The Convenience of Instant Pot Chicken Cacciatore with Jar Sauce

If you haven’t yet experienced the wonders of an electric pressure cooker, now is the perfect time. Devices like the Instant Pot, Ninja Foodi, or Crockpot Express are game-changers for home cooks. They significantly reduce cooking times while intensifying flavors, locking in moisture, and simplifying the cooking process to a hands-off experience. This recipe specifically calls for jarred spaghetti sauce, a testament to its commitment to convenience. While homemade sauces are always an option, a good quality jarred sauce provides a robust flavor foundation, allowing you to whip up a delicious meal even on your busiest days. It’s an affordable, healthy, and incredibly quick dinner solution that feeds the whole family.

Versatility Across Pressure Cookers: Instant Pot, Ninja Foodi, & More

This recipe is designed to work seamlessly across various brands of electric pressure cookers. Whether you own an Instant Pot, a Ninja Foodi with its multiple functionalities, or a Crockpot Express, as long as your device has a high-pressure setting, you’re equipped to make this fantastic chicken cacciatore. The consistent high-pressure environment ensures that the chicken becomes fork-tender and the vegetables soften to perfection, creating a harmonious and flavorful dish every time. This recipe demonstrates how a few simple ingredients can come together to create an inexpensive yet satisfying meal for six, often costing less than $11.

Adaptable: Cooking with Fresh or Frozen Chicken

One of the great advantages of pressure cooking is its flexibility with ingredients, including chicken. For this chicken cacciatore, we typically recommend fresh, boneless, skinless chicken breasts or thighs, cut into bite-sized pieces, to achieve the fastest cooking time and best texture. However, the Instant Pot is also incredibly efficient at cooking frozen chicken, making it an excellent option for when you forget to thaw your meat.

When opting for frozen chicken, a slight adjustment to the cooking process is necessary. Ensure your frozen chicken pieces are separated and, if possible, not overly large. Increase the high-pressure cooking time to approximately 12 minutes, followed by a 3-minute natural pressure release. This allows ample time for the chicken to cook through while retaining its moisture. It’s also advisable to slice your vegetables a bit thicker when using frozen chicken, as the extended cooking duration might make them softer than usual, ensuring they maintain some textural integrity.

Speed and Flavor: Instant Pot vs. Traditional Methods

  • Making Instant Pot chicken recipes dramatically reduces overall cooking time compared to other methods.
  • For instance, a classic Crockpot chicken cacciatore typically requires 4-8 hours to cook, while the Instant Pot version is ready in about 15 minutes of total pressure cooking.
  • Pressure cooker recipes are renowned for packing immense flavor, as the high-pressure environment forces the meat to deeply absorb the rich sauce and seasonings.

The beauty of this recipe, much like our pressure cooker chicken and rice, is that all the ingredients—chicken, vegetables, and sauce—cook together simultaneously. This not only simplifies the process but also allows for a profound melding of flavors. You can set it and forget it, walking away from the pot and returning to a perfectly cooked, delicious meal.

Key Ingredients for a Perfect Chicken Cacciatore

This recipe focuses on simple, readily available ingredients to create a rich and satisfying meal:

  • Chicken: 4 boneless, skinless chicken breasts (or chicken thighs for richer flavor), cut into uniform bite-sized pieces. Fresh chicken is recommended for best results, but small frozen pieces can be used with adjusted cooking times (12 minutes high pressure, 3-minute natural release).
  • Onion: 1/2 to 1 large onion, sliced thickly. Onions add a foundational sweetness and aromatic depth to the sauce.
  • Bell Peppers: 3 bell peppers of any color (red, yellow, green), sliced thickly. They contribute vibrant color, a fresh crunch, and essential vitamins.
  • Chili Powder: 1/2 teaspoon, adjustable to taste. Adds a subtle warmth and savory note without making the dish overtly spicy.
  • Garlic Salt: 1 teaspoon, for a quick and potent flavor boost. If using regular salt, add garlic powder separately.
  • Jar of Spaghetti Sauce: One 24 oz jar of your favorite spaghetti or marinara sauce. This is your shortcut to a robust and flavorful base. Alternatively, combine 24 oz of tomato sauce, Italian seasoning, and diced tomatoes.
  • Water: 1/2 cup, used to rinse the sauce jar and ensure enough liquid for pressure building.
  • Optional Enhancements:
    • Quartered mushrooms (1 cup) for added earthiness.
    • Red pepper flakes for a touch of heat.
    • Kalamata olives for a briny, Mediterranean twist.
    • A splash of dry red wine (about 1/2 cup) for a more traditional “hunter-style” depth.

Customizing Your Chicken Cacciatore

The beauty of this recipe lies in its adaptability. Feel free to make substitutions based on what you have on hand or your family’s preferences. For a richer, more complex sauce, consider starting with homemade spaghetti sauce. However, the jarred sauce option is truly a lifesaver for busy individuals, proving that an incredibly flavorful dinner doesn’t have to be complicated. This chicken cacciatore made in the pressure cooker is consistently a hit, earning enthusiastic approval from everyone for its amazing taste and ease of preparation.

Step-by-Step: Crafting Chicken Cacciatore in Your Pressure Cooker

Here’s a detailed, easy-to-follow guide to making this crowd-pleasing dish:

  1. Layer the Sauce: Begin by pouring half of the jarred spaghetti sauce evenly on the bottom of your Instant Pot’s inner pot.
  2. Add the Chicken: Cut your boneless, skinless chicken breasts (or thighs) into small, uniform bite-sized pieces. Add these cubed chicken pieces into the pot, distributing them over the sauce.
  3. Complete the Sauce Layer: Pour the remaining spaghetti sauce over the chicken. To ensure no flavor is wasted and to add necessary liquid for pressure cooking, pour 1/2 cup of water into the empty sauce jar, seal it with the lid, and shake vigorously. Then, pour this flavorful liquid directly over the chicken and sauce in the pot.
  4. Introduce Vegetables: Slice your bell peppers and onion into strips. Adjust the thickness based on your preference: thicker slices will yield firmer vegetables, while thinner slices will result in softer ones. Add these vegetable strips into your pressure cooker on top of the chicken and sauce.
  5. Season for Flavor: Generously sprinkle the chili powder, garlic salt, and any other desired seasonings (such as dried oregano, basil, or a pinch of black pepper) over all the ingredients in the pot.
  6. Pressure Cook: Secure the lid on your Instant Pot. Ensure the steam release valve is set to the “Sealing” position. Select the “Manual” or “Pressure Cook” setting and set the cooking time to High pressure for 3 minutes.
  7. Release Pressure & Serve: Once the cooking cycle is complete, allow the pressure to naturally release for 2 minutes. After this brief natural release, carefully perform a quick release of any remaining pressure by moving the steam release valve to the “Venting” position. Once the float valve drops, you can safely open the lid. Stir the cacciatore gently and always verify the chicken is thoroughly cooked (internal temperature of 165°F / 74°C) before serving. The bite-sized pieces ensure perfect cooking within 3 minutes. Serve immediately over your preferred accompaniment.

For an extra touch of Italian authenticity, garnish each serving with a sprinkle of freshly shredded Parmesan cheese. It melts beautifully into the warm cacciatore, enhancing its savory notes.

Perfect Pairings: What to Serve with Chicken Cacciatore

Chicken cacciatore is a wonderfully versatile dish that complements a variety of sides:

  • For a low-carb dinner, enjoy the chicken cacciatore as a stand-alone meal, or serve it over zucchini noodles or cauliflower rice.
  • A classic and comforting choice is to serve it over fluffy Instant Pot white rice, brown rice, or egg noodles, allowing them to soak up the rich sauce.
  • Pasta lovers will rejoice by serving it with their favorite pasta shape, such as spaghetti, penne, or rigatoni.
  • Other excellent options include creamy polenta, mashed potatoes, or even a side of crusty Italian bread to sop up every last drop of the delicious sauce.

This recipe is a true “best recipe win” in our household: it’s loved by everyone, incredibly simple to prepare, and budget-friendly, often costing under $20 to feed a family. Plus, it usually leaves enough for a satisfying lunch the next day. Remember, the thickness of your sliced onions and bell peppers can be adjusted to achieve your desired texture—thinner for very soft vegetables, or thicker for a bit more bite.

Exploring “Hunter Style”: The Meaning Behind Cacciatore

The term “cacciatore” in Italian means “hunter.” This classic dish is traditionally prepared “alla cacciatora,” or “hunter-style,” featuring ingredients a hunter might have on hand or find in the forest, such as tomatoes, onions, mushrooms, bell peppers, and various herbs. While many recipes, including ours, use chicken, it can also be made with rabbit or other game. The addition of red wine is common in some traditional cacciatore preparations, contributing a complex, savory depth to the sauce and reinforcing its rustic origins. Feel free to incorporate a splash of dry red wine into your sauce for an enhanced, authentic flavor.

Storage and Meal Prep: Maximizing Your Chicken Cacciatore

Chicken cacciatore is an excellent dish for meal prepping, as it reheats beautifully. Once the dish has cooled completely, transfer it to an airtight container. It will keep well in the refrigerator for 3-4 days. For longer storage, you can freeze portions in freezer-safe bags or containers for up to 3 months. When ready to enjoy, simply thaw overnight in the refrigerator and gently reheat on the stovetop or in the microwave until it’s warmed through. This makes it perfect for delicious and quick lunches or dinners throughout the week.

The Italian Origins of Chicken Cacciatore

As mentioned, the name “cacciatore” is Italian for “hunter,” hinting at the dish’s rustic, humble beginnings. It’s believed that this hearty stew originated with Italian hunters who would prepare their fresh game with readily available garden vegetables and herbs. While the specific ingredients and regional variations abound across Italy, the core concept of a savory meat dish simmered with tomatoes, onions, peppers, and herbs remains consistent. Each restaurant or family may have its unique twist, but the comforting essence of this traditional Italian favorite endures worldwide.
