Instant Pot Mushrooms

This is how to cook mushrooms in Instant Pot with onions quick! This is our favorite vegetable side dish served

We made Instant Pot mushrooms and onions the other night with chicken and WOW were they good! So good I thought we’d share our easy Instant Pot recipe with you.

I mean even if you weren’t a fan of this brown veggie you may just fall in love with them prepared like this! You can make them in your Ninja Foodi using the lid that is not attached, or Crockpot Express as well as this brand of pressure cooker.

This was literally one of those “this would be good, I have some of that, and let’s try this” side dish. They don’t always work out the first time I try them but this one did. May be one of our favorite Instant Pot vegetables thus far.

Ingredient Notes

You will have the best results using Baby bella mushrooms in this case. They have a better texture than the white or button type I feel. These work great in a casserole too, like our Instant Pot cream of mushroom rice dish. If you have any left I recommend you use them in this dish.

To saute and cook I will use salted Kerrigold Butter or olive oil, but butter is better. You could use a dairy free alternative as well except that is typically unsalted so I would add an extra pinch in that case.

You will want some broth for the liquid. For seasonings to add flavor I will add a bit of Minced garlic, garlic salt.

Can you add onions?

Yes, I do like to add yellow Onions that have been diced with this. The two together is a nice duo. It is not necessary but an easy way to add texture and flavor to the dish.

Can you add potatoes?

You could but they would need to be peeled and diced into small bite size pieces, about 1/2″ cubes in size. If they were larger they may not cook all the way thru to become tender in the short cook time. You could add 1-2 medium sizes.

I tend to under season to begin with and test when it’s done. Adding a bit more salt and pepper once they’re done is better than having too much. You can’t fix over seasoned anything really. I kid you not, pressure cooking has changed my life!

This is what bellas look like and are usually about the same price as the ever popular white mushroom (or button) variety. I use these in many dishes like our air fryer vegetables too because they don’t fall apart as easily.

How Long to Cook Mushrooms and Onions in Instant Pot

To keep them a bit firm I didn’t slice or halve them. The larger you keep them the longer you can cook them to draw in those other great flavors. The cook time will reflect them being cooked whole at just 5 minutes!

Can you use white mushrooms instead of baby bellas?

Of course you can substitute one for the other in general. In this case the latter will hold up better and not get so soft and mushy under high pressure. That is why I suggest using the deeper brown version. If you want to cook button as they call them instead I would cut the timing in half.

How Long to Cook Canned Mushrooms in Instant Pot

I don’t know why you would feel the need to do this since they are already quite soft and you just need to microwave for 30 seconds to warm but if you really wanted to you could. I would just use the first part of these instructions, drain your can, add in with onions and garlic and warm that way on saute.

Essentially what you’ll have are perfectly cooked sauteed mushrooms once they’re done. Why do I prefer this method? Because I don’t have to stand and watch them for 15 minutes at the stovetop like you would with boiled mushrooms. It’s just add garlic and mushrooms in the pot and set to high pressure for a few minutes with a quick release at the end.

If you wanted to double this amount I would set the cook time for the same amount. Of course the softer you want them the more minutes you’d need. Five seems perfect for us, not mushy at all.

Can you cook frozen mushrooms in Instant Pot?

In general you don’t find them frozen but occasionally you could. Like other dishes under high pressure the cook time wouldn’t change. 5 minutes successfully cooks frozen or fresh mushrooms to fork tender. I will say that the texture from frozen is mushier and not as pleasant, but yes it is possible.

When using an Instant Pot I always use wooden utensils, a slotted spoon is my favorite one. I use it for everything.

The simple answer is that white or button mushrooms are lighter in color and softer, especially when cooked. Bellas are harvested at an intermediate stage of maturity in the growing process.

This answer is up for debate. You don’t want to “wash” them and need to be very gentle when removing dirt. You can either use a damp paper towel or run over cold slowly running water to do this.

They’re all pretty healthy to eat if you don’t add a bunch of fat or sodium to them when cooking. Oyster and shiitake have the most fiber, where portobellos are among the highest in vitamin D.

Instant Pot Mushrooms Recipe

Instant Pot mushrooms and onions you can make in just 10 minutes! Our favorite side dish served with chicken or beef comes out perfect every time with butter.

Ingredients

  • 16 oz mushrooms (baby bellas are best)
  • 1/4 cup butter
  • 1/2 small onion (diced)
  • 1 tbsp minced garlic
  • 1/4 tsp garlic salt
  • 3/4 cup broth

Method

  1. 1

    Set pot to saute, add butter, garlic and onions. Cook until onions soften.

    Rinse and dry with a paper towel your mushrooms, add them into your pot. Gently stir and cook for 3-4 minutes. Turn pot off.

    Add broth, then close lid and steam valve.

    Set to high pressure for 5 minutes followed by a quick release.

    Use slotted spoon to serve, top with parmesan and sprinkle with salt and pepper.
