Pressure Cooker Meatloaf and Potatoes recipe

Have you discovered the incredible convenience of Instant Pot stackable pans? They are an absolute game-changer, especially when preparing this pressure cooker meatloaf and potatoes combo meal. These clever inserts allow you to cook multiple components of your dinner together, yet separately, within the same pressure cooker. This is ideal for those who prefer their foods not to touch, or simply when you want to maximize efficiency and cook different Instant Pot recipes simultaneously. Say goodbye to juggling multiple pots and pans on the stovetop; with stackable pans, a complete, delicious meal is just one pressure cycle away.

The Magic of Instant Pot Stackable Pans for Complete Meals

The secret to this seamless two-in-one meal lies in the use of Instant Pot stackable pans. These specialized inserts are designed to fit perfectly inside your pressure cooker, creating separate compartments for different food items. This ingenious design ensures that each component cooks evenly and retains its individual flavors, preventing any cross-contamination of tastes or textures. For instance, the savory juices from your meatloaf won’t seep into your delicate potatoes, keeping each dish distinct and delicious.

Stackable pans are available in various materials, though non-stick versions are highly recommended for easy food release and cleanup. They typically come with a secure lid and a handle for safe insertion and removal from the hot Instant Pot. This setup not only allows for efficient cooking but also caters to dietary preferences or picky eaters who appreciate their foods served separately. Beyond meatloaf and potatoes, these versatile pans open up a world of possibilities for simultaneous cooking, transforming your Instant Pot into a multi-tasking culinary powerhouse.

Instant Pot Meatloaf and Potatoes: Simplified

While some modern appliances like the Ninja Foodi offer both pressure cooking and air frying capabilities in one unit, making certain combinations a bit more versatile, our focus here is primarily on mastering the Instant Pot. For those with a Ninja Foodi, you could adapt a Ninja Foodi meatloaf recipe by placing your seasoned meatloaf on the rack with a cup of water, and then adding air fryer baked potatoes in the crisping basket for a combined pressure cook and air crisp finish. However, for a classic, moist meatloaf and tender potatoes, the Instant Pot excels, especially when paired with stackable pans.

Every great meal begins with quality ingredients and proper preparation. For the meatloaf component, you can follow our highly-rated quick meatloaf recipe. It’s designed for efficiency without sacrificing flavor. We even offer an egg-free meatloaf variation below for those with dietary restrictions, ensuring everyone can enjoy this hearty meal. Getting your ingredients prepped beforehand, often known as “mise en place,” will make the cooking process incredibly smooth and enjoyable.

Essential Instant Pot Tips for Newbies and Pros

If you’re new to the wonderful world of pressure cooking, welcome! The Instant Pot can seem intimidating at first, but with a few basic tips, you’ll be creating delicious one-pot meals in no time. For experienced users, these are great refreshers:

  • Make sure to Bookmark our Instant Pot recipes page. We’re constantly adding new, easy, and innovative recipes each week, keeping your meal planning fresh and exciting!
  • Then PRINT this valuable resource: Instant Pot cooking times cheat sheet. This indispensable guide will help you quickly understand the ideal pressure cooking durations for various meats, vegetables, and beans, ensuring perfect results every time. It’s your go-to reference for confidence in the kitchen.
  • I HIGHLY recommend you invest in a non-stick inner pot. While the stainless steel pot that comes with your Instant Pot is functional, a good quality non-stick pot makes sautéing and cleanup significantly easier, minimizing the chances of food sticking and burning.
    • You should also know how to deglaze your pressure cooker after sautéing to prevent burn notices, but with a non-stick liner, you’ll encounter far fewer issues. Deglazing is simply adding a liquid to the hot pot after sautéing to scrape up any browned bits from the bottom, which adds flavor and prevents scorching.
  • Always ensure you add the minimum required liquid (usually 1 cup for 6-quart pots) for pressure to build correctly. Without enough liquid, your Instant Pot won’t come to pressure, and you might get a burn notice.
  • Double-check that your lid is properly sealed and the steam release valve is in the “Sealing” position before starting the cooking cycle. A loose lid or open valve will prevent pressure from building.

For reference, I primarily use a 6-quart Instant Pot for all my recipe creations and testing, a versatile size suitable for most families.

Crafting the Perfect Instant Pot Meatloaf and Potatoes Duo

The beauty of this recipe is its adaptability. You can use any brand of electric pressure cooker you own, whether it’s an Instant Pot, Crockpot Express, or another model. They all operate on similar principles, ensuring consistent results. In my household, a classic meatloaf dinner is always a hit, even with the kids! Below, you’ll see what our perfectly cooked meatloaf looks like before we dive into the potatoes. Preparing the potatoes correctly is key to achieving a harmonious texture alongside your meatloaf, so here are my top tips for making delicious Instant Pot potatoes for this specific meal:

  1. Choose the Right Potatoes: Opt for potatoes with lighter and thinner skins, such as baby new potatoes, Yukon Golds, or even smaller red potatoes, especially if you plan to leave the skins on.
    1. Thinner skins will soften more quickly under pressure, allowing your potatoes to cook thoroughly and reach the desired tenderness at the same time as your meatloaf, ensuring everything is ready together.
  2. Dice Your Potatoes Consistently and Small: This is a crucial step for even cooking.
    1. If the potato pieces are cut too large, they won’t cook all the way through within the time required for the meatloaf, resulting in an undesirable crunchy texture.
    2. Aim for pieces roughly the same size as your diced bell peppers or onions in the meatloaf mixture – about 1/2 to 3/4 inch cubes.
    3. For baby new potatoes, which are naturally smaller, I typically cut each one into about 15-20 uniform pieces to ensure they are small enough to cook quickly and evenly.
  3. Season Generously and Evenly: Don’t forget to give your potatoes a good flavor boost!
    1. Before placing them in the stackable pan, make sure each diced piece is thoroughly coated with a drizzle of olive oil and your chosen seasonings (like the dry ranch dressing mix in our recipe, or simply salt, pepper, and garlic powder). This ensures every bite is flavorful and delicious.

For the meatloaf itself, a key tip for ensuring it cooks through evenly and quickly is to form it into a thin patty rather than a thick loaf. Utilize the entire surface area of the stackable pan, pressing the meat mixture down so it forms an even layer from edge to edge. This uniform thickness allows the heat to penetrate consistently, guaranteeing a perfectly cooked meatloaf. Below, you’ll see an image of both stackable pans, loaded up and ready to be stacked and secured, showcasing the even distribution of ingredients.

Maximizing Your Pressure Cooker Meatloaf and Mashed Potatoes Experience

Whether you own a 6-quart or 8-quart Instant Pot, rest assured that these versatile pressure cooker stackable pans are designed to fit comfortably inside either size. The fundamental principle behind this simultaneous cooking method is that the water added to the main pot creates steam, which then cooks the ingredients within each sealed stackable pan. This ingenious design keeps your dishes entirely separate. This is particularly beneficial for a dish like meatloaf and potatoes, where you wouldn’t want the savory, sometimes fatty, runoff from the meatloaf to mix with and submerge your tender potatoes.

The utility of stackable pans extends far beyond just meatloaf and potatoes. They are incredibly versatile tools for preparing a variety of delicious combinations. As you’ll notice at the bottom of many stackable pan sets, there’s often a piece or mechanism that securely fastens the Instant Pot steamer insert pans together once the top pan is placed. This ensures they remain stable during the cooking process and prevents any water from entering either cooking compartment, preserving the integrity of your individual dishes. Consider these other fantastic pairings you can create:

  • Instant Pot Fish and Vegetables: Cook delicate fish fillets in one pan and a medley of colorful vegetables in another for a light and healthy meal.
  • Meatloaf and Vegetables: Besides potatoes, you can easily pair your meatloaf with steamed green beans, carrots, or broccoli.
  • Vegetables and Rice: Prepare perfectly fluffy rice in one pan while steaming your favorite vegetables in the other, creating a simple and wholesome side dish or vegetarian meal.
  • Diced Potatoes and Vegetables: If meat isn’t on the menu, combine different types of diced potatoes (sweet, regular) with various vegetables for a hearty plant-based side.
  • Oatmeal and Hard-Boiled Eggs: An excellent option for meal prepping breakfast! Cook creamy oatmeal in one pan and a batch of easy-to-peel hard-boiled eggs in the other.

How Long Does It Take to Cook Meatloaf in an Instant Pot?

If you prefer to cook just meatloaf on its own without the stackable pans, the process is still incredibly straightforward. You would typically form your meatloaf mixture into a loaf shape, then wrap it securely in aluminum foil. Place this foil-wrapped meatloaf on a trivet inside your Instant Pot with 1 cup of water at the bottom. For a meatloaf made with approximately 1.5 to 2 pounds of ground beef mixture, you will want to pressure cook it on HIGH for 25-30 minutes. Once the cooking cycle is complete, allow for a natural pressure release for 10 minutes, which helps keep the meatloaf tender and juicy. After the natural release, carefully lift out the meatloaf, unwrap it, and serve warm. This method ensures a perfectly cooked, moist meatloaf every time.

How Can You Make Your Instant Pot Meatloaf Crispy?

If you, like us, absolutely love a delicious, slightly crusty texture on the outside of your meatloaf, achieving that crispiness after pressure cooking is surprisingly simple! While pressure cooking ensures a moist interior, a quick finish under the broiler will give you that desirable browned exterior. Here’s how to do it:

  • Once your meatloaf has finished cooking in the Instant Pot and you’ve removed it from the stackable pan (or foil), carefully transfer it to a baking sheet.
  • Preheat your oven to the broil setting. Make sure the oven rack is positioned about 6-8 inches from the heating element to prevent burning.
  • Place the meatloaf on the baking sheet. If you also want to brown your potatoes for an extra crispy texture, you can spread them out on the same baking sheet.
  • For an added layer of flavor and a beautiful glaze, consider pouring approximately 1/2 to 3/4 cup of your favorite barbecue sauce, ketchup, or a special meatloaf glaze over the top of the meatloaf before broiling. This step is optional but highly recommended for a truly decadent finish.
  • Broil for 3-4 minutes, keeping a very close eye on it, or until it reaches your desired level of crispiness and golden-brown perfection. Broilers can work quickly, so watch carefully to avoid burning.
  • Carefully remove from the oven and enjoy your perfectly cooked, crispy-edged meatloaf!

How Can You Fix Potatoes in Instant Pot That Aren’t Tender?

Encountering undercooked potatoes after your Instant Pot cycle can be a little frustrating, but there’s a quick and easy solution to get them perfectly tender. This is a common issue if the potato pieces were cut too large. Here’s what you can do:

  • Remember for Next Time: The most effective preventive measure is to ensure you dice your potatoes smaller and more uniformly when preparing this Instant Pot meatloaf and potatoes recipe in the future. Aim for those 1/2 to 3/4 inch cubes.
  • Immediate Solution: For potatoes that are still a bit firm, simply transfer them to a microwave-safe plate (similar to the one often used for serving).
  • Microwave to Soften: Microwave the potatoes for 1 minute.
  • Check and Repeat: After 1 minute, carefully check their tenderness. If you desire them even softer, continue microwaving in 1-minute increments until they reach your preferred texture. Microwaves cook from the inside out, making them highly efficient for softening vegetables quickly.

Once your potatoes are soft enough, you can either serve them as is or, if you’d like them to have a slightly crisper exterior, you can add them to the baking sheet alongside your meatloaf when you broil it. This allows for dual crisping and ensures both components of your meal are exactly how you like them.

The possibilities for creating diverse and convenient meals with these invaluable accessories are truly endless, limited only by your imagination.

Pressure Cooker Meatloaf and Potatoes Ingredients

To embark on this delightful culinary adventure, gather these essential ingredients:

  1. Instant Pot Steamer Insert Pans: While you could theoretically layer the meat on top of the potatoes (without separate pans), we highly recommend using stackable pans for optimal results and distinct flavors.
  2. Ground Beef: One pound of ground beef forms the hearty base of our meatloaf. For added flavor and richness, consider using a blend of ground beef and half ground sausage.
  3. Bell Pepper: Half a bell pepper, finely diced, adds a touch of sweetness and vibrant color to the meatloaf mixture.
  4. Onion: Half an onion, also finely diced, is optional but highly recommended for enhancing the savory depth of the meatloaf.
  5. French Onion Soup Mix: One packet of dry French onion soup mix is your secret weapon for instant, savory seasoning in the meatloaf, requiring minimal effort for maximum flavor.
  6. Small Potatoes: Approximately 10-12 baby potatoes, diced small if using stackable pans, or halved if cooking directly in the pot. Yukon Golds or red potatoes work wonderfully.
  7. Ranch Dressing Mix: Two tablespoons of dry ranch dressing mix, for seasoning the potatoes, adding a tangy and herbaceous kick.
  8. Butter or Olive Oil: Two tablespoons of butter or olive oil, for coating and flavoring the potatoes, ensuring they cook up rich and delicious.
  9. Chicken Broth or Water: One cup of chicken broth or water, essential for creating the steam needed for pressure cooking. Broth will infuse more flavor into the potatoes if cooking without stackable pans.

  • 1 packet french onion soup mix, dry mix

Prevent your screen from going dark

Instructions

  • Pressure cooker meatloaf and potatoes with stackable pans: In a large mixing bowl, combine your ground beef, finely diced bell peppers, diced onions (if using), and the packet of dry French onion soup mix. Mix thoroughly until all ingredients are well incorporated. Form the mixture into a large, thin meatloaf patty, ensuring even thickness.
  • Wash your small potatoes and dice them into uniform, small pieces. Remember, smaller pieces ensure even cooking. Toss the diced potatoes together with olive oil or melted butter and the dry ranch dressing mix until each piece is lightly coated.
  • Carefully pour the seasoned potatoes into the bottom pan of your Instant Pot stackable set. Place the top pan onto the bottom pan and then transfer your meatloaf patty into the top pan. Press the meatloaf down so it fills the entire pan as thinly and evenly as possible to promote thorough cooking. Place the lid on the stackable pans and secure the outside piece to lock them together.
  • Pour 2 cups of water (or chicken broth for added flavor) into the main pot of your pressure cooker. Gently lower your secured stackable pans onto a trivet inside the pot. Close and lock the Instant Pot lid, ensuring the steam release valve is in the “Sealing” position. Set your Instant Pot to cook on HIGH pressure for 25 minutes. Once the cooking cycle is complete, allow for a natural pressure release for 10 minutes before manually releasing any remaining pressure. Carefully remove the stackable pans from the pot.
  • Remove the meatloaf and potatoes from their respective pans. At this point, they are ready to serve. However, if you desire a crispy top on your meatloaf (or both the meatloaf and potatoes), proceed to the next step.
  • To crisp, preheat your oven to broil. Place the cooked meatloaf (and potatoes, if desired) on a baking sheet. I personally love to pour about 1/2 to 3/4 cup of barbecue sauce over the meatloaf for a delicious glaze. Broil for approximately 3-4 minutes, or until the top is golden brown and slightly crispy. Keep a close watch to prevent burning. Serve immediately and enjoy!
  • Instant Pot meatloaf and potatoes (without stackable pans for a rustic dish): Prepare your meatloaf mixture as desired or as directed in the recipe. Shape it into a conventional loaf shape and place it on a piece of aluminum foil large enough to fully wrap around it. Create a foil “sling” by folding a second piece of aluminum foil into a long, sturdy strip. Place this sling underneath the foil-wrapped meatloaf; this will make it much easier to lift the meatloaf in and out of the Instant Pot.
  • Place your halved baby potatoes directly into the bottom of the Instant Pot. Pour 1 cup of chicken broth (or water) over the potatoes, and add the butter. Season the potatoes with salt and pepper to taste. Carefully lower the foil-wrapped meatloaf, using its sling, directly on top of the potatoes.
  • Close and lock the Instant Pot lid, ensuring the steam release valve is set to the “Sealing” position. Set to high pressure cooking time for 25 minutes. Once cooking is complete, allow for a 10-minute natural pressure release before carefully opening the valve to release any remaining pressure. Using the foil sling, carefully lift out the meatloaf. Stir the potatoes and serve alongside the meatloaf. Enjoy this comforting, easy meal!
