Creative Recipes Using Brown Bananas

Incorporating other fruits into your banana recipes can introduce exciting new flavor dimensions. While many fruits pair beautifully with bananas, coconut and pineapple are particular favorites, their tropical notes blending seamlessly with the banana’s inherent sweetness. Here are a few standout ideas to get you started:

It’s a simple addition that makes a huge difference in texture.

The Best Way to Store Your Overripe Bananas

It’s perfectly normal not to always have the time or energy to bake the moment your bananas turn brown. Fortunately, there are simple and effective ways to extend their shelf life and save them for when you’re ready to bake. You can easily slow down the ripening process and gain a few extra days by placing them in the refrigerator. To prevent any potential mess from leakage as they continue to ripen, we highly recommend storing them in a bowl or a freezer bag. If you anticipate needing more time before using them, freezing is an excellent long-term storage solution that preserves their peak sweetness.

For freezing, ideally, separate each banana at the stem and place them into a gallon-sized Ziploc bag. Remove as much air as possible before sealing and store in the freezer for up to several months. If you plan to use them primarily for smoothies, it’s a good idea to peel them before freezing. This way, you can simply toss the frozen banana chunks directly into your blender with milk, ice cream, or yogurt for an instant, creamy, and naturally sweet beverage.

If you’re planning to bake with them later, you can freeze them unpeeled in a bag. A day before you intend to bake, simply transfer the bag of frozen bananas to the refrigerator to thaw overnight. They will become very soft, almost liquid-like, and practically slide out of their skins once thawed. This extreme softness means minimal mashing is required, making them perfectly ready for your favorite banana bread or muffin recipe, delivering that signature sweetness and moisture every time without any extra effort.

Equipment

  • 1 9×13 inch pan

Ingredients

  • 3 eggs
  • 3 c milk
  • 2 bananas, slightly ripe, sliced into half moons
  • 3/4 c sugar
  • 1 tsp vanilla extract
  • 1 loaf bread, cut into chunks (thick-sliced or French bread recommended)

Instructions

  • Use an entire loaf of thick-sliced bread or French bread. Remove the heels and discard. Cut each piece into 8 squares with a sharp knife.
  • Place the bread pieces into a large bowl and pour milk over the top. Gently use a spoon to move bottom pieces to the top, ensuring all bread is soaking in the liquid.
  • In a separate bowl, combine all other ingredients (eggs, sugar, vanilla, sliced bananas) and stir thoroughly. Pour this mixture over the bread and milk, then very gently fold it all together about 3 times to combine without mashing the bread too much.
  • Preheat oven to 350°F (175°C). Lightly spray a 9×13 inch baking pan with non-stick spray. Pour the bread mixture into the prepared pan and spread it out into an even layer.
  • Bake for 30 minutes, or until the center is set and no longer wet. Remove from the oven and allow to cool in the pan for at least 15 minutes before serving for the best texture.
