As far as the mixture of vegetables go, we used half of a head cabbage, it’s a Purple Cabbage recipe for the base of this + a medium potato will make it creamy because it is high in starch, especially russets. Half of a carrot peeled and sliced is nice with a leek chopped too. You could use other root vegetables like beets or butternut squash for soup too.

I love coconut milk for the slightly sweet flavor and because it is already dairy free. This will make it creamy. For a thicker creaminess you’d want to use something more like

You need some oil, I like olive oil but avocado is another option that is great. Seasonings like thyme are optional

You want liquid, water is typically used so you can taste the veggies, vegetable broth or chicken broth are other options. Use more or less depending on thickness desired. If you wanted to make it spicy you could start with Jamaican Cabbage and puree from there.

You don’t have to use a pot on the stove either. If you want a faster version you can make Instant Pot sweet potatoed cubed, and then use your blender with milk(s). Another great option is to follow our pressure cooker pumpkin step by step for a fun Fall pureed soup. Simmering your vegetables like onions, carrots, celery, and herbs under high pressure will break quickly to become very soft.

Variations and Substitutions

As for the liquid to thin it out that is up to you. Coconut milk will bring a creaminess to the dish and is also dairy free which is helpful to many. Milk works too, either cows milk, almond or cashew milk is extra creamy. Each one will add a different flavor to your meal so choose one that would pair well with the veggies included in the pot.

As for the choices in vegetables of course the colors will vary widely. For orange you would want to make a carrot soup recipe by swapping out the cabbage here. For a green soup I would go with green cabbage with that color cauliflower (yes you can find it in different colors).

The result is a creamy and consistent texture that will have you craving for more. A blender is my next choice.

How can you make soup creamy and dairy free?

On the other hand, adding coconut milk to a vegetable pureed soup introduces a creamy richness and a hint of tropical flavor, making it a unique and satisfying option like we do here;

For those who enjoy a touch of decadence, drizzling a dash of high quality olive oil or adding a dollop of heavy cream to your bowl of pureed soup can elevate the taste to a whole new level. The olive oil imparts a luscious and fruity note, while the heavy cream contributes a luxurious creaminess that enhances the overall experience.

If you do not have an immersion blender or don’t want to use it right in the pot, a regular blender will work. I would highly suggest that you allow the mixture to cool quite a bit before pouring it in there though. Especially if yours is plastic you don’t want to risk melting the container or pop the top off with the steam.

Ingredients

  • 1/2 head cabbage (purple used here)
  • 1 medium potato
  • 2.5 c coconut milk
  • 1/2 carrot (peeled and sliced)
  • 1.5 tbsp olive oil
  • 2 sprigs thyme
  • 1 leek (chopped)
  • 3.5 c water (or more depending on thickness desired)
  • salt and pepper to taste

Method

  1. 1

    Place diced carrots and leek rings in a large saucepan. pour in olive oil. Sauté the vegetables until transparent. Cut the peeled potato and cabbage into small bite size pieces.

    Place the vegetables in a saucepan, pour in the coconut milk and water. Bring the soup to the boil and simmer for 25 minutes on low heat with a lid on.

    Add the chopped thyme. Cook for another 5 minutes. At the end of cooking add salt and pepper to taste. Blend the soup with an immersion blender until as smooth as you would like.
