Ok so I am a sucker for anything sweet! I have to save a bit of room at the end of dinner for a quick easy dessert. When I find something yummy like mixing soda pop with cake mix to make this 2 ingredient soda cake (but smaller versions) it is the perfect guilt free treat! We now make it often with strawberry or chocolate mixes.

He recently eliminated dairy from his diet and has been adjusting to the change. Now the challenge has been finding desserts that are delicious but with no milk, until now. First I made pineapple angel food cake which was delicious. BUT this was even easier!!

Yep, you can bake this batter into mini bundt cakes, a full bundt is killer, in a muffin tin or this is How Long to Bake Mini Cupcakes for a really fun bite size treats toddlers love. 😉 There are so many flavors of cake mixes I couldn’t list all the combinations. Use your imagination.

Soda Cake Flavor Combinations

Now there are a few ways you can enjoy this combo…… You start with a box of cake mix but there are so many flavors out there, same goes for soda pop. Combining one with the other in your mixing bowl you can create hundreds of different flavor combinations such as;

  1. Combine yellow or white cake mix + cream soda for a deep vanilla flavor
  2. In the summertime I love to combine lemon cake mix + Sprite or orange soda for a bright citrus flavor.
  3. Now if you want deep chocolate grab that cake mix + root beer flavored soda which will deepen the cocoa taste!
  4. Strawberry cake mix + strawberry soda is OMG so great with some sliced fruit on top like our Strawberry Cake Mix with Strawberries recipe.

Tips

I suggest that you use a large bowl as the effervescence in the drink will rise up when combined and you don’t want it to overflow. Use cupcake liners that are non stick. Without them this combo will stick to the cake pan more than other cake recipes would for some reason. You do want the batter smooth but you can get that with a whisk, no electric mixer necessary but a quick option if you would rather. And allow to cool completely before adding any frosting if you go that route.

Soda Cake Calories

With just a can of soda pop and cake mix you too can make this guilt free dessert that is ready in about 20 minutes and is only about 100 calories each as cupcakes! With that said, each box of cake has different total calories so to be accurate you just divide that by 24 – # of total cupcakes.

If you use diet soda there aren’t any calories added to that + I added a small scoop of guilt free vanilla ice cream with only 240 calories for the whole pint to get my 100 calorie total. There is nutritional information in the recipe card below but every brand is slightly different so just wanted to mention that. 😉

Soda Cupcakes Recipe

Easy 2 ingredient soda cake cupcakes with cake mix recipe using your favorite flavors. A quick treat in a muffin pan everyone will love.

Ingredients

  • 1 box cake mix (any flavor you want)
  • 1 can soda (12 oz. any flavor you want)

Method

  1. 1

    Combine your cake mix and can of soda in a bowl well using a whisk until smooth.

  2. 2

    Preheat oven to the temperature necessary on the box of cake mix (mine was 350).

    Fill cupcake liners 3/4 of the way full. Bake for approx. 16-18 minutes for cupcakes or until toothpick in the middle comes out clean. (will make 24).

    Allow to completely cool, then put a scoop of ice cream on top or spread frosting on top.

Notes

Baked in a Bundt Pan Option In a bundt pan spray inside with non stick spray and pour batter in. Bake for 30 minutes or until toothpick comes out mostly clean with crumbs attached. Allow to cool for 15 minutes before flipping over on to a plate.
