For noticeable flavor, marinate at least 4 hours in the refrigerator, covered. For the most pronounced taste, marinate overnight.

How Long to Cook Jerk Chicken Thighs in Oven
Bone-in thighs generally take longer than boneless pieces. Plan on about 45 minutes at a moderately high temperature to cook through to a safe internal temperature. Exact time depends on size and your oven, so use a thermometer to verify doneness.
Jerk Chicken with Frozen Chicken Thighs
You can bake chicken from frozen, but you can’t fully marinate frozen meat. To avoid burning the marinade, partially cook the thighs first, then brush or spoon on the marinade and finish baking until done.
How do you know when they are done?
Use a meat thermometer inserted into the thickest part to check temperature. Remove the pan from the oven to get the most accurate reading. Poultry will rise a few degrees after resting, so you can take thighs out around 160°F and allow carryover to reach 165°F. Avoid cooking past 165°F to keep the meat juicy.

Mistakes to Avoid
Start conservatively with spicy ingredients—it’s easier to add heat later than to reduce it. Also watch for overcooking: check the thighs during the final 5–10 minutes and test every few minutes if you’re unsure. Let the meat rest 5–10 minutes before slicing to retain juices.
