If you’re having people over or going to a potluck you’ve got to take a peek at these steak fajitas cups. I’m sure you’ll love them. We didn’t stop there though. We’ve even made cookie cups filled with yummy pudding as a dessert in our mini muffin pan. They were a hit during the holidays and always fun bite sized treats.
I am a little obsessed with my muffin pan and anything I can make in it I am game! It’s not just for making cupcakes anymore, you can make dinner in them. Like I said, we’ve made tons of muffin tin recipes. This fajita appetizer is probably one of our favorites. You’ll have to try a few others when you’re done making this one too.
Beef Fajita Cups
If you love beef fajitas then you will love this served as a finger food baked in a muffin pan. Then serve with all of the best toppings and make a fajita bar for your next party!! We made these with beef, steak specifically and they were great.
You could make these with other meats too like our Crockpot chicken fajitas with precooked diced breasts. I haven’t done that yet but as long as your proteins are cooked the timing wouldn’t make a difference.


Ingredient Notes
You will want cut up bite size pieces of Steak, leftover slow cooker flank steak works great if I make that the day before. Other times I have used some thinly sliced skirt steak too.
You want lots of seasonings for those bold Mexican flavors you would expect with this dish. This is how to make fajita seasoning in dry form, or you could use our steak dry rub is sweet and savory.
Bell peppers are typically found inside, diced fine with onions as well.
- If I want some heat I might add some jalapeno powder – optional for a spicy kick
- Flour tortillas will bend better to make circles
- Cheese of any kind but we like Mexican blend
- Cilantro is optional for the top
- Sriracha seasoning works for some heat
- Squeeze of lime juice is great too
Substitutions
As with anything else you can add or subtract any ingredients you don’t care for but as far as fajitas go usually more is better! Add more Roasted Jalapenos for more heat or leave out if you want them extra mild. This steak fajita appetizer could easily be served as an entire meal themselves just for fun too. It’s a great muffin tin dinner and a great way to use leftover steak.
Ok so you really could use any type of meat you wanted for this one. If you are looking for a leftover ham recipe by all means I would use that up with the same steps you see here. Make both, or just that style.

How to Make Steak Fajita Cups
First preheat oven and I am going to use a muffin pan with cooking spray as my vessel. You could use small ramekins if you didn’t have this, or silicone muffin cups placed on a baking sheet.
Heat a large skillet over medium high heat and you want to add steak and cook with the vegetables together for a few minutes per side stirring occasionally until browned and softened.
- Cut tortillas into circles that will fit snugly when pushed down into the holes. You can use a glass upside down to make these.
- Scoop in your mixture of cooked steak, peppers and onion mixture
- Top with shredded cheeses of your choice and then bake until top is melted
You will want to leave a tiny bit of room at the top so you can add a dollop of sour cream to the tops! You’ll need about 1/4 cup to add some to each cup before serving. If you want to make a bunch of fun finger foods for your get together you can use a mini muffin tin to make cookie cups too!
Fajita Cups with Frozen Steak
If all you have is frozen meat, this is how to cook frozen steak first. Once warm in the center, dice and add in with sauteed veggies and continue from there.

Steak Fajita Cups Recipe

Ingredients
- 4 oz steak
- 1 small bell pepper (diced)
- 1 small jalapeno (diced)
- 1 small onion (diced)
- 6 large tortillas (flour, cut into rounds with a glass)
- 1/2 cup cheese (cheddar or mix spicy jack and cheddar)
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp cilantro
- 1 pinch salt (cayenne optional)
- 1 spray olive oil
Method
- 1
Preheat the oven to 425, grease a muffin pan with cooking spray.

Add steak, seasonings and a drizzle of olive oil to a food processor or chop small by hand and mix well so all pieces are coated.

Heat a pan on the stovetop. Add diced steak and vegetables, cook for about 3-5 minutes or until steak is no longer pink.

Trim tortillas down to a 4" circle. Can use a glass upside down and cut around to create small circular pieces that will fit snugly when pressed into your muffin pan holes.

Fill cups with mixture. Layer with steak mixture, then shredded cheese, more steak, more cheese until it reaches top of tortilla but not overflowing.

Bake at 425 for 10-15 minutes or until edges are golden brown.
