights, there’s an undeniable satisfaction in a homemade chili crafted from dry beans. It offers a robustness and nuanced flavor profile that canned beans, while convenient, can’t quite replicate. This recipe bridges that gap, delivering that authentic, homemade taste without the lengthy preparation traditionally associated with dry beans, all thanks to the marvel of pressure cooking technology.

Cooking Dry Bean Chili in Any Pressure Cooker: Instant Pot, Ninja Foodi, and More

Rest assured, the fantastic results of this chili recipe aren’t limited to a single brand. Whether you’re using an Instant Pot, a Crockpot Express, a Ninja Foodi, or any other multi-cooker with a pressure function, these instructions will apply. The core principle remains the same: harness the power of pressure to cook dry beans efficiently. For those with a Ninja Foodi, simply remember to utilize the dedicated pressure cooking lid (the one that isn’t permanently attached) to enable the high-pressure function. The brand simply provides the vessel; the pressure function does the magic.

If you’re embarking on your pressure cooking journey for the first time, you’re in for a treat! We have a treasure trove of easy one-pot meal recipes designed to make your kitchen adventures both simple and successful. To help you get started with confidence, here are a few fundamental tips:

  • I enthusiastically recommend considering a non-stick inner pot for your pressure cooker. This small investment can drastically improve your cooking experience by preventing food from sticking and making cleanup significantly easier.
    • While understanding how to deglaze a pressure cooker after sautéing is a useful skill, a quality non-stick liner minimizes potential sticking issues right from the start.

The Transformative Power of Pressure Cooking Dry Beans

When I first ventured into cooking dry beans in a pressure cooker, I was genuinely astonished by its simplicity. The most significant revelation was discovering that virtually any variety of dry bean can be used. The secret lies in consistently applying the correct cooking times and liquid ratios, which are meticulously detailed in the recipe card below. With this approach, your beans will achieve perfect tenderness every single time, eliminating the age-old requirement of overnight soaking. I wholeheartedly encourage you to experience this culinary shortcut for yourself!

For this chili recipe, the process begins by cooking your chosen dry beans under high pressure. If you’re using a specific type of bean not explicitly mentioned, an Instant Pot cooking times for beans chart can provide precise guidance for the initial tenderizing step. Once your beans are beautifully cooked and tender, a world of culinary possibilities unfolds beyond just chili.

After a quick drain, these perfectly cooked beans become an exceptional canvas for absorbing all sorts of magnificent flavors. They form the ideal base for rich and satisfying dishes like homemade baked beans, or even a crowd-pleasing Instant Pot chili mac. This chili mac, which can be prepared in just 15 minutes after the initial bean tenderizing, consistently earns enthusiastic approval from both children and adults alike, proving just how versatile and delicious pressure-cooked dry beans can be.

Unleash Your Creativity: Customize Your Chili with Add-Ins and Flavor Variations

One of the most delightful aspects of any homemade chili, especially this easy recipe, is the immense flexibility it offers for customization through various add-ins and flavor adjustments. As you prepare your homemade chili with dry beans, keep these exciting possibilities in mind to tailor it precisely to your family’s preferences:

  • Amp Up the Heat: For those who crave a fiery kick, freely increase the amount of chili powder beyond the suggested measurement. You can further enhance the spice by stirring in a tablespoon or two of your favorite hot sauce, such as Tobasco or Sriracha, allowing you to control the exact level of heat.
  • Boost with Vegetables: To add extra texture, nutrition, and fresh flavors, don’t hesitate to load your chili with a generous assortment of vegetables. Diced yellow or white onions are foundational, and green onions offer a milder, fresher note. Bell peppers of all colors – green, red, yellow, or orange – are also fantastic additions, providing both sweetness and vibrant hues. For best results, sauté these vegetables with the ground beef to deepen their flavors.
  • Explore Meat Alternatives: While lean ground beef (80/20 fat content is recommended for the best flavor and texture) is a traditional and highly favored component in our household, this recipe is incredibly adaptable. You can easily substitute it with ground turkey or chicken for a lighter chili. For a completely different culinary experience, consider crafting a delightful Instant Pot white bean chicken chili. For vegetarian diners, omitting the meat altogether still yields a wonderfully satisfying bean-centric chili.
  • Diverse Bean Selections: This recipe shines with a 13-bean mix, readily available in most grocery stores (look for brands like Bob’s Red Mill in the dry bean aisle). This blend offers an intriguing spectrum of textures and flavors that consistently receives rave reviews. However, your choice of beans is entirely flexible. If you have a strong preference for a classic pinto bean chili, simply use pinto beans. Essential Tips for Perfectly Cooked Dry Beans in Your Chili

Should dry beans be rinsed before adding to chili?

Yes, absolutely, rinsing dry beans is a non-negotiable step. It’s imperative to rinse them thoroughly under cold running water before cooking to remove any lingering dust, small debris, or even tiny stones that might have been missed during the packaging process. This ensures your chili is not only delicious but also safe and clean. For canned beans, while not strictly for safety, rinsing helps to wash away excess sodium and prevents the starchy canning liquid from potentially altering the color or consistency of your final dish.

How to Cook Dried Beans in a Ninja Foodi or Other Multi-Cookers?

Cooking dried beans in a Ninja Foodi or any multi-cooker is remarkably straightforward and follows the same pressure cooking principles. For the Ninja Foodi, simply attach the pressure cooking lid (the one that is not permanently hinged) and select the “pressure cook” setting. The beauty of pressure cooking is that pre-soaking of beans is not required. However, if you choose to soak your beans overnight, it will dramatically cut down the pressure cooking time by more than half. To cook, simply add the rinsed dry beans along with approximately three times their volume in water or broth, then refer to our cooking time guidelines for your specific bean type.

This recipe is designed to produce a wonderfully flavorful yet mildly spiced chili, making it an excellent base for a mild Ninja Foodi chili version. From here, it’s incredibly simple to “amp it up” to your desired heat level. With a few additional spices from your cupboard, you can easily create a dish bursting with even more complex flavors. The versatility of homemade chili truly shines when you can adjust it to your precise taste preferences.

For an even quicker and easier meal, you always have the option to stir in a pre-made chili seasoning packet when making your homemade chili using dry beans. While this recipe focuses on the rich flavor of dry beans, we also have another fantastic version using canned beans that’s ready in a mere 30 minutes, followed by a natural pressure release. Both methods yield superb results, offering delicious and convenient dinner options for any schedule or preference.

Key Ingredients for the Best Homemade Instant Pot Chili

Crafting an exceptional Instant Pot chili begins with understanding each key ingredient and its role in building layers of flavor. Here’s a detailed look at what goes into this mouthwatering recipe:

  • Dry Beans Mix: The foundation of this hearty chili. We specifically recommend a bagged 13-bean soup mix (commonly found in the dry goods aisle) to introduce a delightful array of textures and a deeply complex flavor profile. This blend ensures every spoonful is an adventure.
  • Ground Beef: For the ultimate flavor and texture, an 80/20 fat content ground beef is ideal. While ground hamburger is a non-negotiable in our home for chili, you have the flexibility to adjust. You could certainly omit it for a satisfying vegetarian chili or substitute it with ground turkey for a leaner alternative. Alternatively, consider exploring a Instant Pot chicken chili version for a different protein twist.
  • Onions & Green Onions: These aromatics are crucial for building a robust flavor base. Finely diced yellow or white onions melt into the chili, adding a subtle sweetness and depth. Fresh green onions, added towards the end, provide a crisp texture and a mild, peppery bite, enhancing the overall freshness.
  • Olive Oil: Used for sautéing the ground beef and onions, olive oil helps to develop the foundational flavors and prevent sticking during the initial cooking phase.
  • Diced Tomatoes: A can of diced tomatoes, especially the petite version (14.5 oz.), adds a burst of tangy sweetness and tender pieces of tomato without requiring any chopping on your part. Their smaller size integrates beautifully into the chili.
  • Tomato Sauce: This ingredient is vital for achieving that classic, thick, and rich chili consistency. It provides a smooth, deep tomato base that prevents the chili from becoming too thin or watery, ensuring a satisfying spoonful every time.
  • Diced Chiles: A 4 oz. can of diced chiles (we prefer the mild version) contributes an authentic, smoky chili flavor with just a hint of warmth. If you prefer more heat, spicier versions are readily available.
  • Seasoned Salt: A quality seasoned salt, such as Lawry’s, is a game-changer. It injects a complex blend of herbs and spices that elevates the entire dish, preventing the chili from tasting flat or bland.
  • Chili Powder: The cornerstone spice of any chili. Adjust the amount to control the intensity of the classic chili flavor and heat. For an extra fiery kick, consider adding a pinch of red pepper flakes or a dash of Tobasco alongside.
  • Garlic Powder & Garlic Salt: These two garlic-infused seasonings work in tandem to create a deeply aromatic and savory foundation. For an even more intense garlic punch, feel free to incorporate some fresh minced garlic during the sautéing stage.

Optional Toppings & Serving Suggestions: For us, a generous sprinkle of shredded cheese is an absolute must to crown this magnificent chili! We also frequently serve it over fluffy Instant Pot white rice for a complete meal. Beyond that, consider dollops of cool sour cream, fresh cilantro, chopped chives, crunchy tortilla chips, or a side of warm, buttery cornbread to complete your ultimate chili experience.

Choosing the Best Dried Beans for Your Chili (And Why It Matters)

When it comes to crafting a truly authentic and flavorful traditional chili recipe, kidney beans are often hailed as the quintessential choice. They excel in retaining their firm shape and robust texture even after extensive cooking, absorbing spices and flavors beautifully, and contributing a hearty substance to the dish. However, the concept of the “best” bean is ultimately subjective and delightfully personal. I strongly encourage you to venture beyond the conventional and experiment with various bean types to discover which ones truly capture your palate.

  • While I frequently incorporate canned light red kidney beans into my Instant Pot and 5-ingredient Crockpot chili recipes for their convenience, I possess an inherent curiosity for culinary exploration. This drive is precisely what led me to utilize a diverse 13-bean blend in this particular recipe, keen to observe how the variety would impact the final flavor and texture.
  • The outcome was undeniably positive; the medley of beans bestowed upon the chili a more intricate and engaging flavor profile, along with a satisfying range of textures. The collective “thumbs up” from everyone at the table solidified its place in my recipe rotation – I would certainly prepare it this way again.
  • Nevertheless, your chili journey is yours to command. Feel completely free to use your absolute favorite bean variety. As long as you meticulously follow the measurements and cooking times provided in the recipe card below, you can effortlessly swap out the 13-bean mix for more “regular” types like pinto, black, or red beans. I confess, I’m not typically one for convention and often prefer to think outside the culinary box, especially when it involves creating delicious meals.

A significant, often underappreciated, benefit of cooking with dry beans is their remarkable longevity and stability as a pantry staple. In preparedness scenarios or unexpected emergencies, dry beans are a reliable food source that boasts an exceptionally long shelf life, making them invaluable. I maintain a well-stocked plastic container brimming with every imaginable bean variety precisely for such unforeseen situations. Their cost-effectiveness, high nutritional value (rich in fiber and protein), and incredible versatility make them an indispensable ingredient to always have on hand. You just never know when they’ll become your culinary lifesaver! 😉
