Making chocolate chips cookies with Bisquick is an easy treat that everyone will want you to make again. Use peanut butter chips to change things up and/or include nuts too. One of many easy dessert recipes we have here on our blog to share.

These were made in the oven but you can totally make air fryer chocolate chip cookies with this batter too! That is great for a small batch so you can make a few for a few days straight. OR have a few friends over and make a whole dozen. Especially if you’re baking with kids this is a super easy way to bake.

You may have only used this boxed mix to make pancakes in the morning but you can do so much more with it. Let us show you how versatile it is.

Ingredient Notes

The great thing about this mix is that it has all the rising elements mixed right in. That means you have fewer ingredients to get out and it can be made faster. You are going to need;

Bisquick baking mix, regular or low fat version works but I prefer the regular one in the yellow box because they come out more moist (with just a bit more fat) in the mix.

Some salted Butter softened, Kerrygold is my favorite brand. You could use a dairy free vegan alternative but I will say that those are softer so end result may be a bit flatter.

For sweetness you are going to add some light Brown sugar and white granulated sugar. I haven’t tried a sugar free alternative but heard 1:1 style like Splenda baking does work well from others.

Then you will incorporate a bit of vanilla and egg should be added at room temperature for ideal results. A large bowl and mixer is helpful to cream together

What can you add to Bisquick cookies to make them better?

Beyond that you choose your other mix ins. 1/2 cup of nuts would be great with your 3/4 cup to 1 c. semi sweet chocolate chips.

What can I use in place of Bisquick?

I mean there are other brands like Krusteauz that are very similar so you can make Cookies Made With Pancake Mix like that too. Jiffy has a baking mix that came out as well that people rave about. If you want to make your own though you’ll need;

How to Make Bisquick

There are knock offs typically that are store brand with the same ingredients. Those may be less expensive and basically the same thing so you can compare and see which you’d rather buy. OR if you love batch cooking you could mix together;

  1. 1 cup all purpose flour
  2. 1.5 tsp. baking powder
  3. 1/4 tsp. salt.
  4. 1 Tbsp. softened butter

If you make in bulk just write on the side what to add to each portion (it will say on the box) so you never have to buy ready made again. It is basically 2 cups of mix + 2 eggs + 1 cup milk.

How do you know when they are done?

My biggest suggestion when making baked goods is do NOT cook them too long! For the most delicious chocolate chip cookies you need to take them out when they look slightly underdone. When the middle looks too soft but edges are slightly crisped. If you leave them on the pan to cool they will continue to bake thru and stiffen up. That will create a very moist and tender cookie that will last for a few days.

You could fold in 1/4 cup of old fashioned oats too if you wanted to, at the end, incorporate until the dough is thicker but can still roll into balls. It adds a bit more fiber and texture overall to the treat.

How to store leftover cookies so they don’t dry out

Best way to store cookies is to use a freezer bag. Once cooled slide them in with 1/2 of a piece of sandwich bread on the bottom. This will create a bit of moisture and help them last longer.

You should get a good 3-4 days out of this chocolate chip cookie recipe if you suck out all the air and close after you take one out. Leave them on the counter and not in the fridge or else that will dry them out and make them crispy.

Bisquick chocolate chip cookies are a fast easy way to bake dessert. Add nuts to this ready made pancake mix for a fun twist on YUM.

Ingredients

  • 2 1/4 cup Bisquick
  • 1/2 cup butter (softened)
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 2 tsp vanilla
  • 1 large egg
  • 1 cup chocolate chips (semi sweet)

Method

    Preheat oven to 375 degrees F.

    In a bowl beat together butter, sugars, vanilla and egg. Stir in Bisquick and then fold in chocolate chips and nuts if you would like.

    Spoon heaping 1 Tbsp for each cookie with space in between them on a baking sheet. Will make 12-18.

    Bake for 8-10 minutes. Remove once edges are lightly browned and middle no longer looks wet. Do not overbake or they will be crispy vs. tender.

    Set on cooling rack to allow to cool completely before removing.
