Already mixed in is better so you know it is evenly distributed. You only need the water incorporated until it is fluffy and light, then stop! With homemade don’t over beat the egg whites.

What makes angel food cake different from regular cake?
Several elements are different, the biggest one is the texture. Instead of a more dense bite, this is so light you usually can’t even cut it with a fork. It is almost easier to eat torn off into a piece and almost eaten like cotton candy believe it or not…unless you add pie filling like our Lemon Angel Food Cake.
The pan you bake it in differs too as you’ll need an ungreased fluted pan where the middle lifts out of the rounded outside piece. It is also not typically served frosted at all. That is not necessary as it is quite sweet almost like candy.

Ingredients
- 1 box angel food cake
- 1 1/4 cup water (or the proper amount of water necessary on back of box to make the batter, refer to your box)
- 1/2 cup cocoa powder
Method
- 1
Preheat oven to 350 degrees F. In a bowl use an electric mixer to incorporate necessary water into powdered mix until light, fluffy and incorporated.

Use a spatula to gently fold in the cocoa powder, sprinkling in a little at a time.

Pour batter into ungreased tube pan. Move oven rack to bottom and set in the middle.

Bake for 40-45 minutes until top is not sticky and springs back when gently touched in center.

Remove and sit pan upside down on a cooling rack or with bottle in the middle until cooled. Run a knife around the pan to remove the sides. Loosen bottom of the pan and middle to remove the whole thing.
