This is how to smoke potatoes with onions to tender and cheesy too if you want to add that to the top!! Summer is when you should cook on a Traeger every single day. Mixed in an aluminum pan you could add bell peppers in the mix too for lots of flavor and smoky flavor. Use a pellet or make as an electric smoker recipe.

These smoked diced potatoes came about because I just have to have some carbs with my main meal, it’s true. I figured I should at least try to throw something in there where there was space and just try it out. Made smoked bread once and OMG did that turn out so great everyone just raved about it. So I kept it going…..

Diced red potatoes or russets work great for this, mix both, or use baby potatoes if you’d rather. I like to use disposable pans to make all of our favorite dishes on the grill. Makes for a much easier cleanup later so we can spend more time together, and not in the kitchen. 😉

Ingredient Notes

You are going to want potatoes you will dice into large bite sized pieces. Here we used Yukon Gold and red but russets work too.

Then to add flavor, color and texture it is great to combine with them some diced up onions and bell pepper.

Butter will add moisture and flavor so they don’t dry out. You could use olive oil with the same idea but salted Kerrygold is so much better.

As for the seasonings you will want at least some salt and black pepper. You could certainly add more than that if you wanted to too.

If you would rather make sweet potato cubes this way you could. Use the same ingredients or cinnamon and sugar with butter instead of cheese for a new delicious side dish recipe. If you do this you can even put mini marshmallows on the top near the end and allow them to brown on top and get ooey gooey like a sort of casserole.

How Long to Smoke Cheesy Potatoes

This only takes about 1 hour to reach fork tender results for russets or Yukon Gold. For red potatoes or sweet they may need an extra 15 minutes since they are firmer. Of course there will be a range depending on the size of each piece but this is a good gage.

Parmesan gives them a bold flavor with the aging you can add as much or as little as you’d like. Other options would be shredded cheddar or spicy Jack cheeses too. You’ll need;

How do you know when they are done?

To check if Traeger smoked potatoes are done, pierce them with a fork or knife. If the utensil goes through the potato easily and the flesh is tender, they are likely cooked through. You can also use a meat thermometer to see if they reach 205 degrees F or 96 degrees C) inside.

Tips

Using an aluminum pan 9×13″ is seriously the best. If you had a rather large cast iron pan you could use that but may need to cut this in half to get it to fit and not overlap too much. When done you can move it to a trivet to serve on the table, then throw it away when it’s all gone!

Remember that the smaller your pieces are and/or the higher the temperature inside is the quicker these will be done. This size took about 1 hour to get done nicely. Keeping that in mind when choosing the main dish is helpful. Great when we are making our smoked pork steaks because those take 60-90 minutes to get done.

If they are done a bit before your other items you can cover with foil and leave it on to soften just a bit more or cover to keep warm on the buffet table. Cooking everything together is the way to go for sure. Especially when you have hangry teens waiting to fill their bellies, timing is everything. You just;

How to reheat smoked potatoes

I hate wasting food so we save all leftover potatoes (and other foods). The best way to reheat potatoes in air fryer is to lay in a single layer with a bit of olive oil spray on top to moisten. This way is best because you can crisp the tops up nicely again.

Smoked Cheesy Potatoes Recipe

Diced smoked potatoes and onions on Traeger is a cheap side dish everyone loves! Cook it with your meat for a complete meal in the summer.

Ingredients

  • 2 lbs potatoes (diced into bite size pieces)
  • 1 small onion (diced)
  • 1 stick butter (1/2 cup)
  • 1 small bell pepper (diced)
  • 1.5 tsp salt
  • 1 tsp pepper
  • 1 cup parmesan cheese (Or half parm and half shredded cheddar)

Method

    Rinse to clean and cut potatoes into bite size cubes. Lay on paper towels and press down to remove excess water from skins. Dice onion and bell pepper. Slice butter into 12 pieces.

    Place potatoes, bell peppers and onion into aluminum foil pan. Top with shredded Parmesan cheese, pepper, and salt. Place slices of butter around the very top.

    Set smoker to smoke setting. Once the smoker starts to smoke, set temperature to 400° and place aluminum foil pan on smoker grate. Close. Cook for 1 hour or until as fork tender as you'd like.

    *Serve plain or add crumbled cooked bacon, sour cream, chives etc…..
