This one pot meal is so great that my kids ask me to make it at least once a month! We added it to our long list of Instant Pot recipes and is way easier to make than traditional stew meat beef stroganoff.
Cooking everything (even our uncooked noodles) together in our pressure cooker means it was done start to finish in about 20 minutes! Crazy right? You don’t have to have an IP brand to make this either though. We have 4 different brands and they all work the same. As long as they’re electric and have high pressure you’re good to go.
If you were making this as an Ninja Foodi recipe you just saute, cook with the lid that is not attached to pressure cook it all together and enjoy together the same way directed below.

If you need a dairy free version you can make the condensed soup from scratch and skip the sour cream or find a lactose free version at the store.
Ingredient Notess
Yes typically your grandmother probably always made easy beef stroganoff casserole with stew meat or cut up beef of some kind. I have done that many many times like that too but for a more kid friendly, and cheaper meal, just use ground beef instead.
To make this creamy you will want a can Campbell’s Cream of Mushroom Soup or make it homemade cream of mushroom
The traditional pasta used for this dish would be a bag of egg noodles. I prefer extra wide noodles. These will be cooked together with your sauce and meat all together!! No boiling ahead of time or added prep necessary.
Greek yogurt can be substituted for sour cream if needed. Use equal amounts and choose plain vs. a fruit flavor. If you cannot have lactose I have found dairy free versions at the store. You could use a bit of cottage cheese too for a bit of creamy.
I like to add halved or small whole mushrooms into the mix for a chunkier texture and more mushroomy flavor. If you have canned or boiled mushrooms those would work too. And the liquid necessary to cook the noodles to al dente all together is beef broth.
How can you make it even better?
We love taking it one step further by adding crunchy fried onion strings to the top and sticking it under the broiler to crisp up, or in your Ninja Foodi using air crisp at 400 degrees for a few minutes. You can buy French’s fried onions in a can or make fresh.
With that being said, if you really prefer to use beef we do have an Instant Pot beef stroganoff recipe you can follow as well. Ingredients are similar yet we cooked the noodles separately because beef takes longer to cook in your pressure cooker to get really tender.

The beauty of this is you use just one pot for all of it so there is a quicker cleanup. You could even store the leftovers with a lid once it cools down. There usually isn’t any to save in our house but ya’ know….
How Long to Cook Ground Beef Stroganoff in Instant Pot
Saute and add ground beef and diced onios until meat is no longer pink which will take about 5 minutes or so. Then you would add all your other ingredients and set to high pressure for 2 minutes, then then release the pressure quickly. (3 minutes if you like your noodles on the softer side). So fast right???
If adding fried onions transfer the casserole mixture from the pot into a 9×9 oven safe dish and sprinkle onions over the top. Can add green onions too. Using an oven: put under broiler for 3-4 minutes or until onions are light brown.
For Foodi: close air crisp lid on Ninja Foodi and cook at 400 degrees for about 4-6 minutes or until crispy onions are as brown as you’d like. Serve with or without sour cream dollop on top.

Instant Pot Ground Beef Stroganoff Recipe
Instant Pot stroganoff casserole has all the great flavors of traditional beef stroganoff but takes a fraction of time to cook and uses ground beef! Make in Ninja Foodi or Instant Pot tonight.

Ingredients
- 1 lb ground beef
- 1/2 small onion (diced)
- 1/2 tsp garlic salt
- 1 tbsp Worcestershire sauce
- 2.5 cup beef broth
- 1 can cream of mushroom soup (or cream of chicken)
- 1.5 cup mushrooms (quartered)
- 12 oz egg noodles (wide variety, 1 bag)
- 1 cup fried onions
- 2 small green onions (diced)
- 3/4 cup sour cream (or plain greek yogurt)
Method
- 1
Set pressure cooker to saute and add ground beef and diced onion. Cook until meat is no longer pink. Then drain grease and put pot back.

Add garlic salt and stir. In a separate bowl whisk together your can of cream of mushroom soup, worcestershire sauce, and broth until smooth.

Sprinkle into pot your quartered mushrooms, then pour your bag of uncooked egg noodles on top of your mushrooms. Pour your soup + broth mixture over the top of them.

Do not stir mixture. Close lid and steam valve.

Set to high pressure for 2 minutes, then do a quick release. (3 minutes if you like your noodles on the softer side)

Stir in 1/2 – 3/4 c. of sour cream and fold together, or serve as is with a dollop of sour cream on top. Or omit the sour cream entirely, totally up to you.
